Gently bring 500ml whole milk to the boil in a small <a href="https://www.bbcgoodfood.com/content/five-best-saucepans">saucepan</a> with 1 halved onion, studded with 1 bay leaf and 2 cloves. Turn off the heat and leave to infuse for 20 mins.

Melt 50g butter in another saucepan, then add 50g plain flour. Stir continuously until a paste forms – this is called a roux. Continue cooking for 2 mins.

Remove the onion, bay and cloves from the milk with a slotted spoon and discard. Add the infused milk to the roux gradually, stirring as you go, until you get a smooth sauce. Cook for 5-10 mins, stirring continuously, until the sauce has thickened. Season to taste.

Italian Béchamel sauce is a smooth, white sauce made made with flour, milk, and butter. It has French origin and has become part of Italian culinary tradition for a very long time. It's also known as White Sauce or Mother Sauce because many sauces are prepared with béchamel as a base, such as Mornay, which is a somewhat richer version. Lasagna and Cannelloni would not exist without béchamel and some pasta recipes or vegetables au gratin require this precious Italian Sauce. Homemade Italian bechamel sauce is very easy and fast to make.

Béchamel Sauce (besciamella) | How to Make Italian White Sauce

(1,7 ounces) of butter

(1,7 ounces) of all-purpose flour

Add the flour all at once and mix quickly with a whisk

Vegan Bechamel Sauce

Heat oven to 400 degrees F (204 C). Slice off the very top of the head of garlic and set on a piece of foil. Drizzle the top with oil and wrap to conceal. Then roast directly on a center oven rack for ~50 minutes to 1 hour, or until the cloves are tender, fragrant, and light golden brown.

Soak cashews in very hot water (uncovered) for at least 30 minutes.

Drain your soaked cashews and add to a small blender along with roasted garlic (cool slightly then squeeze up from the bottom toward the top to remove cloves), olive oil, nutritional yeast, salt, and water. Blend on high until creamy and smooth.

Taste and adjust seasonings as needed, adding more salt to taste or nutritional yeast for cheesiness. The roasted garlic should add a nice caramelized, garlicky sweetness to the sauce, but if you prefer a more garlicky punch, you could throw in 1-2 raw garlic cloves and blend. Set aside.

Best when fresh. Ideal for adding to dishes like moussaka, as a mac ‘n’ cheese base, in vegetable bakes, and more. Leftovers will keep in the refrigerator for up to 3-4 days, or in the freezer for up to 1 month. When reheating, add more water or plain dairy-free milk as needed to thin.

Vegan Bechamel Sauce | Minimalist Baker Recipes

Béchamel sauce or white sauce is one of the five mother sauces and an essential French classic.

Béchamel Sauce | White Sauce

Tbsp butter

Tbsp all purpose flour

Cup milk

tsp ground nutmeg (optional)

salt and pepper

Japanese Cream Stew, also known as White Stew, is rich and creamy without being heavy. It’s a classic Yoshoku meal packed with tender chicken, bite-size vegetables, and served with steamed rice or crusty bread.

Japanese Cream Stew (White Stew)

onion ((11 oz, 312 g))

carrots ((9 oz, 255 g))

Yukon gold potatoes

cremini mushrooms ((3 oz, 85 g))

Tbsp unsalted butter ((for cooking))

Tbsp extra-virgin olive oil ((for cooking))

chicken/vegetable stock

bay leaves

Tbsp heavy (whipping) cream ((optional))

unsalted butter

Tbsp all-purpose flour (plain flour)

⅛ tsp white pepper powder

Gather all the ingredients.

Cut the chicken into 1 ½ inch pieces at a diagonal angle. The slanted surface gives each piece a flatter and more open surface so the chicken cooks evenly and faster. This cutting technique is called Sogigiri in Japanese.

Season the chicken with salt and freshly ground black pepper

To Prepare the Chicken

Cut off the broccoli florets and remove the tough skin of the stem and cut into small pieces.

Boil a pot of water and add salt. Start cooking the stem first for 1.5 to 2 minutes.

Then add the florets and cook for 2 minutes, or until almost tender but crisp. Remove from the water and let cool. You can shock the blanched broccoli in ice water to make it as bright green as possible, but since I add them to the stew anyway, I usually skip that extra step. But don’t overcook as we will reheat them in the stew.

To Blanch Broccoli

Cut the onion in half lengthwise and then into wedges. Tip: Separate each layer at this step, then you don&#039;t have to do it in the pot later.

Peel and cut the carrots at an angle into 1 ½ inch pieces, after rotating 90 degrees each time. This cutting technique is called Rangiri in Japanese.

Cut the potatoes into 1 ½ inch pieces. For these Yukon gold potatoes, I did not remove the skin.

Cut the mushroom stem and slice caps.

