Step 1

Heat 1 tbsp of oil in a skillet over medium high heat. Add in the turkey and brown.

Step 2

While the turkey is cooking, cut the tomatoes into a medium dice. Cut out the seeds. Cut the olives as well if you bought whole ones.

Step 3

Once the turkey has browned, add in the tomatoes, olives, ½ tbsp of olive oil, red wine vinegar, chopped spinach, onion powder, and garlic powder. I use frozen, chopped spinach because it's easier but fresh spinach is fine. Just make sure you allow it to wilt a bit in the pan so you aren't left with huge leaves.

Step 4

Season with salt and pepper to taste.

Step 5

Cook enough rice to have 2½ cups of cooked rice. 1 cup of dry rice will make between 2-3 cups depending on which kind you choose.

Step 6

Once the rice has finished cooking, measure out 3 cups of cooked rice and add in 1 tbsp of olive oil and 2 tbsp of lemon juice. Season with salt and pepper to taste.

Step 7

Step 8

This recipe makes ]5 servings. Divide your ingredients evenly 5 ways and add 2 tbsp of Tzatziki sauce to each.
