Vibrant Celery Salad with Dates &amp; Pistachios

Tbsp extra virgin olive oil

½ Tbsp lemon juice

tsp sea salt

tsp black pepper

Tbsp freshly chopped flat-leaf parsley

½ cups thinly sliced celery stalks ((4 large stalks yield ~1 ½ cups

celery leaves

orange

pistachios,

To a large mixing bowl, add olive oil, lemon juice, salt, pepper, and parsley, and whisk to combine.

Add the chopped dates, breaking them apart with your fingers. You can also use a whisk or fork as needed to break them up completely.

Add the celery, celery leaves, mandarin oranges, and pistachios (optional) and mix with two spoons until all the ingredients are evenly distributed. Taste and adjust as needed, adding more dates for sweetness, lemon juice for brightness, or salt to taste.

This salad pairs beautifully with couscous and coconut yogurt, or alongside our Easy Vegan Moussaka or Kale Falafel Hummus Wraps (30 Minutes!).

Best when fresh. Leftovers will keep stored in the refrigerator for 1-2 days. Not freezer friendly.

Celery salad is a gloriously simple salad recipe that&#39;s got all the elements we love. Crunchy celery, sweet bites of raisins, a scattering of walnuts, all wrapped up in a creamy dressing. It&#39;s delicious! 

Creamy Celery Salad

celery (sliced thin)

EACH: raisins, toasted walnuts, and minced red onion

plain yogurt

mayonnaise

apple cider vinegar (or 1 teaspoon white vinegar)

pepper

salt

combine ingredients

Place all of the ingredients into a large mixing bowl. 

Mix until everything is well incorporated.

Warm braised celery salad. We have elevated celery to a delectable vegetarian side dish spiced with turmeric, pepper and cumin with a touch of tangy lemon.

Warm Braised Celery Salad

celery stalks,

garlic cloves, thinly sliced

tbsp extra virgin olive oil

tsp cumin

tsp turmeric

water, divided

lemon juice

In a large skillet with a lid, heat olive oil and add celery, garlic, carrots, salt, pepper, turmeric and cumin. Cook at medium-high heat for about 5 minutes

Add 1 1/2 cup of water, bring to a boil, reduce heat to medium and cook covered for 15 minutes.

Add lemon juice and continue cooking for an additional 5 minutes.

Simple, fresh shaved fennel salad recipe that&#039;s crunchy, tangy, sweet, salty and soo good! This makes a perfect light vegetarian lunch or dinner salad.

Shaved Fennel Salad with Lemon and Celery

large (or 2 small) fennel bulbs (stalks trimmed off and fronds reserved)

celery (rinsed,

red onion

mint parsley leaves

unsalted walnuts (chopped* (see note below))

Medjool dates (pitted and diced)

goat Gouda or Parmesan cheese (freshly grated)

lemon

Flaky kosher or sea salt

Extra virgin olive oil

Peel the base of the fennel bulb with a swivel vegetable peeler to remove the tougher outer layer.  Slice the fennel very thinly using a sharp knife or shave on a mandoline. Add to a large platter or shallow serving bowl.

Trim off the very top and base of the celery stalks and slice in half horizontally. Lay them flat on a work surface, using a swivel peeler to make thin strips. When the stalks are too whittled down to peel, use a knife to slice the remaining stalk into 1/2-inch pieces. Add the strips and pieces to the bowl along with the red onion and mint. Tangle everything together.

To serve, top the fennel mixture with the walnuts, dates, cheese, lemon zest and a big pinch of salt. Toss gently, then add the lemon juice and a good drizzle of oil. Toss again and tasted, adding more salt, lemon juice or olive oil to taste.

Celery Salad with lentils, dates and almonds - a delicious make ahead salad that keeps for several days in the fridge. Keep it vegan or add shaved pecorino!

Celery Salad with Lentils, Dates and Almonds

Medjool dates, finely chopped

cumin seeds, toasted, crushed (or use ground cumin)

aleppo chili flakes, to taste (or regular chili flakes)

To cook lentils, place 3/4 cup dry lentils in a medium pot filled with 3 cups of salted water. Bring to a boil, cover, simmer on low until tender, 20-25 minutes. ( Small lentils will cook faster, check after 15 minutes). Drain, cool.

