Step 1
In a large mixing bowl, combine the rolled oats, protein powder, chopped nuts, seeds, and a pinch of salt. Stir to distribute everything evenly.

Add in the nut butter, honey or maple syrup, and vanilla extract. Mix thoroughly using a wooden spoon or spatula, making sure the wet ingredients are fully incorporated and form a thick, sticky dough.
Step 3
If using, fold in the mini chocolate chips until just combined.

Using a tablespoon or small cookie scoop, portion out the dough and roll into balls or press gently into round, cookie-like shapes.
Step 5
Place the formed cookies on a parchment-lined plate or tray. Chill in the refrigerator for at least 30 minutes to set.
Step 6
Store cookies in an airtight container in the fridge for up to a week, or enjoy right away for a soft, gooey treat!
