Awesomely Easy Swiss Fondue

Whisk 1/2 cup of the white wine with the cornstarch.

Run the cheese through a food processor or chop very, very finely to get small, even pieces.

Rub the garlic clove all over the bottom and sides of a heavy-bottomed pot (this avoids garlic chunks in your smooth fondue). Discard the garlic. Heat the wine mixture over medium low heat, until thickening and bubbling. Add a tablespoon of wine if it seems too thick &#8211; you want it to resemble a smooth gravy.

Add some of the cheese and slowly whisk. It should start to gently melt after just a few whisks around in the wine. When it&#8217;s almost completely smooth and incorporated, add more cheese and whisk gently. If it seems too tight or elasticy, add 1 tablespoon wine. Repeat this process until all cheese is melted. Consistency should be a smooth, loose sauce that has just a *little* bit of elastic stretch to it. You should be able to dip something in it and have the cheese stick to your dipper.

Season with salt and face plant immediately! I mean, serve immediately. As it cools, the cheese will want to clump together but if you keep it at a nice, low, even heat, it should stay dippable for ya.

I do see that this post is sponsored, so I completely understand the cheese choice - however, if you want to experience more authentic fondue, I would highly suggest (if you can find them) a 50/50 mix of Emmentaler and Gruyere. I was in the mood for a fun snack last night and noticed that I already had all the ingredients for this recipe in my fridge!  Easy to make and tasted even better.  Thanks Lindsay!

Two things to make life easier when making Fondue. For stubborn stoves that won't turn to the low you want. Use a double boiler. The water needs to be simmering hot. Also use garlic oil to grease the pan. Remove double boiler to a place to share, and set it on a thick heat pad. The water will keep it warm. Most fondue pots come with some method of keeping the fondue warm, an electric pot is best. You can also use a slow cooker on low to make the fondue. Make sure all ingredients are room temperature before making, it makes it less likely to seize up as you first attempt did. If your over has a Low heat(above warm) you may be able to use it to melt your fondue. When making fondue. Stir with an egg whisk or a smaller chef's whisk, to help it stay smooth. If you want to be fancy, say for Valentine's Day, test out the various types of Swiss cheese available in your local deli. Add a bit of nutmeg for a nutty taste, or smoke flavoring. You can make fondue with any Cheddar too. Many people like to use day old French Bread too. It is firmer and easier for the fork to hang on too.

Cheese Fondue Recipe

(halved)

dry white wine (pinot gris, sauvignon blanc)

Rub the cut side of garlic all over a stove-safe fondue pot (or other pot if transferring to ceramic fondue pot).

Add wine and bring to a simmer on your stove over medium-high heat.

Meanwhile, toss grated cheese with cornstarch in a large ziploc bag or in a mixing bowl.

One handful at a time, stir cheese into hot wine in a zigzag pattern, letting it melt before adding an additional handful. Once completely melted, add kirsch, if using, and let heat 1-2 minutes. Taste and season with salt, pepper and nutmeg. Serve with your favorite dippers.

Beer and Cheddar Cheese Fondue Recipe

tbsp all purpose flour

Heat your fondue pot to medium.  Add butter and melt.

Add in minced garlic and cook about 30 seconds until fragrant.

Pour in beer.

Add worchershire sauce and bring to a boil.  Cook 5 minutes.

Meanwhile, combine grated cheese and flour in a large bowl.  Toss to coat.

Add cheese mixture to fondue pot.  Reduce heat to low.

Stir until smooth.

Add a splash of heavy cream and stir until smooth.  Serve immediately.

Swiss cheese (8 oz)

shredded Gruyère or Swiss cheese (8 oz)

(1 lb) French bread, cut into 1-inch pieces

Apple and pear slices, if desired

In resealable plastic food-storage bag, place cheeses and flour. Shake until cheese is coated with flour.

Rub garlic on bottom and side of fondue pot, heavy saucepan or skillet; discard garlic. Add wine. Heat over simmer setting on fondue pot or over low heat just until bubbles rise to surface (do not boil). Stir in lemon juice.

