30-minute Chickpea Sunflower Sandwich with smashed chickpeas and roasted sunflower seeds in a simple dressing. Sandwiched between two slices of bread and topped with my secret garlic sauce, this is healthy lunch perfection.

Chickpea Sunflower Sandwich

chickpeas

Tbsp vegan mayo ((sub tahini

red onion

Tbsp fresh dill* ((finely chopped))

rustic bread ((lightly toasted // gluten-free for GF eaters))

onion,

hummus

medium lemon, juiced ((1/2 lemon yields ~ 1 Tbsp))

- 1 tsp dried dill*

garlic ((minced))

Water almond milk ((to thin))

salt

Prepare garlic herb sauce and set aside.

Add chickpeas to a mixing bowl and lightly mash with a fork for texture. Then add sunflower seeds, mayo, mustard, maple syrup, red onion, dill, salt, and pepper and mix with a spoon. Taste and adjust seasonings as needed.

Toast bread (if desired) and prepare any other sandwich toppings you desire (tomato, onion, lettuce).

Scoop a healthy amount of filling onto two of the pieces of bread, add desired toppings and sauce, and top with other two slices of bread.

Sunflower-chickpea mixture will keep covered in the fridge for up to a few days, making it great for quick weekday lunches!

Green Goddess Sandwich

Vegan Chickpea Salad (see below)

bread

Maille Mustard

lettuce leaves

Turkish cucumber, thinly sliced

carrot, thinly sliced (use a vegetable peeler)

radishes, thinly sliced

avocado sliced

sunflower

chickpeas,

Italian parsley

dill (or sub ⅛ cup fresh tarragon)

mustard

Vegan Mayo

salt and pepper

Make the chickpea salad, placing all ingredients in a medium bowl, mix and smash with a fork until well combined. Taste and adjust salt and pepper to your liking.

Assemble the sandwiches. Spread a little whole grain mustard on the bread.

Top with lettuce and a generous amount of the chickpea salad.

Layer sliced cucumber, carrots, radishes and avocado.

Whole family (including my non-vegan oldest son) LOVED this sandwich.  We used a much smaller seeded vegan bread and did a side of vegan tomato soup with a cornichon garnish.  SO GOOD!!!   Thank you!!!!

I loved this recipe! Very complete flavor and texture profiles that taste like something I would get at the downtown cafe. I was able to get four sandwiches out of this recipe. Not difficult to make either. I liked using toasted bagels.

this makes a fantastic sandwich. I made it as an egg salad instead of making it with chickpeas and it was perfect.

A nice hearty veggie sandwich. The chickpea salad would also be awesome in lettuce cups if you wanted leftovers and don't want to double up on carbs.

I love chicken salad but since going plant based last January it’s been difficult to find a good vegetarian replacement that satisfies this craving.  The smash chic pea salad sandwich was amazing! Looking forward to trying other chickpea recipes

How to make the most delicious, vegan, green goddess sandwich with herby chickpeas! Simple, easy and delicious! 

Smashed Chickpea Avocado Sandwich -VEGAN, FAST and Healthy....... and oh sooooo satisfying! The best part? Whip it up in 5 minutes flat!

Smashed Chickpea Avocado Sandwich

avocado

olive oil

scallions, finely slided

pepper

cayenne or chili flakes

light squeeze of lemon juice

whole grain bread

Optional Additions – sprouts, radish,grated carrots, cucumber, fresh herbs

Place avocado and oil in a bowl and mash with a fork until relatively smooth. Add chickpeas and mash with fork. Stir in scallions, salt, pepper, cayenne and lemon juice to taste. Add optional herbs.

Pile on a piece of whole grain bread, top with sprouts and the other slice. Cut in half, and perhaps share&#8230; this makes a hearty sandwich!

I made this and not only was it easy, it was delicious!  Highly recommend it!

