This Easy Dirty Rice recipe is the perfect side dish! It&#x27;s made with cajun seasoning, ground beef, white rice and a few other ingredients.

Dirty Rice

Add ground beef to a dutch oven or heavy bottomed pan set over medium heat. Crumble with a spatula and cook 4-5 minutes until no pink remains.

Add onion, garlic, green pepper, celery, Cajun seasoning, and salt. Stir until softened, about 5 minutes.

Add rice and beef broth. Bring to a boil, reduce heat and simmer covered about 20 to 23 minutes or until rice is cooked.

Allow to sit for 5 to 10 minutes, then fluff with a fork. Garnish with green onions or parsley before serving.

Easy Cajun Dirty Rice Recipe (One Pot!)

tsp Neutral Oil ((such as canola or vegetable))

Ground Pork Sausage ((or ground beef, chopped chicken livers or gizzards))

Andouille Smoked Sausage (– diced)

Bell

Yellow

Ribs Celery (– small dice (about ¾ cups))

Cloves Garlic (– peeled & minced)

½ tsp Cajun

Cayenne Pepper

Salt & Ground Black Pepper

Cups Uncooked Long-Grain White Rice (about 13 ounces)

Cups Unsalted Broth (– Beef or Chicken Broth)

Bay Leaf (- OPTIONAL)

Optional

Brown pork sausage

Brown pork sausage: In a Dutch oven or high-sided large skillet, heat the oil over medium-high heat. Add the pork sausage and cook, undisturbed for 2 minutes. Use a spatula to flip the pork over and season with salt and pepper. Continue to cook, undisturbed for an additional 2 minutes. Use a wooden spoon to stir and break the pork up into large crumbles. Cook the crumbled of pork 1 more minute undisturbed. Use a large, slotted spoon to remove the sausage to a paper towel-lined plate and set aside. (Note: Pork will continue to cook in next steps)

Brown andouille

Brown the andouille: Add the andouille sausage to the pan. Cook, undisturbed for 2 minutes. Stir and continue to cook, stirring occasionally, until the andouille is well caramelized about 2 additional minutes. Use a large, slotted spoon to remove the andouille sausage to a separate paper towel-lined plate and set aside. (Note: If you have a lot of fat in the pan, drain off or blot all but 1 tablespoon of fat from the pan before proceeding with the next step.)

Add vegetables

Add vegetables + seasonings: Reduce the heat to medium and add the bell peppers, onion and celery. Cook, stirring occasionally, until the vegetables are softened, about 6-8 minutes. Add the garlic, Cajun seasoning and cayenne. Season with ½ teaspoon of salt and ¼ teaspoon of pepper. Cook until fragrant, about 30 seconds to 1 minute.

Add rice and broth

Add the rice + broth: Return the pork sausage to the pan. Add the rice, broth and bay leaf (if using). Stir everything together, using the back of your spoon to gently scrape up any brown bits stuck to the bottom of the pan.

Cover and simmer

Boil, Simmer, Cover and Cook: Bring the mixture to a boil over medium-high heat and then immediately reduce the heat to maintain a simmer. Cover the pan and simmer for 20-22 minutes, or until the rice is cooked and tender.

Steam covered

Let steam off heat then add andouille: Remove the pan from the heat and let sit COVERED for 5 minutes. Remove the cover. Remove and discard bay leaf. Fluff the rice with a fork and stir in the andouille. Taste and adjust for seasoning with salt and pepper.

Serve

Serve: Garnish with green onions and parsley. Serve and enjoy!

Cook

Cook the rice according to the packet instructions, adding a bay leaf and chicken stock cube to the water before cooking. Set the rice aside once cooked

Add the stock pot to 200ml of boiling water and set aside (this isn&#039;t the water that you cook the rice in - this is separate)

Spray

Spray a frying pan with low calorie cooking spray, then cook the mince, onions and bacon until brown

Add the Cajun seasoning and Worcestershire sauce and stir

Add the carrots, mushrooms, peppers, and the made up beef stock. Cook until the peppers start to soften

Add the cooked rice and spring onion and stir until all the rice is coated

Taste and add some more Cajun seasoning if it's not spicy enough

Cajun Dirty Rice - Pinch of Nom

Dirty Rice Recipe

basmati rice

vegetable oil

oz chicken livers (trimmed)

lb bulk pork sausage

onion (finely chopped)

red bell pepper (diced)

tbsp minced garlic

jalapeno chile

worchestershire sauce

tbsp chopped fresh thyme

tsp black pepper

tsp kosher salt

paprika

cayenne pepper

green onions (white and green parts, chopped)

In a large bowl, cover the rice with 2 to 3 inches of cold water.  Stir the rice with your hand and drain.  Repeat five or six times, until the water runs clear.

Transfer the washed rice to a medium heavy bottomed pot.  Add enough fresh cold water to cover the rice by about 1 inch.  Bring to a boil, reduce to a simmer, cover and cook until the rice is tender, about 20 minutes.  Do not overcook.

