Step 1
Add the chicken to a bowl and sprinkle over half of the sachet of Spicentice Salt & Pepper mix. Mix together and leave to marinate for at least 10 minutes.
Step 2
Preheat the oven to 180 degrees. Spritz 2 baking trays with low calorie spray. Place the chicken on one, and the chipped potatoes on the other. Spritz with low calorie spray, and bake both in the oven for 35 minutes or until cooked through. (Alternatively, you can cook the chips in an Actifry).
Step 3
Once the chicken and chips are cooked, set aside.
Step 4
Heat a wok over a medium heat, and spritz with low calorie spray. Stir fry the garlic for a few seconds, then add the onions and peppers. Stir fry for 5-10 minutes and then add the chicken and chips to the pan.
Step 5
Add spring onions, remaining spice mix, soy sauce, sweetener, and 2 tbsp water, and stir fry for a few minutes.
Step 6
Serve and enjoy!
