Step 1
Crush oreos and cream cheese in food processor and set aside.

Melt chocolate on stove with double broiler (OR: in saucepan held over the top of another saucepan full of boiling water) Yes, you can hack a double-boiler in a pinch. If your microwave can be trusted, you can microwave in 10 second increments
Step 3
Separate 1/3 of melted white chocolate into a small bowl
Step 4
Separate another 1/3 of melted white chocolate into another small bowl. You should have 3 bowls with equal amounts of white chocolate.
Step 5
Working fairly quickly, stir a couple drops of food gel into the bowls. I did red for one and green for another. It has that pastel look because I only used a couple of drops.
Step 6
Using a pastry brush (I like mine that has rubberized little "bristles" for pastry items and egg washes), start with the white chocolate plain and coat the inside of a silicone mold, about 10 cups worth.
Step 7
Then do the red white chocolate in about 10 of the little cups.
Step 8
Next, paint the green white chocolate in 10 of the little cups, ensuring you wipe the red off of the bristles before moving onto the green color.
Step 9
Pop the mold in the fridge for about 5 minutes to harden.
Step 10
Next, use a 1/2 tsp-1 tsp to fill the molds with Oreo mixture. I filled mine right up to the top.
Step 11
Now, you probably need to heat your chocolate again if it has started to harden. Just 10 seconds should be perfect.
Step 12
Coat the top of each cup in their respective colors and set in fridge for about 10 minutes to harden fully.
Step 13
The best part of silicone is when you are ready to pop them out they come right out! Amazing.
Step 14
Store in air tight container in fridge for a few days or I prefer freezer for up to a month. They are great even just right out of the freezer!
