"Prepare the Ingredients• Halve potatoes lengthwise and cut into ½” pieces.• Trim and thinly slice green onions, keeping white and greenportions separate.Cook the Pork• Place a medium pot over medium-high heat and add 2 tsp.olive oil. Add ground pork to hot pot and cook undisturbeduntil starting to brown, 3-4 minutes.• Stir in seasoning blend and onion salt. Break up meatuntil no pink remains and pork reaches a minimum internaltemperature of 160 degrees, 2-3 minutes.• Transfer ground pork to a plate. Keep pot over medium-highheat.Start the Stew• Add 1 tsp. olive oil, corn, and white portions of green onionsto hot pot. Stir occasionally until softened, 1-2 minutes.• Add potatoes, ground pork, 1 ¾ cups water, demi-glace, anda pinch of pepper. Bring to a simmer.• Once simmering, reduce heat to medium. Cover, and stiroccasionally until potatoes are tender, 12-14 minutes.Finish the Stew• In a mixing bowl, combine cornstarch and 2 Tbsp. water.• Add cornstarch-water mixture to pot. Stir until stew thickensslightly, 1-2 minutes.• Remove from burner and stir in sour cream and a pinch of saltuntil completely combined."
