Chicken and Asparagus Stir Fry

chicken breasts

asparagus (ends trimmed and cut into 2 inch pieces)

Drizzle a large skillet with oil. Saute chicken 3-4 minutes until browned on the outside.

Add asparagus and mushrooms to the pan and continue to saute 3-4 minutes until chicken is cooked through and asparagus and mushrooms are tender.

Whisk together the soy sauce, chicken broth, hoisin, garlic, brown sugar, sesame oil, and ginger. Pour into pan.

Once sauce begins to bubble, stir in corn starch and water mixture. Stir 1 minute until sauce thickens.

Remove from heat, garnish with sesame seeds and green onions and serve.

Chicken and Asparagus Skillet

lbs chicken breast (thinly sliced (about 6 total pieces))

tbsp flour

garlic powder

white cooking wine (or chicken broth)

heavy cream

Mix the flour with the garlic powder, 1/2 tsp salt, and pepper in a flat dish. Lay each piece chicken in the flour mixture to coat all sides. If there is any remaining flour mixture, sprinkle it over the chicken.

In a large skillet, heat the olive oil and butter over medium to medium high heat. Once the butter is bubbly and hot, add the chicken breast to the skillet in a single layer. Cook 3-4 minutes on the first side and then flip and cook and additional 3-4 minutes.

Remove chicken from skillet, and add asparagus and garlic, cooking 1 minute and stirring continually. Pour in the cooking wine and use the spoon to scrape the bottom of the pan as you stir to deglaze the pan. Continue to cook 2 minutes or until the liquid has reduced in half.

Stir in the heavy cream and remaining 1/2 tsp salt (or more to taste.) Bring to a boil, stirring regularly. Once the cream is boiling, add the chicken back into the sauce and continue to cook for 3-5 minutes or until the sauce has thickened.

Remove from heat. Sauce will continue to thicken as it cools. Serve over potatoes, wilted spinach, or rice. Enjoy!

penne pasta (,

asparagus spears (, ends removed)

Cook pasta according to package instructions. During the last 5 minutes of cooking, add the asparagus to the water.&nbsp;Drain pasta and asparagus.

Heat olive oil in a skillet over medium-high heat. Add chicken and cook for 2 minutes, browning it on all sides.&nbsp;

Reduce heat to medium. Add the garlic, onion powder, basil, oregano and red pepper flakes to the skillet. Cook for 2 minutes.

Add chicken broth, half &amp; half, cream cheese, and half of the parmesan cheese. Stir until well combined. Cook until cream cheese is melted and chicken is cooked through.

Add cooked pasta and asparagus toss to combine.&nbsp;

Add remaining parmesan cheese and salt and pepper, to taste.

Taste and adjust seasonings, if needed.&nbsp;You could also add a splash of milk or chicken broth to thin the sauce, if needed.

Sheet Pan Chicken and Asparagus

Preheat oven to 375 degrees and lightly grease a rimmed baking sheet.

Stir together salt, pepper, garlic powder, Italian seasoning blend.

Arrange chicken and asparagus in a single layer on the baking sheet.

Drizzle olive oil over the asparagus and the chicken. Toss in the oil to coat.

Season chicken and asparagus all over with the herb mixture.

Squeeze fresh lemon juice over the chicken and asparagus. (For added flavor and visual appeal you can layer thin lemon slices between the asparagus spears)  Sprinkle parmesan over the asparagus.

Bake for 15-20 minutes until asparagus is tender and chicken is cooked through. Serve immediately.

Slice

To thinly slice your chicken breasts or thighs, place the chicken in the freezer for 15 minutes. Remove from freezer and cut chicken width-wise (against the grain) into strips no thicker than 1/4 inch

Whisk

Whisk together the honey, garlic, soy sauce, lemon zest, lemon juice, and cornstarch until the cornstarch is dissolved. Tip: Zest the lemon before juicing.

