Step 1

Spicy Roasted ChickpeasPreheat oven to 400° F

Step 2

Line a rimmed baking sheet with parchment paper.In a small bowl, mix together the chickpeas, olive oil, cumin, salt, paprika, cayenne and pepper, until evenly coated

Step 3

Spread the spiced chickpeas out so they are evenly spaced, onto prepared baking sheet

Step 4

Bake for 30 minutes and allow to cool.Building Your Bowl1

Step 5

Smear the bottom of each bowl with the hummus

Step 6

Divide the roasted cauliflower, chickpeas, micro greens, carrot and mint evenly between the bowls

Step 7

Drizzle each bowl with a little olive oil and sprinkle with desired amount of za’atar and salt to taste
