Healthy Double Chocolate Mug Cake

kodiak cakes power cakes mix

tsp baking powder

cocoa powder

vanilla

tbsp syrup

water

tsp chocolate chips

Gather all ingredients.

Mix all the dry ingredients together (Kodiak Cakes mix, baking powder, and cocoa powder).

Add the wet ingredients (syrup, vanilla, and water) and combine.

Mix 1/2 of the chocolate chips into the batter and place 1/2 on top of the batter.

Place the mug into the microwave.

Microwave on high for 1 minute.

Let the mug cake cool and enjoy!

Double Chocolate Chip Cookies

all-purpose flour

baking soda

salt

unsalted butter (softened (1 stick plus 2 tablespoons))

brown sugar

sugar

chocolate chips

Whisk together the flour, cocoa, baking soda, and salt.&nbsp;

In a large bowl beat together the butter and sugars until fluffy.

Add the egg and vanilla and continue mixing until combined. Turn off the mixer and scrape down the sides of the bowl.

Slowly mix in the dry ingredients on low speed until incorporated.&nbsp;

Turn off the electric mixer and stir in the chocolate chips. I usually reserve about 1/4 cup of chocolate chips for sprinkling on top.

Cover the bowl with cling film and chill in the refrigerator for at least 3 hours or up to 48.

When ready to bake, preheat the oven to 350F degrees. Line 2 cookie sheets with parchment paper or silicone baking mats. Take the dough out of the fridge for 10-15 minutes to warm up slightly. 

Form dough into balls 3 tablespoons in size and place 3 inches apart on baking sheets. (Or form into balls of 1 - 1.5 tablespoons in size and place 2 inches apart).

Bake cookies for 11-13 minutes until the tops are just set (or 8-10 minutes for smaller cookies). Remove from oven and let cool on the tray for 10 minutes before transferring to a wire rack to continue cooling. While the cookies are fresh from the oven, optionally dot the tops of each cookie with a few extra chocolate chips.

Chewy Double Chocolate Chip Cookies

unsalted butter (melted (2 sticks + 2 Tbsp butter))

brown sugar (packed)

eggs (room temperature)

vanilla extract

all purpose flour

cocoa powder (natural)

chocolate chips (semi-sweet)

First, melt the unsalted butter in a medium-sized mixing bowl.

Once the butter is melted, add in the cocoa powder and stir it until it’s smooth and combined. Pro-Tip: Adding the cocoa powder and butter together first helps re-hydrate the cocoa powder, and doing this will keep your cookies nice and moist!

Then, add in the melted butter and cocoa powder mixture, brown sugar, and white sugar to the bowl of your stand mixer.

Mix the ingredients on medium speed (setting 2 on my Bosch Mixer, setting 4 on a KitchenAid) for 1-2 minutes with the paddle attachment until it is light and fluffy. Scrape the bowl when needed. Pro-Tip: You can also use a hand mixer if you don’t have a stand mixer. You will mix the dough longer than you would if you had a stand mixer, and you will go by the look and consistency of the dough instead of time to know when it’s mixed, light, and fluffy.

Next, add in the room temperature eggs.

Mix again on medium speed (setting 2 on my Bosch Mixer, setting 4 on a KitchenAid) for 1-2 minutes until it’s light and airy.

Scrape the bowl.

While mixing on low, add in the vanilla, salt, baking soda, flour, and chocolate chips.

Next, mix the dough just enough so that it’s combined. Finish by hand to make sure there are no pockets of flour leftover.

Preheat your oven to 350ºF (177ºC) and prepare a sheet pan with parchment paper. 

With a #20 cookie scoop, divide the dough into 2 Tablespoon-sized cookie dough balls. I like to dip the top of the ball into a bowl of chocolate chips to get even more chocolate into the cookies!

Next, place the cookie dough balls onto a sheet pan about 3″ apart.

Let these cookies sit at room temperature for about 30 minutes to give time for the flour to absorb the liquids. This will help reduce the amount of spread on your baked cookies. You can also chill the cookie dough balls in the refrigerator for 30 minutes if you want the cookies to spread even less.

Bake the cookies for about 10 minutes, or until they are no longer shiny in the center and the edges are set.

