Step 1
In a small saucepan, combine the potatoes and enough water to cover; bring the water to a boil. Reduce the heat and cook, uncovered, until tender, 15-20 minutes. Step 2
In a large skillet, heat the butter over medium-high heat. Sauté the zucchini with garlic salt until it’s crisp-tender. Add the sausage. Cook and stir until the sausage is browned. Editor’s Tip: If you don’t have garlic salt on hand, substitute minced garlic.
Step 3
Drain the potatoes and stir them into the zucchini mixture. To serve, sprinkle with pepper and, if desired, Parmesan.
