Step 1

Heat oil in a large skillet over mediumlow. Add onion and pepper; cook until veggies are soft and onion istranslucent.

Add garlic and cook 1 minute longer.

Step 3

Add tomato paste, diced tomatoes, andcoconut milk.

Step 4

Season with salt and pepper and add kingmackerel. Cover and simmer stew for 8-10 minutes or until fish is just cooked.

Step 5

Serve warm with lime wedges and cilantro.
