In the same skillet, add peppers. Saute for about 4-5 minutes, or until tender. Add more oil, if needed. Add black beans and cilantro to skillet. Stir to combine.
Step 3
Spoon into bowls and top with more cilantro, if desired. Serve immediately.

Can be served with Avocado Mayo if desired. (This would count as a healthy fat serving)
