Chicken Gnocchi Soup

Parmesan cheese

In a large dutch oven or soup pot, add oil and cook onion, celery and carrots over medium-high heat until slightly softened.

Add parsley, garlic, thyme, salt and pepper and stir.

Add chicken breasts (if you prefer, you can add them whole, and shred them after cooking) and broth and bring to a simmer over medium-high heat. Reduce heat to medium low, cover, and simmer until vegetables are tender, about 12-15 minutes.

Whisk together cream and corn starch and stir into the soup with the gnocchi. Let simmer for 4-5 minutes until gnocchi is tender and soup is slightly thickened.

Stir in spinach and Parmesan and serve.

Add the chicken to the bottom of the slow cooker, followed by the diced onion, celery, carrots, garlic, thyme, salt and pepper.

Pour the broth into the slow cooker and cover. Cook on low for 6 hours or on high for 3-4 hours.

Remove the chicken breasts or keep in the crock pot and dice or shred the meat. Set aside.

Return the diced chicken meat if removed and add in the gnocchi.

In a small bowl, whisk together the heavy cream and cornstarch. Pour the mixture into the soup, stir well.

Set the slow cooker to high to cook for another 20-30 minutes.

Stir in the fresh spinach while hot to wilt. Serve the soup hot with parmesan cheese and fresh parsley for garnish, enjoy!

Heat butter and olive oil in a large, heavy bottomed pot until foaming subsides. Sauté onion, carrots, and celery with 1/4 tsp salt and 1/2 teaspoon pepper until softened and just starting to brown. Add garlic and cook for 1 minute, until fragrant.⠀

Deglaze the pan with the wine and simmer until almost all of the liquid is evaporated, 2-3 minutes. Stir in flour and cook for 1-2 minutes.⠀

Gradually whisk in chicken stock and simmer to thicken slightly.  Whisk in half and half, thyme, and Italian seasoning. Bring to a simmer (not a rolling boil), stirring or whisking.

Add gnocchi and simmer for 3-5 minutes until tender and cooked through (they&#x27;ll start to float). Stir in parmesan, shredded chicken, and spinach leaves. Simmer for 2-3 minutes, until chicken is hot and spinach is wilted.⠀

Season to taste with nutmeg (if using), salt, and pepper. The soup will thicken as it sits. For a thinner-textured soup, serve right away. For a thicker soup, let stand 5-10 mins, keeping the soup warm or gently reheating, if needed.

Mix the cornstarch into the cream until dissolved, then add to the slow cooker and stir. Let the soup cook for 20 minutes longer on high, or until thickened.

In a large stock pot, heat the olive oil over medium-low heat. Add the onion and saute until translucent, about 3 minutes. Add the garlic, celery, and carrots. Saute for another 3 minutes until the celery begins to soften.

Add in the diced potatoes, dried thyme, poultry seasoning, garlic powder, dried parsley, salt &amp; pepper, and the veggie stock. Simmer for 20-25 minutes until the potatoes soften.

When the potatoes are soft, mash a few of them up with a fork or immersion blender in the pot. You'll want to mash about 1/4 of the potatoes. This will help thicken the soup.
