Step 1

Preheat waffle iron. Spray waffle iron with non stick cooking spray.

Step 2

In a small mixing bowl whisk egg or egg whites until fluffy. Add the unsweetened almond milk, and vanilla. Mix well.

Step 3

Whisk in pancake mix and continue mixing until JUST-combined. Do not overmix-otherwise the texture of the waffle with be dry and dense.

Step 4

Pour the batter on the iron and close the lid. Depending on the size of your waffle maker, you might have too much batter or not enough. Be sure t0 adjust accordingly.

Step 5

Cook waffle until the waffle iron's indicator light shows that cooking is complete. The waffle should be golden brown and crispy on the outside.

Step 6

Use a fork or utensil to remove the waffle from the waffle iron. Serve with your favorite toppings!
