Classic cole slaw of deeply flavored, sweet-and-tangy cabbage. The secret is to do a rapid purge of excess cabbage liquid with a quick cure of salt and sugar before tossing the shreds in a creamy dressing.

Classic Coleslaw Recipe

For the Slaw Mix:

parsley leaves

salt

For the Dressing:

apple cider vinegar

dijon mustard

For the Slaw Mix: Combine cabbage, onion, carrot, and parsley in a large bowl, leaving plenty of room to toss (you may have to use two large bowls if your bowls are not large enough). Sprinkle with sugar and salt and toss to combine. Let rest five minutes, then transfer to a large colander and rinse thoroughly under cold running water.

Transfer rinsed mixture to a salad spinner and spin dry. Alternatively, transfer to a large rimmed baking sheet lined with a triple layer of paper towels or a clean kitchen towel and blot mixture dry with more paper towels. Return to large bowl and set aside.

For the Dressing: Combine mayonnaise, vinegar, mustard, black pepper, and sugar in a medium bowl and whisk until homogenous.

Pour dressing over cabbage mixture and toss to coat. Taste and adjust seasoning with more salt, pepper, sugar, and/or vinegar if desired.

Add the vinegar to the evaporated milk and set aside.

Grate the cabbage either by hand or with a food processor.

Salt the grated cabbage and let sit for at least half an hour.

Squeeze the cabbage to remove the excess water and place in a bowl.

I love pork, too! My favorite is the country style boneless ribs I get at Costco but they seem to always be out lately. I would so try the ribs. And just saw Zaycon offer bacon-wrapped pork fillet, chicken breast and sausage in my area, too. Yum!

Cumin and Lime Slaw

lime

tsp of cumin (plus more to taste)

tbsp of chopped fresh cilantro

In a large bowl add your mayonnaise, sour cream, cumin, cilantro and shallot if your are using it. .

Next add your cabbage mix

Now squeeze the fresh lime over top and add your salt and pepper. Mix well so all of the ingredients come together. It may look a little dry but once it sits it will come together and moisten.

Taste for any additional cumin. I like lots so I usually add a little more at this point.

Let sit for about 30 minutes to an hour covered in the refrigerator

Serve with your favorite taco, rice bowl or meal

Half the cabbage, remove the core, and thinly slice it. Place in a large bowl.

Peel and thinly slice the onion. Add it to the cabbage.

In a medium bowl, whisk the vinegar, oil, salt, sugar, dry mustard, and celery seed together. Pour the dressing over the cabbage and toss to coat.

(16-ounce) package coleslaw mix

In a large bowl, make the dressing by combining the onion, pickles, mayo, pickle juice, dill, garlic powder, and salt. Add the coleslaw mix and toss to combine. Cover and refrigerate at least 2 hours to allow the flavors to combine. When ready to serve, taste and add additional salt if necessary, then serve.

Simple Creamy Southern Coleslaw Recipe

Prep. First, read my article on The Science of Slawsome Slaw. Then decide how you want to cut the cabbage, carrot, and onion: Chopped, grated, or hashed and have at it. I prefer this recipe shredded or chopped.

Salt. In a large strainer or colander, mix the cabbage, carrot, and onion with the salt and put it in the sink or over a bowl for an hour. The salt will draw out a lot of water that will otherwise dilute the dressing. Then rinse the mix with cold water to get rid of excess salt and pat dry. You can now hold it in the fridge for a day if you want.

Dress. Whisk together the dressing in a large bowl. Add the cabbage, carrot, and onion mix. Taste, adjust seasonings, cover and chill for at least 1 hour if possible before serving.

Combine all of the ingredients except for the shredded cabbage and carrots in a medium-sized bowl until completely integrated.&nbsp;

Add the Shredded Cabbage and Carrot mix to a large bowl and add the dressing made in the first step a little bit at a time, stirring as you go.&nbsp;

Once you have added the desired amount of the dressing, cover and refrigerate for 2-3 hours (technically, you can eat it right away, but it is better served cold)

This is my go-to recipe for when I make coleslaw! I don’t even like eating other coleslaws, because nothing is comparable to this one! My kids even love it! It’s perfect with pulled pork sandwiches!

This is my go to coleslaw recipe. I don’t care for heat so I just skip the red pepper flakes. And sometimes use broccoli slaw instead of cabbage. So yummy, thanks for sharing!!

I love coleslaw so chose this recipe because 1 - I had all the ingredients, 2 - very easy to make, 3 - looked appetizing.  The only drawback I have on this was I think it's to sweet.  I would cut the sugar to 3 tablespoons.  Will definitely make again.  Thank you
