Step 1
For the Strawberry Vanilla Syrup, mix strawberries, water and sugar in small saucepan. Bring to boil; simmer 5 to 10 minutes, stirring occasionally until sugar is dissolved and berries are softened and pale in color. Remove from heat. Strain mixture through fine mesh strainer, smashing berry pulp with spatula to drain as much syrup as possible. Stir in Vanilla. Cover and refrigerate syrup until ready to use or place bowl in ice bath to cool quickly.
Step 2
For the Mimosas, spoon 1 ounce (2 tablespoons) Strawberry Vanilla Syrup into each of 2 (8-ounce) champagne flutes. Add 2 ounces (1/4 cup) orange juice to each glass. Top with sparkling wine. Stir gently to swirl syrup. Garnish with strawberries and orange wedges, if desired. Serve immediately. Test Kitchen Tips:•Cava is a Spanish sparkling wine--it’s a bit on the sweeter side, but not quite as sweet as prosecco. It's similar to champagne, but with a slightly lower price tag, as it’s made with less expensive grapes. Prosecco is Italian sparkling wine, that’s typically middle of the road in sweetness.
