This easy turkey chili is a weeknight dinner the whole family will love. 

Slow-Cooker Turkey Chili

This is a great recipe: very easy to follow and it turns out delicious! Can't go wrong!
I always put in a little too much liquid, but it's great, anyway! I serve it over pasta or rice.

Delicious! I added corn and jalapeños, and for the last 30 minutes left it uncovered to thicken up :)

We altered the recipe a bit: 
Eliminated the green pepper, but added (1) zucchini, chopped, (1) yellow squash, chopped, and (1) small bag of spinach, chopped. Upped the tomato paste to a small can (6 oz), and upped the chili powder to 2 tbsp. Upped the meat to 2lbs.
Turns out thick and very colorful.

Great tasting recipe! The ratio of spices is spot on, and using only salt/pepper to cook the ground turkey lets those spices shine through the chili! My only changes were using 2 lbs of ground beef and a full 14.5 can of broth (only because I had extra and didn't want to toss either). I'm thinking of adding corn and maybe some diced jalapeños to give it a little kick next time. :)

Loved it. Since I'm the only one who eats ground turkey,  I halved the recipe and put it in a 4 quart Crockpot  I only used black beans which I happened to have on hand and added a spoonful of chipotle adobo sauce, then after 4 hours, turned it off and added 1/2 cup of frozen corn, letting the residual heat warm it through.

Great recipe, my family loves it.  I added a 16 oz. light beer and some seeded Serrano peppers for a little heat turned out great!

Husband and I really enjoyed it!
I used diced tomatoes (instead of chopped) and chili beans (instead of kidney beans).

tomato sauce

salsa sauce

Tbsp chili powder

tsp cumin

tsp kosher salt

sour cream

shredded cheese

hot sauce

black olives

To a large skillet, add a drizzle of olive oil and heat over MED heat.&nbsp; Add onion and cook 5 minutes, until soft and translucent.&nbsp; Add beef and increase heat to MED HIGH.&nbsp; Brown, breaking into smaller pieces as it cooks, for another 4-5 minutes, or until no longer pink.&nbsp; Add minced garlic and cook another minute.

Drain grease and transfer to slow cooker.&nbsp; Add taco seasoning spices, diced green chiles, tomato paste, tomato sauce and salsa.&nbsp; Stir to combine.

Cover and cook on LOW for 6-8 hours, or HIGH for 3-4 hours.

Assemble tacos to your liking and enjoy!

CROCKPOT DIRECTIONS:

Select saute, then add a drizzle of oil and minced onion.&nbsp; Saute for 2-3 mintues.&nbsp; Add beef and brown, breaking it into smaller pieces using a wooden spoon.&nbsp; Stir in garlic and cook 1 minute.

Stir in taco seasoning spices, diced green chiles and tomato paste.&nbsp; Top with tomato sauce, salsa and 1/2 cup water.&nbsp; Cover and cook on HIGH pressure for approximately 20 minutes.

Let the pressure release naturally for 15 minutes, then quick release any remaining pressure.&nbsp; Assemble tacos to your liking and enjoy!

Authentic “Frijoles De La Olla” Mexican Pinto Beans Recipe - Rich zesty pintos made on the stovetop, in the Instant Pot, or in a Crock Pot.

Frijoles De La Olla (Mexican Pinto Beans Recipe)

pinto beans

½ sweet onion, (cut into large wedges)

garlic, (smashed)

pico de gallo

Water

Stovetop Method: Place the dried beans in a large bowl and fill with water, covering the top of the beans by 2 inches. Let the beans soak overnight.

When ready to cook, place the beans in a large 6-8 quart pot with a heavy lid. Add the onion wedges, garlic, and hambone if using.

Pour in enough water to cover the beans by 3-4 inches. Set the heat on medium.

Cover and bring to a simmer. Then reduce the heat and simmer on medium-low to low for 2-4 hours, until the beans are very soft. *Even after soaking overnight, beans take a varied amount of time, base on how old they are. “New” dried beans will cook faster than beans that have been sitting in the pantry for months/years.

Once the beans are soft, remove the onion, garlic, and hambone. Stir in the pico de gallo. Taste, then salt as needed.

Instant Pot Method: When using an electric pressure cooker, you do not have to soak the beans overnight.

Place the beans in a 6+ quart Instant Pot. Add the onion wedges, garlic, and hambone if using.

Add 5 cups of water. Lock the lid into place and set on Pressure Cook High for 35 minutes.

Perform a natural release. Once the steam button drops, it is safe to open the lid. If the beans are still firm, you can Pressure Cook again for 5-10 minutes. Then perform a Quick Release.

Crock Pot Method: Place the dried beans in a large 6-8 quart slow cooker. Add the onion wedges, garlic, and hambone if using. Pour in 8 cups water. (You do not have to soak the beans for this method.)

Set the crock pot on HIGH for 8-10 hours or on LOW for 15-17 hours. Once the beans are soft, remove the onion, garlic, and hambone. Stir in the pico de gallo. Taste, then salt as needed.

Crockpot Beef Stew

- 2 1/2 lbs boneless chuck roast, trimmed and cut into 1-2 inch pieces

Tbsp vegetable oil

oz dark stout beer (I usually use Guinness)

beef broth

carrots,

parsnips,

baby Yukon gold potatoes, halved or quartered

yellow onion, diced

tsp fresh sage, minced

Tbsp beef base (better than bouillon)

horseradish

Tbsp softened butter

Tbsp all purpose flour

Season beef pieces with 1 1/2 tsp kosher salt and 1 tsp black pepper. &nbsp;Heat vegetable oil in a large skillet over MED-HIGH heat until shimmering, then add beef in a single layer (you may have to do this in batches to avoid overcrowding the pan). &nbsp;Brown on all sides, about 1-2 minutes per side, then turn off heat. &nbsp;Remove beef to slow cooker.

Pour beer and broth into hot pan and stir to loosen any browned bits. &nbsp;Let sit for a few minutes while you add other ingredients.

Add carrots, parsnips, potatoes, onion, garlic, sage, beef base and tomato paste to slow cooker with the browned beef. &nbsp;Pour beer/broth mixture from the skillet into the slow cooker. &nbsp;Cover and cook on LOW for 7 - 7 1/2 hours.

Mix together butter and flour to form a pasty ball. &nbsp;Remove lid, add horseradish and butter/flour mixture, stirring well. &nbsp;Cover and continue cooking another 20-30 minutes, stirring occasionally. &nbsp;Taste, and add additional salt and pepper as needed.

Sprinkle with fresh parsley and serve!