Gradually add cheese mixture, about 1/2 cup at a time, stirring constantly with wire whisk over low heat, until melted. Stir in kirsch.

Keep warm over simmer setting. If prepared in saucepan or skillet, pour into a fondue pot or heatproof serving bowl and keep warm over low heat. Fondue must be served over heat to maintain its smooth, creamy texture.

Spear bread and fruit with fondue forks; dip and swirl in fondue with stirring motion. If fondue becomes too thick, stir in 1/4 to 1/2 cup heated wine.

This recipe will serve 4 - 6 people.  If you are serving a larger crowd, this recipe is easily doubled.

There are 2 ways you can make this fondue.  One is to make it right in a fondue pot, or the other is to make the cheese in a saucepan then transfer it to a pot with a candle that will keep the cheese melted.

To whichever method/pot you decide to use, rub the inside of the empty dish thoroughly with the cut garlic halves, then thrown them out.

Pour the wine into the fondue pot or saucepan, and place over medium-low heat.

When the wine starts to bubble, add the cheese by the handful, stirring until melted and combined.

In a small bowl, whisk together the cornstarch with lemon juice until the cornstarch dissolves, then stir the mixture into the cheese mixture.

Continue whisking the cheese mixture until it is smooth and bubbling slightly.

Serve immediately with all your favourite fondue dippers!

Grate the cheeses and add to a medium sized bowl.

Add the cornstarch to the cheese and toss to fully coat all the cheese.

In a large saucepan (or electric fondue pot), bring the beer and minced garlic to a simmer over medium-low heat.

Once simmering, add in the cheese and stir gently until fully melted and smooth.

We remixed classic Alpine fondue with a touch of Canadiana: Oka cheese, whose pungent nuttiness pairs well with Swiss. In a large bowl, combine the cheeses with the cornstarch.

How to save a broken cheese fondue

The BEST vegan cheese fondue! Incredibly rich, super cheesy, and prepared from cultured cashew cream! This vegan fondue is comfort food at its best!

Vegan Cheese Fondue

raw cashews (soaked overnight)

water

capsule probiotics

white wine

yeast

tbsp oil (optional,

tapioca starch

tbsp sweet white miso

maple syrup

onion powder

Drain the soaked cashews and transfer them to a high-speed blender. Add the water and blend on high for 20-30 seconds or until smooth and creamy.

Transfer the cashew cream to a clean jar*. Add the powder from one capsule of probiotics and stir it into the cashew cream using a wooden spoon.

Cover the jar with plastic film or with a clean cheesecloth. Let it ferment at room temperature for about 24 hours (or up to 48 hours). The cashew cream is ready once you can see some bubbles, and it has a tangy flavor.

Cashew Cream

Transfer the fermented cashew cream to a blender and add all of the other ingredients. Blend for 15-20 seconds or until smooth. The fondue will be very liquid, which is normal.

Pour the fondue batter into a large saucepan. Heat over medium heat, whisking constantly, until it thickens and starts to get stretchy, about 5 minutes.

You can then serve it immediately or transfer it to a fondue set to keep it warm. Dip pieces of bread into the cheese fondue and enjoy!

This recipe is amazing! I subbed potato starch for the tapioca starch and it turned out great. It also doesn’t get jelly like when cold with the potato starch so I’ve been eating it on bread out of the fridge and it’s delicious even like that. I also think a touch of horseradish or Dijon  would be yummy too, will try that next time! Thank you!

Swiss Cheese Fondue

Dredge the shredded cheese with cornstarch.

Rub the inside of a fondue pot or heavy pot with a garlic clove. Set fondue pot to a moderate temperature.

Pour in 1 1/2 cups wine, reserving 1/2 cup to thin the fondue if necessary. when air bubbles rise to surface, add lemon juice.

Add shredded cheese by handfuls, stirring with a wooden spoon until the cheese is melted.

Add Kirsch or brandy, a pinch each of nutmeg, white pepper and paprika, stirring to blend.

Serve with crusty French or Italian bread cubes.