Heat

Heat the oil in a large wok or skillet over high heat until glistening.

Saute

Add the chicken to the skillet and stir fry until the chicken is browned for about 2-3 minutes.

Give the stir fry sauce a quick stir again and add to the skillet along with the trimmed asparagus.

Stir-Fry

Saute the sauce, chicken, and asparagus together for 2-3 minutes until the chicken is cooked through and the sauce has thickened.

Serve

Serve plain or over rice or cauliflower rice.

An easy 15 minute asparagus and chicken stir fry.

Chicken Stir Fry

Fresh mushroom Madeira sauce, tender crisp asparagus, and melted cheese pair with tender, juicy sautéed chicken breasts to make this Chicken Madeira recipe that is one of our favorite family dinners that is special enough for weekend cooking or holidays, but easy enough for weeknights when we are craving something different from the norm.  It's touted as one of the most popular menu items at the Cheesecake Factory.  Once you've tasted a bite it's easy to see why!

Chicken Madeira

chicken breasts (about 1 pound, sliced thin horizontally)

asparagus (blanched)

Kosher salt (divided)

pepper (divided)

Tablespoons butter

mushrooms (thickly sliced)

garlic (minced)

Madeira wine (a sweet white dessert wine)

beef stock or beef broth

mozzarella cheese

Slice chicken breasts in half lengthwise.  Use a meat mallet to pound each piece of chicken to 1/4" thickness between two pieces of plastic wrap.  Season chicken on both sides with 1/2 teaspoon salt and 1/4 teaspoon pepper. Set aside.

In a large skillet, melt 2 tablespoons of butter and 1 tablespoon of oil over medium-high heat.  Add the sliced mushrooms and season with 1/4 teaspoon salt and 1/4 teaspoon pepper.  Cook for 5 minutes, stirring occasionally, until softened.  Add the garlic for the last minute, then transfer cooked mushrooms to a plate.

In the same skillet, melt 1 additional tablespoon each of butter and oil.  Saute the chicken breasts for 3-4 minutes on each side until nicely browned and cooked through. Transfer to the plate with the mushrooms.

In the same skillet, add the Madeira wine and bring to a boil. Boil vigorously for 5 minutes until reduced by half, using a wooden spoon to scrape up any browned bits left over from cooking the chicken from the bottom of the pan.

Once the Madeira has reduced by half, add the beef broth and bring to a boil.  Boil for about 10 minutes until only about 1 cup of liquid remains (about 1/4 of the original volume of liquid). Reduce heat to medium-low and stir in the cream. Let the sauce simmer for 2 minutes until slightly thickened. Taste and adjust salt and pepper as needed.

While the Madiera sauce is reducing, blanch the asparagus by adding it to a large pot of salted, boiling water and cooking for 2-3 minutes, just until tender-crisp and bright green.  Drain immediately and set aside.

Return the cooked chicken and mushrooms to the pan, tossing to coat in the Madeira sauce. Arrange the blanched asparagus around the chicken and sprinkle with mozzarella cheese. Place the skillet in the oven under the broiler for 3-4 minutes, just until the cheese is melted, then serve with mashed potatoes.

One Pan Garlic Butter Chicken & Asparagus

Combine the garlic powder, onion powder, paprika, salt, and pepper in a small bowl and season the chicken thighs with the mixture of spices.

Heat a large skillet over medium heat and add 1 tablespoon of the butter and oil.

Once the butter has melted, add the chicken thighs to the skillet and cook for about 10-12 minutes, flipping halfway through cooking, until chicken is nearly done.

Push the chicken over to the edge of skillet and add the remaining butter and oil to the empty space in the skillet. Once hot, add the garlic and cook for 30 seconds.

Add the asparagus to the butter/oil and cook, stirring often, until asparagus and chicken are tender and fully cooked, about 4-5 minutes.

Season asparagus with additional salt and pepper, if desired, and serve hot.