Allow the cookies to cool for 5 minutes on the baking sheet.

Transfer the cookies to a cooling rack to allow them to cool all the way.

These double chocolate bananas muffins are ridiculously easy to make . . . and even easier to eat. Full of ripe bananas, brown sugar, cocoa powder, and dark chocolate chunks! Socially acceptable for breakfast, but decadent enough for dessert. ;)

Double Chocolate Banana Muffins

unsalted butter (melted)

dark brown sugar (packed)

bananas (about 3 large bananas)

baking powder

cinnamon (optional, but highly recommended

dark chocolate chunks (plus more for topping)

Pre-heat oven to 425 degrees F and line a standard 12 cup non stick muffin tin with paper liners.

In a large bowl, whisk together sugar, butter, egg, and vanilla.

Whisk in mashed bananas.

Add in flour, cocoa powder, baking soda, baking powder, cinnamon, and salt. Use a spatula to mix. Don’t over mix.

Gently stir in dark chocolate chunks.

Scoop evenly into prepared muffin tin. You should get 12 muffins.

Top with a few more chocolate chips.

Bake for 5 minutes at 425 degrees F and then lower heat to 350 degrees F (keep muffins in oven)

Bake an additional 12-14 minutes, or until a toothpick comes out *almost* clean. **Don’t over bake and make sure you’re not sticking a toothpick into a chocolate chip**

Remove from pan and enjoy!

These chocolate marshmallow cookies are a no mixer chocolate cookie filled with chocolate chips. It has a marshmallow stuffed in the middle. When it bakes, it has a gooey marshmallow pool in the middle.

Chocolate Marshmallow Cookies

All-purpose flour

Unsweetened dutch process cocoa powder

tsp Baking soda

tsp Baking powder

Salt

Unsalted butter

Brown sugar (packed light or dark)

White granulated sugar

tsp Pure vanilla extract

Large eggs (room temperature)

Semi-sweet chocolate chips

Marshmallows

In a medium bowl, sift flour, cocoa powder, baking soda, baking powder and salt. Set aside.

In a large bowl, mix the melted butter (make sure the butter is melted and cooled to room temperature before using), brown sugar, sugar, vanilla, and eggs.

Add the dry ingredients and mix using a rubber spatula. Add in the chocolate chips.

Preheat

Preheat oven to 350°F. Line 2 large cookie sheets with parchment paper. Place the cookie dough in the freezer for 15 minutes.

Scoop

Use a large cookie scoop to scoop the cookies. Press your thumb into the cookie dough and place a marshmallow in the hole. Press the dough around the marshmallow tightly but leaving a the top of the marshmallow uncovered. See pictures in the post.

Bake

Place 6 cookie dough balls per cookie sheet. Bake for 13-15 minutes until the edges are set and the marshmallow is melty. Top with extra chocolate chips while warm.

Cool

Transfer the cookies immediately to a cooling rack so the marshmallow doesn&#39;t melt.

Fudgey Double Chocolate Peppermint Brownies

Spray

Spray a 9 inch square pan with baking spray. Set aside.

Melt

Melt butter and chocolate chips in a small saucepan over low heat, stirring constantly.

Remove

Whisk

In a small bowl, whisk together flour and cocoa powder. Set aside.

Combine

In the bowl of an electric mixer, combine eggs, sugar, vanilla, and peppermint oil.

Beat

Stir

Pour

Pour into prepared pan and bake for 30 minutes.

Brownies

In a small saucepan over low heat, combine chocolate chips and cream.

Cook

Cook, stirring constantly, until chocolate is melted and combined with cream.

Allow to cool slightly, about 10 minutes.

Putting It Together

Single-serving Brownie Cake

tsp oil ((10 g))

almond

maple syrup ((10 g))

cocoa powder ((6 g))

tbsp flour ((15 g) gf all purpose if desired)

tsp chocolate chips ((5 g) add more if you like)

Preheat oven to 350F and grease a small ramekin.

In a bowl, mix together oil, milk, syrup, vanilla, cocoa until well blended and smooth. Add flour, baking powder, salt and whisk into something between cookie dough and brownie batter. It should be thick but spreadable, if not add 1/2 tsp additional milk at a time until it is.

