This fresh corn salsa recipe is the perfect summer appetizer! It's made simply with sweet corn, onion, jalapeño, cilantro, lime and a dash of chili powder (avocado is optional). Recipe yields about 4 cups salsa.

Fresh Corn Salsa

corn

onion

avocado

cilantro (about 1 bunch)

lime juice (about 2 limes), to taste

white wine vinegar

chili powder

cumin

fine sea salt

In a medium serving bowl, combine all of the ingredients. Stir to combine.

Adjust to taste, if necessary: For more zing, add about 1 teaspoon more vinegar or 1 tablespoon more lime juice. For more flavor overall, add another pinch of salt. For more spice, add more jalapeño.

For best flavor, allow the salsa to marinate for 20 minutes before serving. This salsa keeps well in the refrigerator, covered, for 3 to 4 days.

Delicious! We were already planning on making the colorful weeknight burrito bowls from your cookbook and I was just going to do corn on the cob, but this salsa was a much better option and was most excellent with the burrito bowl. Thanks, as always, for your tasty, fresh recipes!

This was excellent!  We were already making the colorful weeknight burrito bowls from your cookbook, and I was just going to do corn on the cob, but when this recipe popped up in my inbox, I knew we had to try it. This was fabulous!  It came together SO quickly (seriously, like 5 minutes) and the flavours were fresh and satisfying.  This is definitely going into my summer rotation.  I forgot to pick up jalapenos and substituted red pepper flakes - definitely not the same flavour, but worked in a pinch!

On another note, I made this for the first time on an evening I was having company over - a risky move! - and of course it turned out perfectly.  Thank you for your delicious, nourishing, and consistent recipes!

Just happened to get 4 ears of corn and a couple of tomatoes in my CSA share, so I made this and some pico de gallo (also your recipe). Delicious! Plan on making this all through the summer.

I made half of the recipe yesterday and we ate it all! So good! Went today and bought ingredients to make the full recipe! Such awesome flavor with very simple ingredients! We were talking about adding this to our tacos!

Simple and delicious! I grilled my corn lightly on a grill pan, omitted the avocado, and served with your portobello poblano fajitas (one of my all-time favorite recipes) with slice avocado and red salsa. I added a little feta to the leftovers and ate them on their own--so good! I feel like you could add pretty much anything you wanted to this salsa-- black beans, diced bell pepper, halved cherry tomatoes--and it would be good.

Easy and delicious. I used frozen corn and cooked in an iron skillet until charred. I'm going to top black bean tacos with it.

This past week, we didn't have corn in our CSA box, and I nearly cried.  We've been making this salsa for the past few weeks, and it is amazing.  We eat it as a side dish, though -- it's out there.....I don't think I could limit myself to eating it as just a salsa.

I did throw the onion in the blender, and as I didn't have jalapeno I added a little red ancho chili powder that had a very subtle heat in its place.

My family loved it! My husband has GERD, so I subbed milder ancho peppers for the spicier kind and threw in a little smoked paprika.  It gave me something different to do with the fresh corn that I found on sale. Especially loved by my gluten-intolerant daughter who is always looking for something healthy to snack on when she gets home from classes.

Great recipe! I stumbled upon it while trying to figure out some meal prepping for a calorie cut and it is the perfect low calorie burst of flavor that my meals needed.  My question is: have you ever tried it with frozen corn and how much of a difference did it make?

Delish!  Tested this out for a Mexican themed event we are having.  So fresh on top of tacos.  Can’t wait to make it again!

Made this with fresh corn grilled in my grill pan and no avacodo. Found it to be dry and a bit bland. Will add smoked paprika and more spices to the leftovers to see if I can salvage it. Queso Fresca would be a nice addition, too.

I made this today and it is SO GOOD. I could just eat in plain with a spoon tbh. I followed the recipe exactly and it didn't need anything extra, which is rare!

Chipotle Corn Salsa (Copycat)

corn ((see note 1))

red onion (finely chopped)

poblano pepper (peeled and finely chopped (see note 2))

jalapeño peppers (stemmed, seeded, and finely chopped)

cilantro

lemon juice

lime juice

Salt

Tortilla chips (for serving)

Cook corn according to package directions. Spread on a baking sheet to cool.

To a large bowl, add cooled corn, red onion, jalapeño peppers, poblano pepper, cilantro, lemon juice, and lime juice. Season to taste with salt and serve with tortilla chips, burrito bowls, and tacos.

Use fresh corn on the cob or frozen corn for this Fresh and Simple Corn Salsa. Combine with zingy red onions and red peppers and an acidic citrus glaze, this corn salad is sure to please.

Fresh and Simple Corn Salsa Recipe

Corn Kernels (fresh

Tomatoes (diced)

Red Onion (diced)

Red Bell Pepper (diced)

Jalapeño Pepper (stems/seeds removed, diced)

1.5 Tablespoons Fresh Cilantro (diced)

Kosher Salt

Tablespoons Freshly Squeezed Lime Juice

Roasted Poblano Pepper (diced)

Avocados (diced)

Lemon

White Sugar

Sambal Oelek Ground Chili Paste

If using fresh Corn, cook it and then use a knife to remove the kernels. 

If using frozen Corn, allow it to defrost and then squeeze out the excess water. 

Place all ingredients into a mixing bowl and combine well.

Place into the refrigerator and allow to cool.

Serve with a garnish of cilantro leaves.

Raw corn gives this corn salsa recipe plenty of crunch. If you prefer to cook your corn, I recommend grilling it to add smoky, charred flavor. Both versions are delicious!

In a medium bowl, combine the corn, onion, cilantro, bell pepper, lime juice, garlic, jalapeño, salt, and pepper. Stir to combine.

