Chicken Pasta Salad with Creamy Dressing

salt ((to cook pasta))

chicken (, shredded or finely chopped (Note 1))

/ 5 oz bacon (, chopped)

celery (, finely sliced)

red capsicum / bell pepper (, finely diced)

green onions (, finely sliced)

carrots

shredded cheese (cheddar, tasty, Colby)

avocados ((small/medium),

mayonnaise egg

sour cream (, full fat (low fat ok too))

tbsp cider vinegar

Dijon mustard

tsp sugar

garlic powder

tsp salt

tsp pepper

Cook pasta: Bring a large pot of water to the boil. Add salt, then cook pasta per packet directions. Drain well, let cool.

Dressing: Mix Dressing ingredients in a bowl. Set aside 10 minutes+.

Cook bacon: Place bacon in a cold non-stick skillet (Note X). Turn stove on to medium high, then cook bacon until golden. Drain on paper towels.

Toss! Place cooked pasta in a large bowl along with all the Pasta Salad ingredients, reserving some bacon for garnish. Pour over Dressing, then toss well.

Set aside for 20 minutes. Transfer to serving bowl, sprinkle with remaining bacon. Serve!

Storage: Keeps for 3 - 4 days in the fridge. Best to bring to room temp before serving!

Easy Pasta Salad with Mayo, Lemon and Basil

Cook the pasta in a large pot of salted boiling water according to package instructions, adding the broccoli florets to the pot of boiling water during the final 30 seconds of cooking. Drain and rinse under cold water. Set aside to cool completely.

In a large bowl, combine cooked pasta, broccoli, peas, red bell pepper, cucumber and green onion.

In a separate small bowl, prepare the dressing by whisking together the mayonnaise, lemon juice, basil, garlic, sugar, ½ teaspoon of salt and ¼ teaspoon of pepper.

Pour half of the dressing over the salad and gently toss to coat. Taste and season with additional salt and pepper, if necessary. Store the remaining dressing in an airtight container or jar in the refrigerator.