Transfer to your ramekin and sprinkle chocolate chips.

Bake 20 min, top with ice cream if you like, and enjoy!

These white chip double chocolate cookies are chewy, fudgy, and ultra rich. These bakery style chocolate cookies are full of chocolate chips and white chocolate chips.

White Chip Double Chocolate Cookies

Unsweetened cocoa powder

tsp Cornstarch

Unsalted butter (room temperature)

chocolate

Large egg (room temperature)

Egg yolk (room temperature)

White chocolate chips (ghirardelli brand)

In a mixing bowl, sift together flour, cocoa powder, cornstarch, baking soda, and salt. Set aside.

In a microwave safe bowl, heat chopped chocolate for 30 seconds. Stir well. Heat for 20 seconds. Stir well. Heat for 15 second intervals until chocolate is melted. Set aside.

Using a mixer, beat the butter, sugar, and brown sugar together for 2 minutes on high. Butter should be smooth and fluffy. Add in vanilla and melted chocolate. Beat on high for 2 minutes.

Then, add in egg and egg yolk. Beat on high for 1 minute.

Slowly add in the dry ingredients. Mix until combined. Add in the white chocolate chips and semi-sweet chocolate chips.  The dough should be thick but wet.

Chill

Cover and chill in the fridge for 30 minutes. Preheat oven to 350°F. Prepare 2 cookie sheets with parchment paper.

Prepare

Use a large cookie scoop (3oz) and scoop the dough directly on the cookie sheet. Separate cookie dough 3 inches apart on cookie sheet. Bake 6 per cookie sheet.

Bake for 13-15 minutes. Since it is chocolate it will be hard to tell when it is done. The edges should be set and slightly firm. If it is too hard, then it is over baked. Let the cookies chill on cookie sheet for 5 minutes before transferring to a cooling rack. Top with extra chocolate chips.

Dark Chocolate Sugar Cookies

flour

cocoa powder ((I used 1/4 cup natural unsweetened and 1/4 cup dark))

cornstarch

unsalted butter (or vegan baking stick, room temperature)

dark brown sugar (, packed)

milk

mini chocolate chips (reserve 1/4 cup for rolling)

In a large bowl, whisk together the 1 1/4 cups gluten free flour, 1/2 cup cocoa powders, 1 1/2 teaspoons baking powder and the 1/2 teaspoon kosher salt. Set aside.

In a small bowl, using a spoon, mix together the 2 heaping tablespoons cornstarch and 3 tablespoons water until thin and watery. It will be thick and tacky at first. 

In a large bowl of an electric mixer fitted with the paddle attachment, beat the 1/2 cup unsalted butter or vegan baking stick and 1 ½ cups of the dark brown sugar until it is soft and creamy. About 2-3 minutes.

Slowly beat the cornstarch water mixture, the 2 tablespoons milk and the 1 teaspoon pure vanilla extract into the creamed butter and sugar. It will look chunky and that&#39;s totally normal.

With the mixer on low speed, slowly beat in the gluten free flour mixture a little at a time until just combined. Use a spatula to scrape down the sides and combine again.

Gently fold in ¾ cup mini chocolate chips using a spatula until combined.

Form the dough into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes. When the dough is halfway done chilling, preheat your oven to 325 degrees Fahrenheit and line a baking sheet with parchment paper. 

After the 30 minutes of chilling, scoop the dough. I use an ice cream scoop or a large cookie scoop. There should be 14 dough balls.

Push the top of each dough ball into a small bowl of the remaining ¼ cup of mini chocolate chips. The drop the dough ball into the remaining ¼ cup granulated sugar and coat completely. It must be in that order or else the mini chocolate chips will not stick to the dough.

Place dough balls about 3-4 inches apart on the parchment lined baking sheet. Bake the cookies on the center rack of the oven at 325 degrees Fahrenheit for 14 minutes. Store extra dough balls in the fridge while the rest are baking if they don&#39;t all fit. I only bake 6 at a time. 

Immediately reshape the cookies when they come out of the oven and let cool on the baking sheet for 5 min before transferring to a cooling rack. If you don&#39;t do this, the cookies will break apart into a giant mess.