In a large saute pan, heat the oil over medium high heat until shimmering.  Add the livers and sausage and cook, stirring occasionally and breaking up the sausage with the back of a spoon, until the meat is no longer pink, 7 to 8 minutes.

With a slotted spoon, transfer the livers and sausage to a small bowl.  Add the onion, green and red bell peppers, garlic and jalapeno to the pan, and cook over medium high heat until the vegetables are soft, Stirring occasionally until 10 minutes.

Meanwhile chop the chicken livers into small dice.  Return them to a saute pan, along with the sausage, worcestershire sauce, and the cooked rice.  Stir until the rice is fully incorporated.  Stir in the bay leaves, thyme, black pepper, salt, paprika, cayenne and green onions.  Partially cover the pan, reduce the heat to low and cook until the flavors are well blended, about 15 minutes. S Remove bay leaves, discard and serve immediately.

This Cajun dirty rice dish is made with chopped veggies, cajun spices, and smoked sausage and is loaded with flavor! Serve this rice with chicken, fish, or shrimp to create the ultimate Cajun meal.

Cajun Dirty Rice with Smoked Sausage

chicken stock (divided)

butter (unsalted)

olive oil (extra virgin)

sausage

onion powder

garlic powder

smoked paprika

thyme

oregano

salt and black pepper (to taste)

Cook the rice in 2 cups of chicken stock until tender according to package instructions. Fluff the rice with a fork and set aside.

In a medium heavy-bottomed skillet over medium-high heat, melt butter with the olive oil. Add the smoked sausage to the skillet and cook until the sausage is browned, about 3-5 minutes.

Add the onion, bell pepper, and celery and cook until the veggies begin to soften, about 2-3 minutes. Add the garlic and cook until fragrant, about another minute.

Season the sausage and vegetables with garlic powder, onion powder, smoked paprika, dried thyme, dried oregano, salt, black pepper, and cayenne pepper and stir with a wooden spoon.

Add a little bit of chicken stock to the skillet to deglaze the pan, scraping up any brown bits with the wooden spoon. Add the cooked rice to the skillet and stir to combine the rice with the veggies and sausage. Continue to cook while stirring for another 2 to 3 minutes. Add a little more chicken stock if needed so that the rice isn't dry.

Remove the pan from the heat and transfer the rice to a serving dish. Garnish with fresh chopped parsley if desired. Enjoy!

Seasoned Rice

long grain white rice

butter (divided)

Place rice and 1 tablespoon butter in a saucepan with a lid. Heat over medium high heat until the rice starts to slightly brown.

Add onion and garlic, cook 2-3 minutes or until slightly softened.

Add remaining ingredients (except butter) and stir. Bring to a boil over medium-high heat, cover, and reduce heat to a simmer.

Cook 20 minutes, do not open the lid.

Remove from the heat (without opening the lid) and let rest 5 minutes.

Easy Classic Cajun Dirty Rice with Sausage

bacon grease (can substitute olive oil)

Italian sausage (ground, not the links)

Add the bacon grease or olive oil to a large skillet over medium heat.

When the oil is hot, add the onion, celery, and green pepper. Cook and stir for about five minutes or until the vegetables are soft.

Add the garlic, sausage, and chicken livers. Break up the sausage and add the cumin, salt, pepper, and Cajun seasoning. Cook until the sausage is browned, and no pink remains.

Add the hot rice and parsley to the meat mixture and combine. Garnish with a few sprigs of fresh parsley and serve hot.

This Instant Pot dirty rice is our version of a popular Creole dish with ground beef, bacon, onions, peppers and celery and a tasty mix of Cajun spices. It's a one-pot, family-friendly dish that can be served a with a side salad, coleslaw or steamed greens. We used a 6-quart Instant Pot for this recipe.

Instant Pot Dirty Rice

Turn the Instant Pot and press the Saute function key. Once hot, add the oil, onions, celery, peppers and bacon and cook for 2 minutes, stirring a couple of times.

Add garlic and beef and cook for 2 more minutes, breaking the meat apart with a spatula until its color turned from red/pink to greyish.

Add 1.25 cups of well-rinsed rice, about 2 tablespoons of Cajun spice mix (see notes), a tablespoon of Worcestershire sauce and 350 ml of veggie or chicken stock. Mix through and press Cancel to stop the Saute function.

Pop the lid on top, lock and make sure the top valve is pointing to Sealing. Press Manual/Pressure Cook and set the time to 4 minutes at HIGH pressure. The Instant Pot will take 5-8 minutes to build up the pressure first. Once the timer is finished, allow about 5 minutes for natural pressure release (NPR) but not much longer as the rice will keep cooking.

Use the quick release (point the valve to Venting) to let off the remaining pressure and open the lid. Stir through the rice and serve garnished with chopped scallions and parsley. We topped our rice with some fried shallots as well.

This is one of the tastiest recipes I have ever made in my instant pot!
