Step 1

Place potatoes, butter, garlic, salt and pepper in the crock pot; cover and cook for 4 hours on HIGH or 6 to 7 hours on LOW.

Step 2

Remove lid and add dried oregano, cream cheese, spinach and chopped artichoke hearts.

Step 3

Using an electric mixer on "low", beat the potatoes until smooth and fluffy, and everything is well combined.

Step 4

Taste for seasonings and adjust accordingly.

Step 5

*If mashed potatoes aren't creamy enough, add couple tablespoons of milk.

Step 6

Garnish with parsley and serve.
