Step 1
Add chickpea, nutritional yeast, tomato sauce, vegetable stock, soy sauce, dijon mustard, oregano, paprika, coriander powder, black pepper, salt to the food processor and process until all ingredients are mixed well.
Step 2
Transfer the mixture to a bowl and add the vital wheat gluten. Stir in with a wooden spoon, then start kneading with your hands. Knead the dough for a short minute until everything is well mixed together. You'd want to see your dough be firm and stretchy, so make sure you don't over knead. The more you knead your dough, the tougher it will become, so a sweet in-between is best.
Step 3
Once you reach the firm and stretchy texture, roll your dough into a ball and cut it into 4 roughly equal-sized pieces. Put each steak on top of a cooling rack and using your hands (or a potato masher) press on the steaks to flatten them. The colling rack and the potato masher will create real steak like streaks on your vegan steak.
Step 4
Wrap each steak in aluminium foil. Using a bamboo steamer, steam them for 20 minutes. As the steaks will be quite large, we recommend stacking two bamboo steamer baskets on top of one another. Put two steaks in each bamboo basket.
Step 5
While your vegan steaks are steaming, it's time to make the vegan steak sauce. Add all ingredients to a bowl and mix them together. Mix well until the sugar has dissolved. Add more sugar if you want your sauce to be sweeter and add more liquid smoke if you want your sauce to taste meatier.
Step 6
Once your steaks have steamed, unwrap the aluminium foil and transfer them to a deep plate. Pour a little sauce over each steak and using a kitchen brush cover all steak in the sauce. Turn the steak around and repeat until fuly covered in sauce.
Step 7
To Fry: Heat a non-stick pan with a little olive oil and then fry the steaks for about 4-5 minutes on each side, or until they are nicely brown. Add more sauce to the frying pan and brush the sauce over the steak if you want them to have a deeper flavour and look a little darker.To Grill: Grill the steaks on the BBQ for about 3-4 minutes on each side, or until they are nicely brown. Add more sauce to the vegan steaks if you like a deeper flavour.
Step 8
Serve immediately with a side of salad or baked potatoes.
