Step 1
Place mango, chilli, red onion, lime juice, coriander, salt and pepper in a small bowl and toss gently to combine. Cover and refrigerate until required.
Step 2
Heat a non-stick frying pan or stovetop grill over medium-high heat. Spray the pork with oil spray and sprinkle with salt and pepper. Cook for 3 minutes on each side or until golden and cooked to your liking.
Step 3
To serve, divide the pork among serving plates and top with mango salsa. Serve immediately with a simple salad.
