Step 1
Start making your vegan sweet and sour sauce by adding to a pan: apple cider vinegar or rice vinegar, brown sugar, ketchup, soy sauce and pineapple juice from a can (save pineapple chunks for stir fry).
Step 2
Bring this to a soft boil on medium-high heat.
Step 3
In the meantime, in a small bowl, mix together corn starch or potato starch and 2 tbsp water to create a starch slurry. This will help thicken your sauce.
Step 4
Pour the starch slurry into the pan and stir constantly on medium heat until small bubbles start to form and the sauce thickens.