Chill until ready to use. Serve with chips for dipping or scoop onto tacos, burgers, or salads!

Crispy Fish Tacos with Grilled Corn Salsa

sparkling water

flour tortillas,

cod fish fillet,

all-purpose flour

cornstarch

organic egg

cilantro leaves

garlic powder

tsp pink sea salt

tsp black pepper

sour cream, optional

cabbage,

sriracha, optional

corn kernels

avocados,

oz cherry tomatoes, halved

red onion, chopped

Grill corn on the cob for 3 to 5 minutes per side or until slightly charred.

Remove corn kernels from the cob and place in a large bowl along with red onion, tomatoes, 1/2 tsp salt, 1/2 tsp black pepper, cilantro leaves, and avocado. Squeeze lime juice over ingredients and mix.

Cut fish filets into large chunks and season evenly with 1/2 tsp salt, 1/2 tsp black pepper, and 1/2 tsp garlic powder.

Whisk (paid link) flour, cornstarch, egg, and 1/2 tsp garlic powder in a large bowl. Slowly pour in Mountain Valley Sparkling Water. Lightly stir until combined.

Heat skillet at medium-high heat and add an inch of cooking oil. Dip fish in the batter and fry for 3 minutes per side.

Serve with soft tortilla shells and shredded cabbage. Top with corn salsa. 

Confetti Corn

Extra Virgin Olive Oil

red onion (chopped)

green bell pepper (diced)

butter

corn (fresh

salt and pepper

garlic (finely minced (optiona)l)

scallions (sliced)

Heat olive oil in a skillet over medium heat until warm

Add peppers, onions and garlic (if using) to skillet and cook until bell peppers are tender and onions are translucent

Melt butter and then add corn to skillet

Season with salt and pepper (to personal taste) combine contents of skillet together

Turn heat to low and simmer for 10 minutes stirring occasionall

Skip the grill and oven and make this Pan-Grilled Salsa instead! It's packed with sweet corn and summer flavor, but only takes 15 minutes to make.

Pan-Grilled Corn Salsa

medium-to-large ears of sweet corn, kernels removed

red bell pepper, finely diced

jalapeños, finely diced (remove seeds

red onion, finely diced

cilantro, finely chopped

lime

Sear the Corn

Bring a large, nonstick sauté pan to medium-high heat. Once warm, add the corn kernels and bell pepper. Cook for 5-6 minutes, stirring occasionally; a brown/black film will start to form on the bottom of the pan. Deglaze the pan with 3 tablespoons of water, then use a firm spatula to scrape off the brown on the bottom of the pan &#8211; it will stick to the corn. Cook off the additional water, then deglaze the pan with an additional 3-4 tablespoons of water &amp; scrape. Turn off the heat once all of the excess water has evaporated, then stir in the ground cumin.

add the corn and bell pepper mixture to a mixing bowl with the jalapeño, red onion, cilantro, lime juice, and salt.

Serve

warm, or place in the fridge and allow the corn to chill completely before serving. Serve as desired; leftovers will keep in the fridge for up to 5 days.

Just made this fast and easy salsa, and it is heavenly. 
Used Serrano peppers instead of Jalapeño (since is what I had at hand). 
Lovely colors and quite refreshing.

Pork Tenderloin Tacos: We flavor lean pork tenderloin in an easy soy sauce and lime marinade, crisp it up in a cast-iron skillet and then nestle it into charred corn tortillas with an easy corn salsa and zippy lime crema. Healthy, easy and so satisfying. 

Pork Tenderloin Tacos

lb pork tenderloin,

soy sauce

tbsp lime juice, divided

tbsp honey

tsp chili powder

tsp cumin

corn corn

cilantro, chopped

jalapeno

garlic cloves,

red pepper

tsp kosher salt, divided

plain low-fat Greek yogurt

adobo sauce

Don’t prep any of the ingredients until you marinate the pork. 

Using a sharp knife, cut pork tenderloin into ¼-inch slices. Cut slices into 1/8-1/4-inch strips. 

Add soy sauce, 2 tablespoons lime juice, honey, chili powder, garlic powder, and cumin to a large bowl. Whisk to combine. Add sliced pork. Use tongs to toss the pork in the marinade. 

Prep and chop the ingredients. 

Add corn, red pepper, jalapeno, one garlic clove, cilantro, 1 tablespoon lime juice, and ¼ teaspoon salt to a medium bowl. Toss to combine. Season to taste with salt and pepper.

After assembling salsa, give the pork a stir. 

Add Greek yogurt, chipotle in adobo, remaining 2 teaspoons lime juice, remaining garlic clove, and remaining ¼ teaspoon salt to a small bowl. Stir to combine. Season to taste with salt and pepper. 

If the pork hasn’t marinated for at least 15 minutes, let it marinate until you reach 15 minutes. You can also marinate the pork tenderloin up to three days in advance in the refrigerator.

Drain the marinade from the pork and discard. Pat the pork dry with paper towels. This will help to sear the pork versus steam it. 

Heat a large cast iron skillet to medium-high heat. Once the skillet is very hot, add ¾ tablespoon of the oil, about 2 teaspoons to the skillet. Swirl to coat. Add half of the pork tenderloin. Make sure the pork is evenly spread out on the pan. Don’t move it so it can sear properly. Cook for 2-3 minutes, flip and sear on the other side for another 1-2 minutes. Pork tenderloin cooks very quickly. Remove from the pan and repeat with remaining half of the pork.  

While the pork cooks, place corn tortillas in a kitchen towel. Heat for 35 seconds until warm and pliable. You can also char them over a gas stove flame. 

To assemble. Transfer pork to tortilla. Dollop with yogurt. Cover with corn salsa. Squeeze extra lime juice on top if desired.