To Prepare Other Ingredients

In a large pot (I used a 4 ½ QT pot), heat 1 Tbsp butter and 1 Tbsp olive oil over medium heat. If you&#039;re using a non-stick pot, you can omit the olive oil.

Add the chicken and sauté until 80% cooked through.

Add the onion and stir to cook until the chicken is no longer pink.

Add the potatoes and carrots and coat well with oil in the pot.

Add the chicken broth and 2 bay leaves.

The chicken broth doesn’t have to fully cover ingredients at this time as they will be eventually submerged when vegetables release moisture. Bring it to a boil on medium heat.

Once boiling, skim off the scum and foam and reduce heat to simmer.

Add mushrooms and simmer on a gentle heat, covered, for 10 minutes (set timer!).

To Cook Ingredients

Meanwhile (you have 10 minutes!), we make Bechamel Sauce. In a small saucepan, heat the butter and let it melt completely on medium-low heat. During this time, heat up the milk to warm to touch in the microwave or on the stove.

Add in the flour and stir constantly, without stopping.

The butter-flour mixture will swell and bubble. Continue to cook, stirring constantly, for the next 5 minutes. You want to make sure the flour is cooked and does not have raw flour taste.

Slowly and gradually add warm milk to the saucepan, one tablespoon at a time while you combine it with the butter-flour mixture.

Don’t hurry, and NEVER add too much liquid. You do not want to create lumps and once you get them, they are hard to fix.

The goal is to blend the mixture COMPLETELY before you add more liquid.

Add salt, white pepper, and nutmeg, and mix all together. Turn off the heat and set it aside.

To Make Bechamel Sauce (White Sauce)

After 10 minutes of simmering, open the lid.

Check the doneness by inserting a skewer into a potato. It should be tender, but don&#039;t overcook. It should not break easily. Scoop broth with a ladle.

Slowly pour the broth into the Bechamel sauce while stirring to blend together completely.

Add another ladle of broth and combine well. Now pour the white sauce back into the pot. Gently mix so that white sauce is well blended with the broth.

Add the heavy cream (if you’re using it) and season with salt to taste.

Simmer, uncovered, for another 5-10 minutes on low heat. [Optional Step] To improve the flavor, I highly encourage you to let the stew sit at the stove or counter to let cool to room temperature (keep the lid open). The stew will naturally thicken as the moisture evaporate and let the flavors meld as it cools.

Right before serving, add the blanched broccoli to the stew to reheat. Simmer on low heat and do not boil. Once everything is nice and warm, serve the stew. Enjoy it with steamed rice or crusty bread.

To Combine White Sauce and Broth

You can store the leftovers in an airtight container and keep it in the refrigerator for up to 2 days. If you plan to freeze, remove the potatoes (their texture will change) and freeze for up to a month.

To Store

Master the croque monsieur with soft sourdough, gruyère, smoked ham and creamy mustard mayo. You'll relish every mouthful of this brunch classic.

First, make a perfect béchamel sauce. Put the milk, cream, garlic, bay leaves and onion in a small pan over a medium heat and stir together. Heat until nearly boiling, then turn the heat off and leave for 10 mins to infuse. Pass the liquid through a sieve and discard the bay and onion.

Melt the butter with the flour in another pan and cook over a gentle heat until it smells biscuity. Gradually whisk in the warm milk and bring to a gentle boil, stirring regularly, then add the Dijon mustard, a little grating of fresh nutmeg and some seasoning. It should be a lovely thick creamy sauce with a deep flavour.

Brush the slices of bread with melted butter. Place them on a baking tray and toast one side under a grill, buttered-side up, until golden. Take them out and heat oven to 220C/200C fan/gas 7.

Turn the bread over and spread each slice with a thin layer of Dijon, followed by a layer of the béchamel. Cover the sauce with grated gruyère, and then a slice of ham. Form the slices into two sandwiches, spread a thin layer of the sauce over the top slice and sprinkle more gruyère on top. Put the sandwiches in the oven and bake for 10-15 mins or until golden. Mix the mustard and mayo together and serve alongside.

In a saucepan, place the cream cheese, butter and heavy cream and place over low heat.

Continue stirring until the cream cheese has melted and all ingredients are combined.

How to Make the Perfect Béchamel Sauce

Melt the butter in a large saucepan and then add the flour and mix to form a paste.

Slowly add the milk to the pan, stirring through to combine with the flour paste, and bring to a gentle simmer.

Use a balloon whisk to ensure all the flour and melted butter has been incorporated into the sauce and there are no lumps left in the mixture.

Add a generous pinch of grated nutmeg and season with salt and pepper.

Stir the béchamel sauce until it begins to thicken and become glossy.

Layer the sauce inside your lasagne, cook and serve. Buon appetito!
