The Coronation chicken & potato salad is a perfect lunch dish, an easy midweek supper, a good picnic companion and a brilliant sandwich the next day. Be prepared to make it again and again; it converts everyone instantly because it’s sweet but spicy, and rich but light.

Coronation chicken and potato salad

barbecued chicken

chat potatoes, cooked,

Lebanese cucumber, peeled,

tbsp chopped chives, plus extra whole to garnish

butter lettuce

tsp nigella seeds

tbsp whole-egg mayonnaise

(95 grams) low-fat Greek-style yoghurt

mango chutney

tbsp mild curry powder

tomato paste

This artichoke salad is a simple and tasty side dish that’s great for picnics, barbecues and potlucks. In this recipe, canned artichokes are combined with black olives, grape tomatoes and sliced onions.

Artichoke Salad

¼ cup Extra Virgin Olive Oil

Balsamic Vinegar

Garlic Clove (grated

Oregano

Salt

Black Pepper (or

Red Pepper (optional)

Pitted Black Olives (drained and rinsed and

Tomatoes

Sliced Onions (sliced paper thin)

Prepare the dressing first so the flavors have a chance to mingle and meld.

Add the extra virgin olive oil, balsamic vinegar, grated garlic, dried oregano, salt, black pepper and crushed red pepper, if using, to a small jar or container with a tight fitting lid.

Cover the container tightly and shake it vigorously to mix. Refrigerate the dressing until ready to use. Give it a good shake right before using.

Make the dressing

Rinse the artichokes well to get rid of that canned taste. Drain them well.

Place the artichokes, open end down on a plate or pan that’s lined with a couple of paper towels and let them drain further.

Cut the artichokes into quarters and pat them with paper towels to remove excess moisture.

Prep the artichokes

Drain and rinse the olives, then cut them in half.

Cut the tomatoes in half.

Slice half a small onion into paper thin slices.

Prep the remaining ingredients

Add the artichokes, black olives, tomatoes and sliced onions to a large bowl and gently toss the ingredients to combine them.

Add the dressing to the bowl. Stir and toss the artichoke salad gently using a rubber spatula until it is coated in the dressing and combined.

Cover the bowl and refrigerate the artichoke salad until it’s chilled. Serve and enjoy.

Low FODMAP Italian Pasta Salad

brown rice farfalle

½ English cucumber,

cherry tomatoes, quartered

kalamata olives

chives

prosciutto,

crumbled feta

Tbsp. red wine vinegar

olive oil

oregano

basil

dijon mustard

sugar

Salt and pepper,

Cook pasta according to package instructions. Drain and rinse pasta under cold water until cool. Place pasta in a large mixing bowl and add cucumber, tomatoes, olives, chives, red wine vinaigrette and optional mix-ins. Stir to mix and set aside

Place all red wine vinaigrette ingredients except the salt into a blender and blend until well mixed. Season to taste with salt. Pour over mixed pasta salad and stir to mix. Serve or refrigerate until ready to eat. 

This is lovely!  I halved the amount of olive oil (personal preference).

A bright orange jiggly salad complete with whipped topping, crushed pineapple, jello, and 32 circus peanuts.

Circus Peanut Salad

44 circus peanuts (32 for the salad, 12

water

oz orange gelatin (I used 2 - 3 oz packets)

whipped topping (8 oz)

pineapple

In a microwave-safe bowl, combine 32 roughly chopped Circus Peanuts and 1/4 cup of hot water. Microwave for one minute and stir until melted and smooth.

Dissolve orange gelatin into 3/4 cup of boiling water and then pour into melted candy mixture, stirring until smooth. 

In a separate bowl, combine crushed pineapple with whipped topping. Fold until evenly distributed. 

Fold the whipped pineapple mixture into the melted candy mixture.

Pour into a greased 13&quot; X 9&quot; baking dish. Chill until firm. (~ 4 hours)

Top with 12 extra Circus Peanuts, one for each square if cut.

Circus Peanut SALAD

Cold rice noodle salad with fresh and crisp veggies smothered in chili garlic dressing. It's a perfect salad to keep in the fridge for quick lunch or simple side. 

Chili Garlic Rice Noodle Salad

Asian rice noodles, brown or white

fresh cut up vegetables (see note)

green onions, chopped

cilantro

peanuts

Tbsp. neutral oil, oil

Tbsp. low-sodium soy sauce

Tbsp. honey

Tbsp. sesame oil

Tbsp. chili garlic sauce

lime lime

Tbsp. ginger

garlic

Cook rice noodles according to package directions or see above how I make mine so they don&#8217;t break or stick. Immediately drain and rinse under cold water. Set over a colander to drain.

Meanwhile prepare the dressing by whisking all of the ingredients together in a small bowl.

Combine the drained noodles, vegetables, green onions, cilantro, and basil with the dressing. Refrigerate the salad for 15-30 minutes before serving.

Italian Pasta Salad

Delallo fusilli pasta

broccoli florets (cut bit sized)

grape tomatoes (halved)

baby cucumbers (quartered)

genoa salami (diced

½ cup sliced pepperoncini (plus 2 tablespoons of brine)

red onion

black olives

red wine vinegar

kosher salt (plus

garlic powder

Bring a large pot of salted water to a boil.

When boiling, blanch the broccoli 15 seconds and remove with a slotted spoon and rinse under cold water to stop it from cooking.

Add the pasta to the boiling water and cook according to package directions.

Drain and rinse under cold water then add to a large bowl with the remaining ingredients.

Mix well and refrigerate until chilled. Serve cold.

Cook rice noodles according to package then rinse under cold water. Set aside.

Chop and prep all veggies. Thaw or cook shrimp if not used fresh cooked.

Mix all dressing ingredients together. Whisk well and add enough water until desired consistency.

In a large bowl, add cooked rice noodles, chopped peppers,  cucumber, carrots, cabbage, red onion, green onion, half of the cashews, and shrimp.

Pour dressing all over salad and mix with tongs until salad is evenly coated.

Sprinkle with remaining cashews and sesame seeds. Enjoy! Best served cold.

Orzo salad with artichokes and spinach comes together in less than 30 minutes. It's so fresh, delicious, and makes the best side.

Spinach and Orzo Salad with Artichokes

dry orzo

(6 – 10 oz.) jar marinated artichokes, drained + roughly chopped

spinach,

plum tomatoes, chopped

green onions, sliced

feta

lemon juice

tsp. white wine vinegar or apple cider vinegar

Tbsp. fresh basil, minced

lemon

Kosher salt and fresh black pepper

Cook orzo in salted water according to the box directions. Drain and rinse under cold water.

Meanwhile, make the vinaigrette by whisking together the olive oil, lemon juice, vinegar, basil, and lemon zest. Season with salt and pepper, to taste.

In a large salad bowl, combine the cooked orzo with artichokes, spinach, tomatoes, green onions, and feta. Pour the vinaigrette over salad and toss to combine. Cover and chill for 30 minutes before serving.

I always make this salad for parties and everyone always loves and asks for the recipe. Attending another party tonight and the hostess requested I make it again :)

Delish! I substituted some of the ingredients with what I had on hand. Red quinoa for orzo, red onion for green onion. I used about 3x the abound of basil because we love it so much. The dressing had a little too much oil for my taste so when I make it again (with the right ingredients) I’ll use 1/4c olive oil instead. Over all great salad! My family loved it!
