Preheat oven to 200°C (180°C fan) mark
Step 2
In a medium roasting tin, mix the chicken thighs, potatoes, pepper, oil, garlic, paprika and some seasoning. Spread into a single layer (with chicken skin-side up). Roast for 30min. Add tomatoes, lemon wedges and thyme to the tin and stir gently. Return to the oven for a further 25-30min, until chicken is cooked through and potatoes are golden and tender. Serve.
