Step 1
Preheat the oven to 400 degrees Farenheight. Grease the muffin tin with oil or butter, then gently dust it with flour. Or, if you have them, use paper muffin tin liners.
Step 2
In a medium-sized bowl, whisk sugar, oil, and eggs together. Stir in canned pumpkin and water until the batter is smooth.
Step 3
In a separate bowl, mix flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt.
Step 4
Add the wet ingredients to the dry ingredients and stir. Be sure that you don’t overmix the batter. Perfect batter will be thick and lump-free. Gently stir in chocolate chips right at the end.
Step 5
Pour the muffin batter into prepared muffin tins until 2/3rds full. Add an extra layer of chocolate chips for that bakery-style finish.
Step 6
Bake them in the oven for 20 to 25 minutes or until an inserted toothpick comes out clean. Let cool and dig in!
