15 minute recipe

This spicy Thai basil squid is an easy squid recipe that only takes about a half hour to throw together and is loaded with delicious flavor!

Spicy Thai Basil Squid

neutral cooking oil (for frying, add more as needed)

shallots

garlic (peeled and minced)

Thai chili peppers

maitake mushrooms (torn,

squid

fish sauce

soy sauce

brown sugar

sesame oil

water

Salt and pepper (to taste)

white rice (for serving)

Heat two teaspoons of oil in a wide skillet over medium-high heat. Once hot, add the shallot and cook for 3-4 minutes until golden brown and softened.

Add the garlic and chili peppers to the skillet and cook for 1 minute until fragrant. Do not burn the garlic! Immediately transfer to a bowl.

Cook the Aromatics:

Heat another teaspoon or two of oil in the skillet and add the mushrooms. Cook for 4-5 minutes until beginning to crisp up and turn golden brown. Transfer to the bowl with the aromatics and season everything with a sprinkle of salt.

Cook the Mushrooms:

Pat the squid dry thoroughly. Season with salt and pepper. Heat another teaspoon or two of oil in the skillet. Once hot, add half the squid and arrange into an even layer in the skillet. Cook without moving for 3 minutes. Using a wooden spoon, toss the squid in the skillet and cook an additional minute or until the squid is barely cooked through.

Transfer the squid to the bowl with the aromatics and mushrooms. Cook the remaining squid the same way you cooked the first batch and transfer it to the bowl.

Cook the Squid:

While the squid cooks, combine the fish sauce, soy sauce, brown sugar, and sesame oil in a bowl. Turn the heat on the skillet to medium. Pour in the sauce and water and bring to a boil. Stir to scrape up any browned bits stuck to the bottom of the skillet.

Cook the Sauce:

Add the squid and aromatics and mushrooms to the sauce and toss to combine. Turn the heat to medium-low. Tear the Thai basil leaves in half and add to the skillet. Cook for 1-2 minutes, stirring regularly, until the leaves are wilted. Taste and season with salt and pepper, if necessary. Turn off the heat.

Finish the Spicy Squid:

Serve the spicy squid over cooked rice and garnish with minced scallion. Enjoy!

8-Minute Jjapaguri (Easy Ram Don Korean Noodles)

jjajang black bean ramen (Chapagetti or Jjajangmen)

thick-cut ribeye steak

Set a large skillet and a medium saucepot on the stovetop. Pour 3 cups of water in the pot. Turn both on high heat.

Cut the ribeye steak into large ¾ -1 inch cubes. Cut out any large chunks of fat, but leave the marbled pieces intact. Salt and pepper the steak chunks liberally. Chop the scallions.

Place the sesame oil in the hot skillet. Once the oil is hot, sear the steak pieces for 2-3 minutes, rotating every minute, until they are cooked to medium-rare. Remove from heat.

Meanwhile, when the water starts boiling, open the noodle packages and drop the noodles into the boiling water. Stir and cook for 2-3 minutes, until almost cooked through. (It might seem like there’s not enough water, but just stir and flip the noodles until they loosen into the liquid.)

Once the noodles are mostly soft, add all the seasoning packets. (If you are sensitive to sodium, use the full black bean seasoning packet and half of the spicy seafood packet.) Add in 1-2 teaspoons of Gochujang hot sauce. Stir and simmer another minute to thicken the sauce.

Finally, mix the seared steak and the pan juices into the noodles. Stir to coat the beef in sauce. Top with fresh scallions and serve warm.

Add the water to a pot, and set over high heat. Add salt to the water.

Once the water&#39;s boiling, add the pastina to the pot and stir.

Cook, stirring often, until most of the water&#39;s been absorbed- about 3-4 minutes.

Remove the pot from heat, and whisk in the beaten egg. Whisk immediately and quickly so the egg incorporates and doesn&#39;t cook right away.

Add the butter &amp; cheese to the pot, stirring until evenly incorporated.

Season with salt &amp; pepper, to taste.

Spoon the pastina into bowls, and serve immediately.

Quick Dumpling Soup

ginger (minced)

tbsp miso paste

pack brown rice ramen

Heat a medium sized pot over medium heat. Add the ginger and garlic, and saute for 2 minutes, until fragrant. Add in the vegetable broth, soy sauce and miso paste. 

Bring the soup to a boil, then add the frozen dumplings, noodles, carrots and greens. Allow to simmer over low to medium heat for a few minutes until the dumplings are cooked through and the noodles are soft. 

Transfer to bowls and garnish as desired. Enjoy immediately. 

A delicious one-pot wonder recipe featuring several green veggies, pesto, and rigatoni.

Creamy One Pot Green Pasta

400 gram rigatoni (one pack)

vegetable broth (homemade

broccoli (chopped)

peas

spinach

basil leaves (chopped)

zucchini (grated)

pesto

full fat coconut milk

lemon (juiced)

salt and pepper (to taste)

Add the pasta to a large saucepan and pour over the vegetable broth. Bring to a boil over high heat, and then lower to medium-low and simmer for 5 to 8 minutes, until the pasta has absorbed some of the water and is half cooked. 

Add the vegetables, coconut milk, and pesto. Cover, and cook for an additional 8 minutes, until the pasta is cooked and the sauce is creamy. 

Divide between bowls and enjoy immediately. Store in the fridge for up to 3 days. 

Microwave Cake (AKA Emergency Cake)

soy milk (unsweetened)

maple syrup

tbsp vegan yogurt (I used coconut)

apple cider vinegar

tsp vanilla extract

all-purpose flour

cocoa powder

coconut sugar

tsp baking soda

salt

In a bowl, combine the soy milk, coconut yogurt, apple cider vinegar, maple syrup and vanilla extract. 

Add the flour, cocoa powder, coconut sugar, baking soda and salt and gently stir until a smooth batter is formed. 

Transfer to a greased microwave safe container (I used a 6 inch microwaveable round glass container). Microwave on full power (800W) for 5 to 6 minutes. 

Remove from the microwave and check to see if the cake is cooked. Microwave in additional 1 minute increments if needed. Allow to cool before removing from the container.

Alternatively bake at 350F for approximately 25 minutes.

Ice as desired and enjoy.

Peel and finely chop the onion and garlic.

Measure the rest of the ingredients.

Begin with some prep

Place the saucepan over medium heat. Add oil and chopped garlic and onion. Cook for 2-3 minutes or until the onions become paler.

Mix the marinara sauce, cream cheese and water in a saucepan over medium heat. Stir well until the cream cheese blends with the tomato sauce. Reduce the heat and let the sauce simmer gently for a few minutes.

Finish off with herbs.

Foolproof and quick recipe for vegan brown gravy that goes with everything from mashed potatoes to Brussels sprouts!

Easy Vegan Brown Gravy

vegetable broth (for the cornstarch slurry)

cornstarch (or arrowroot powder)

tbsp soy sauce (or tamari)

yeast (optional,

tomato paste

paprika

onion powder

garlic powder

½ tsp dried thyme

salt and black pepper (to taste)

First, prepare the cornstarch slurry. In a jar or small bowl, mix the cornstarch with 1/4 cup of vegetable broth, until fully combined.

In a saucepan over medium heat, add the vegetable broth, soy sauce, nutritional yeast, tomato paste, paprika, onion powder, garlic powder and thyme. Whisk until completely combined and then bring to a gentle simmer. 

Gradually whisk in the cornstarch slurry while stirring to avoid lumps. Continue to simmer for 2-3 minutes until the gravy thickens to your desired consistency.

Taste and adjust seasoning with salt and pepper. Enjoy immediately.
