Step 1
In a large bowl, mix together the hot water and gelatin powder. Stir until dissolved

Add the instant coffee, and stir until fully dissolved. Add the cold water, cover and place into the refrigerator for 4 hours or until completely set.
Step 3
In a separate mixing bowl, combine the cream, vanilla extract and liquid stevia. Mix until uniform in color and place into the refrigerator covered.
Step 4
To serve, use a large blade and slice into the jelly horizontally and vertically as many times as desired. Less cuts will produce larger chunks, more cuts will produce smaller chunks. Serve 1 cup of coffee jelly with 1/4 cup cream mixture and enjoy.
Step 5
Cream will keep in the fridge for up to 4 days, or can me frozen in 1/4 cup batches for up to 1 week. Jelly will last up to 1 week.