So good! I ended up using half a can of chickpeas (so a bit more than half a cup) and chipotle chili pepper in place of the cayenne. I spread it on whole grain naan and topped with spinach and tomato slices. I could eat this every day!

I made this sandwich without the chick peas and just mashed 1/2 of an avocado, added some chopped red onion and celery.  Sprinkled it with about 1/4 of juice of a lemon, salt and pepper.  Spread it on Dave's Seed Bread, added a few slices of cucumber, and used avocado mayo.  Yum!  Thanks for the inspiration.  So quick, easy and delicious!

Delicious.  Since this recipe makes 2 servings, I halved the ingredients and served it openface on 1 slice of multigrain bread, sliced cucumbers, and a bed of baby spinach.  Sprinkled with smoked paprika.  This will be a regular lunch for me, thank you!

Made as shown with addition of chopped red pepper, daikon radish, carrot..  In a wrap lined with hummus was excellent!

Wow. Just wow. Such a healthy and delicious recipe that is good to the last bite! Highly recommend adding chilli flakes if you like some heat, and I also used chipotle olive oil instead of regular for extra spice. Made half the recipe into a wrap and still had a bit of the filling left over on the side! Just as good in the wrap as it is by itself. Thank you for this! Herby Chickpea Salad Sandwich

This smashed Chickpea Salad Sandwich recipe is easy to make, healthy and satisfying. It takes only 10 minutes to prepare with no cooking required.

Chickpea Salad Sandwich

greek yogurt ((or hung curd))

onion (finely chopped)

coriander leaves (finely chopped)

salt and pepper (to taste)

In a large bowl, add cooked or canned chickpeas, and using a potato masher or fork, mash it a slightly chunky texture. Then add onion, greek yogurt, coriander leaves, salt &amp; pepper. Mix all well. 

Serve as is, or build a sandwich. It&#39;s also great in lettuce wraps or tortilla wrap.Take a sandwich bread and spread smashed chickpea salad mixture generously on one slice of the bread. On another slice of bread top it with lettuce leaves, tomato slices, and onion.

Cover and press with another bread slice over it. Cut in half and enjoy them immediately.

Smashed Chickpea Salad Sandwich Recipe

(425 grams) Can Chickpeas (drained and rinsed (aka Garbanzo))

C (55 grams) + 1 Tbs Dill Pickles (finely chopped)

C (35 grams) Purple Onion (finely chopped, about 1/2 an onion)

Tbs (30 grams) Just Mayo

tsp Stone Ground Mustard

tsp Apple Cider Vinegar

Sea Salt

tsp Fresh Dill (fresh-chopped)

tsp Ground Turmeric (optional

Pepper

Multigrain Bread or Optional Gluten Free Bread

Sprouts

Kale

Shredded Carrots

Lettuce

Tomatoes

Using a potato masher, rough-mash the chickpeas until most is smashed but there are still some whole chickpeas left. Add the pickles, onion, mayo, mustard, vinegar, salt, dill, optional turmeric and black pepper. Mix well. Taste for seasoning adjustment.

Store in a covered container for up to two days. Delicious alone or piled high on multigrain with accompanying veggies.

Open the can and drain the chickpeas and rinse them thoroughly under cold water.

Add the drained chickpeas, capers, and vegan mayo into the bowl of a food processor. Pulse the mixture for about 20-30 seconds. You&#39;ll want to achieve a slightly chunky texture, ensuring it&#39;s well combined but still retains some texture.

Seasoning

Taste the mixture and season it with salt and pepper to suit your preference. Remember that capers can add some saltiness, so adjust accordingly.

Assemble

Take your favorite sandwich bread slices and spread a generous amount of the prepared chickpea &#39;tuna&#39; mayo onto one slice. Top it with another slice of bread to create a sandwich. Garnish your sandwich with freshly chopped parsley for added color and flavor.

Serve

Cut the sandwich in half or into quarters, and it&#39;s ready to be enjoyed!
