Baked Potato Dinner Board

large Russet potatoes (baked (link to my recipe))

chili (heated up)

bacon (chopped)

Sour cream

Guacamole

Pico de gallo

Blue cheese crumbles

grated cheese

Roasted garlic and herb butter (Trader Joe’s)

Back truffle butter (Trader Joe’s)

Black Forest ham (chopped)

Cranberry Jalapeno Dip (or a cream cheese dip)

tortilla chips

Bake the potatoes and set aside.

On a large prepared board, in the center, leave a space to add the bowl of the hot chili, right before serving.

Place the chili toppings in small bowls and arrange around the chili bowl area.

Arrange the hot potatoes around the outside of the board.

Right before serving, slice each potato (to make easy for adding toppings). Add the hot bowl of chili to the center. Fill in the open areas with chips!

Serve and enjoy!

Rub potatoes with coarse salt and pierce with a fork. Bake for 40-45 minutes, or until potatoes are soft and a fork goes through easily. 

Arrange all other ingredients in their own dish so guests can serve themselves.&nbsp;

Cut potatoes down the middle, leaving the sides and bottom intact.

Serve potatoes and toppings in one spot, allow guests to dress their own potatoes as they'd like.&nbsp;

Preheat the oven to 400 F.

Rub the potatoes with olive oil and sprinkle with sea salt, then place on a rimmed baking sheet and bake for 50-60 minutes, until the potatoes are pierced easily with a fork.

Cut a slit in the potatoes, lengthwise, then set out alongside the toppings. If you want to keep the potatoes warm, you can place them in a slow cooker on the warm setting. Let everyone serve their own potatoes and enjoy!

Grilled Baked Potatoes

Potatoes – large russet potatoes or sweet potatoes ((as many as you'd like))

Vegetable oil

Kosher salt

Scrub potatoes under cold running water. Dry with a towel, then use a fork to poke holes all over the potato.

Using your hands, rub oil over each of the potatoes. Sprinkle with kosher salt and wrap each potato in two layers of foil.

Place on grill and let cook for one hour, turning over at the 30 minute mark.

Remove from grill and let cool for 10-15 minutes. Serve with desired toppings.

Wash potatoes, poke holes with a fork, drizzle with olive oil, then add a few shakes of Koshor salt and freshly ground pepper. Bake potatoes in the oven at 400°F for 45 minutes - 1 hour or cook in the slow cooker on low for 4 to 6 hours.

Warm precooked pork OR cook and shred pulled pork.

Wash and chop green onions or chives

Steam broccoli.

Cook black beans for 1 minute in the microwave

To the hot baked potato, carefully insert a thin blade on one end and pull it towards the other end not going all the way through. Alternatively, you can make a zig-zag cut.

Put your hands on opposite sides of the potatoes (top and bottom from where you started your cut and ended it) and carefully pinch to split apart.

Ladle in some of the hot chili followed by your shredded cheeses, and sour cream, and top with chives.

I like to put these in a larger pasta bowl and ladle some extra chili on the outside as we all know we&#8217;ll eat the inside of the tater out first and are only left with the skin. Eat that skin as it&#8217;s amazing and so nutritious!

This is a carb lovers dream. I made a version of this tonight but without the Colby bc I couldn’t find any in the market. It was really good and it would make for excellent leftovers especially with an egg in the morning!
