In a large bowl add the romaine, olives, tomatoes, pepperoni, red peppers, salami, mozzarella, artichoke hearts, and provolone.

To make the lemon olive oil dressing: In a small bowl whisk the olive oil, lemon juice, and Italian seasoning.  Pour over the solid and toss.

In an extra-large bowl, place the romaine and arugula. In a small bowl or measuring cup, make the dressing: Whisk together the olive oil, vinegar, mustard, garlic, salt, and pepper until smoothly combined (or put all of the dressing ingredients in a mason jar, seal, and shake to combine). Pour half of the dressing over the salad and toss to coat. The leaves should be lightly moistened.

Arrange the salami, prosciutto, artichokes, olives, red peppers, and tomatoes on top of the greens. Drizzle with a bit more dressing to moisten. Sprinkle with feta and parsley. Enjoy immediately or refrigerate for 1 hour prior to serving.

Blanch the green beans: Bring a medium pot of salted water to a boil, add green beans and simmer until vibrant and just tender, 3-4 minutes. Drain, rinse in cold water.

In a large bowl, add the drained beans (or drained tuna), drained artichoke hearts, drained olives, chopped celery, roasted peppers, cherry tomatoes, bell pepper, red onions, capers and fresh herbs. Add baby mozzarella balls if using.

Whisk dressing ingredients together in a small bowl.

Gently fold in the dressing into the salad, until combined. Taste, and add more salt or vinegar as needed-flavor will vary here based on what specific canned goods you are using.

I can't stop making this yummy salad. It's perfect for the summer here in Asheville. Last night, I didn't have mozzarella, so I added feta, and it was wonderful too.

Delicious! I served this salad with a hunk of crusty french bread and burrata on top (rather than the baby mozzarella balls) and it was a hit. I actually made a little too much and may have eaten the leftovers for breakfast the next day... ;)

I made it once and OMG this is soooo good.  I don't really like salads....but this one it's just incredible, all the different taste that burst in your mouth.  Finally I found my favourite salad.

kalamata olives (pitted)

green olives (pitted)

basil leaves (chopped)

spring mix salad or baby spinach

Cut the Genoa salami, hard salami, provolone, and mozzarella into bite sized pieces. If the grape tomatoes are larger than bite sized, cut them in half. Cut the artichoke hearts and red peppers into bite sized pieces.

Add the salami, cheese, tomatoes, artichoke hearts, red peppers, kalamata olives, and green olives to a mixing bowl. Drizzle the olive oil and red wine vinegar over the top, and sprinkle with the pepper. Toss gently to combine. Refrigerate until ready to serve.

Just before serving, top with the chopped basil leaves. Serve the antipasto salad on a bed of spring mix or baby spinach leaves.

Chicken tossed with a super easy homemade spicy and smokey BBQ chipotle sauce is the star of this delicious crunchy salad topped with creamy ranch dressing.

BBQ Chipotle Chicken Salad

BBQ Chipotle Sauce

chicken breast (cubed)

avocado oil

greens

chopped bell pepper

avocado

tbsp ranch (I used primal kitchen ranch)

plantain chips (or other crunchy chip)

Make or buy BBQ chipotle sauce.

Add cubed chicken to a non-stick skillet on medium heat with oil.  Lightly sprinkle with salt and pepper as you toss the chicken.  Cook on medium heat until the chicken is fully cooked and reaches an internal temperature reaches 165F.

Toss the cooked chicken with 1 cup of BBQ Chipotle Sauce.

Prepare salads by dividing veggies evenly among four servings.  For each salad, you will have about 2 cups greens, 1/2 cup cherry tomatoes, 1/4 avocado, 1/4 bell pepper, and 1/4 of the chicken mixture.  Top salad with crushed plantain chips and drizzle with 1-2 tablespoons ranch dressing.

Garnish with cilantro and green onion as desired.

This Antipasto Salad has a winning combination of meats and fresh vegetables.