Place salad ingredients in a serving bowl.  Add dressing ingredients, tossing gently and well to combine.

Taste. Adjust salt, sweetness and spice level to your liking. Give the salad a little time for flavors to meld ( 10-15 minutes) and re-taste, adjusting.

This is such a well rounded delicious recipe it is going to be one of my go to dishes for any time of year.

Wash the celery: Use the tips I gave you earlier to wash the celery. Remember, it's important that the celery is thoroughly clean.

Prepare your equipment: If you have a juicer, great. If not, don't worry. A blender also works. Just remember that if you use a blender, you may need to strain the juice afterward to remove the fiber.

Cut the celery: Cut the celery stalks into pieces that fit your juicer or blender.

Make the juice: If you use a juicer, simply put the celery pieces in and collect the juice. If you use a blender, you may need to add a little water to help liquefy the celery. Then, strain the juice to remove the fiber if you prefer.

Enjoy! Drink your celery juice immediately to make the most of its benefits. Remember, celery juice is most effective when consumed on an empty stomach.

Thinly slice the celery ribs. Measure out the celery leaves. Thinly slice the red apple.

In a medium bowl, whisk together the white wine vinegar, Dijon mustard, maple syrup or sugar, and kosher salt. Gradually whisk in the olive oil one tablespoon at a time.

In another bowl, toss together the celery and celery leaves with the apple, dressing, and Parmesan cheese shavings. Serve immediately or refrigerate until serving. This tastes best the day of making, but you can refrigerate leftovers for a few days (refresh them with a little vinegar or salt if necessary).

Place the celery in a bowl of ice water and soak for about 20 minutes to heighten the crispness. Drain the celery and pat it dry with a tea towel, then pile the celery into a medium serving bowl.

To toast the almonds, warm them in a medium skillet over medium heat, stirring often, until fragrant and toasted, about 5 to 7 minutes. Transfer to a cutting board and chop with a chef&#8217;s knife.

To the bowl of drained celery, add the celery leaves, chopped almonds, dates, lemon juice, and red pepper flakes. Season generously with salt (I started with &frac14; teaspoon) and pepper, and toss to combine. Add the cheese and olive oil and toss gently. Taste and add more salt, pepper and/or red pepper flakes until you reach an irresistible balance of salty, spicy, tart and sweet.

Serve at room temperature or chilled. This salad keeps well, covered and chilled, for about 3 days (before serving, toss again and pour off some of the excess liquid).

I have no idea how I found this recipe. I hate celery. However, the recipe intrigued me and so I made it. Gotta say it was the hit at the dinner table. (500 ml) frozen shelled soybeans (edamame, see note)

(1 litre) chopped celery

Granny Smith apple, halved, seeded and thinly sliced

(60 ml) fresh chopped chives

(60 ml) 10% plain or Greek yogurt

(30 ml) mayonnaise

(15 ml) lemon juice

In a saucepan of salted boiling water or in a steaming pot, cook the soybeans for 4 minutes. Cool them in a bowl of ice water to stop the cooking process and drain. Set aside.

Je me demandais quoi faire avec mon restant de céleri, cette recette est sublime. Je n'avais pas de pomme à la maison, j'ai donc ajouter quelques figues séchées tranchées finement. Aussi, j'ai ajouté une canne de coeur de palmier que j'ai tranché finement. UN DÉLICE !

This uber crunchy salty brine-y celery salad is the perfect spring salad to accompany any meal!

Celery Salad

romaine lettuce (finely sliced)

cucumbers

chickpeas

feta cheese (crumbled)

dill

garlic

shallot

tbsp dijon mustard

tbsp red wine vinegar

salt and freshly cracked black pepper

Prep all your vegetables and transfer them to a large bowl.

Make the dressing: in a blender add the dill, lemon zest, lemon juice, garlic cloves, chopped shallots, dijon, red wine vinegar and the extra virgin olive oil. Season well with kosher salt and cracked black pepper and blend until smooth. Adjust salt and pepper as needed and set aside.

Drizzle the dressing on top of the veggies and toss right before serving.

Big hit at dinner party. Topped with grilled chicken and it was a feast. I had leftover dressing which I will be enjoying!
