Chicken Bacon Ranch Casserole

¼ pounds boneless skinless chicken breasts

salt

garlic powder (divided)

onion powder (divided)

dill weed (divided)

black pepper (divided)

cayenne pepper (optional)

all-purpose flour

milk (divided)

Greek yogurt

Mozzarella cheese (divided)

cheddar cheese (divided)

Grease

Place a rack in center of oven and preheat oven to 375 degrees F. Lightly grease a deep 9-inch-square baking dish or a 3-quart casserole dish.

Boil

Bring the chicken broth to a boil in a large pot, then add the rice. Return to a boil, add the broccoli to the top of the rice (no need to stir it together), then cover, reduce the heat to low, and let cook 5 minutes. Remove the pot from heat and let sit, covered, for an additional 5 minutes. Most of the cooking liquid should be absorbed and the broccoli should be crisp-tender but still be a little too crunchy to eat.

Cook

Meanwhile, heat a Dutch oven or other large deep pot over medium-low. Add the bacon and let cook until it is crisp and the fat has rendered, about 8 minutes. With a slotted spoon, remove the bacon to a paper towel-lined plate and set aside. Leave the drippings in the pan.

Sauté

Increase the heat to medium high. Add the chicken, 1/2 teaspoon salt, 1/2 teaspoon garlic powder, ½ teaspoon onion powder, ½ teaspoon dill weed, and 1/4 teaspoon black pepper. Sauté until the chicken is cooked through and no longer pink in the center, about 4 to 6 minutes, then remove to a plate. Being careful not to burn yourself, wipe the pot clean with a paper towel.

Reduce the heat to medium. In a small bowl or large measuring cup, whisk together the flour and 1/2 cup milk. Pour the mixture into the pot, then add the remaining 1 1/2 cups milk. Cook, stirring constantly until thickened and creamy, 7 to 10 minutes. Remove from the heat and whisk in the remaining 1/4 teaspoon salt, 1/2 teaspoon garlic powder, ½ teaspoon onion powder, ½ teaspoon dill weed, 1/4 teaspoon black pepper, and cayenne. Stir in the Greek yogurt, ½ cup Mozzarella cheese, and ½ cup cheddar cheese.

Bake

To the pot, add the rice and broccoli mixture, the reserved chicken, and half of the reserved bacon. Stir gently to combine. Spoon the mixture into the prepared dish and top with the remaining 1/4 cup Mozzarella and 1/4 cup cheddar cheese. Bake 15 minutes, then remove from the oven and sprinkle the remaining bacon over the top. Return to the oven and bake 5 to 10 additional minutes, until the casserole is hot and bubbly. Let stand 10 minutes, then serve.

This recipe is amazing! I ditched the Gouda and added blue cheese crumbles on top with the cheddar. Next time I would add more cauliflower. There’s definitely enough sauce to go around for it.

I loved this recipe but I think there is a bit too much cream cheese for me personally. I would use 8 oz. next time. I used cheddar and pepper jack cheese, added a can of garbanzo beans roasted before hand and I added red peppers. Really liked it though and this all fit for me in a 9 x 13 pan. Cook time was the same about 25 minutes, just a bit more prep. I would also add more cauliflower the next time I make this. Thanks so much .

Made this for superbowl and I'm making it again tonight. This recipe is awesome. My wife and I are doing the low carb deal and this is now in the rotation of go to quick dinners. I didn't like this....at all.  I think the chicken needs to be sauteed first
or something.  And the cauliflower kind of clashed with the sauce.
It needed something...different.

easy and delicious.  I add red bell pepper and cooked penne pasta to mine some times.  Big hit with my hubby. I go a bit lighter on the cream cheese and also like to add crushed pork rinds and cheddar cheese to the top before baking.

This is delicious. A little too delicious. Has anyone calculated the calories? I’m showing the entire dish is almost 5000 calories and I just about died. Granted I won’t be eating the entire thing in one sitting but a spoonful of this is going to my entire calories Allotment  for the day!

We loved this recipe!  I added a second head of cauliflower, and threw in all the meat off of my rotisserie chicken.  I found that the sauce was still plentiful, but not too spicy for my little guys.  It ended up making enough for me to feed a family of four, and pack four lunches!  Enjoy!

I can across this recipe when I was looking for a recipe for leftover  rotisserie chicken. The only “change” I made was using my homemade blue cheese dressing and my fermented hot sauce. Other than that made the recipe as written. It was delicious. Leftovers were great too.

This is good but it's really rich almost like a  Buffalo chicken dip. I actually use the cream cheese part of the recipe as a dip with nachos and it's really good. I also find the collie flower a little weird so I swapped it out with pasta or white rice like others have stated.

This is AMAZING! My teens love it! Also it can be used as a dip too. Definitely Super Bowl food!!

Amish Chicken Corn Casserole

Ritz cracker crumbs

Preheat oven to 350°F and grease a 2-qt baking dish with butter or nonstick spray. Set aside.

In a large skillet, melt 4 tablespoons of the butter over medium heat. Whisk in flour and cook 1 minute while you continue whisking.

Add salt, pepper, dried chives, parsley, and garlic powder, then gradually add milk, whisking constantly, until combined.

Bring mixture up to a simmer and continue whisking for 3 minutes. Remove from heat.

Add chicken and corn to the sauce and stir to mix well. Transfer to prepared baking dish.

Melt remaining tablespoon butter and mix together with cracker crumbs. Sprinkle over casserole.

Bake until bubbly and golden brown, about 30 minutes.

Let cool 5 minutes before serving. Enjoy!

Easy Chicken Casserole

Chicken thighs 8

Olive oil 1 tbsp

Onion 1

Smoked Bacon 4

Mushrooms 5½ oz

Carrots 3

Plain flour ¾ oz

thyme 1 tbsp

Chicken stock 18 fl oz

Leek 1

Salt

Black pepper

Heat oven  

Season chicken thighs

Generously season chicken thighs all over with salt and lots of black pepper.


Fry chicken 

Heat 1 tablespoon of oil in a large non-stick frying pan over a medium heat. Add the chicken thighs and fry the chicken for 7–8 minutes, skin-side down. Once the skin is browned, turn the thighs and cook on the other side for 3 more minutes. Transfer the cooked thighs to a plate.


Saute onion, bacon and mushroom

Return the pan to the heat. Add 1 sliced onion, 4 bacon slices and 5½ ounces of sliced mushrooms. Saute stirring regularly over medium-high heat for 4–5 minutes, until lightly browned.


Transfer to casserole dish

Transfer the onion, bacon and mushroom to a medium casserole with a lid. Add carrots and flour to the casserole and toss together well.


Assemble casserole

Sprinkle the contents of the casserole with thyme. Pour in 18 fluid ounces of stock, a little at a time. Stir well between each addition. Add the cooked chicken thighs to the dish. Bring the contents to a gentle simmer and cover the pan with a lid.


Place the casserole in the oven and cook for 45 minutes. Remove and stir in the leeks. Cook for a further 15 minutes until the chicken and leeks are tender and the sauce has thickened.

Preheat oven to 350 F.

Grease a 9x13 baking dish with non-stick spray.

To a large pot of boiling water add the noodles and cook according to the package instructions. Strain and set aside.

To a large bowl, add in both cans of soup, sour cream, milk, 1/3 cup of the cheese, onion, mixed vegetables, and seasonings and stir well. Stir in the cooked egg noodles.

Pour into the baking dish and sprinkle with the remaining cheese. Bake for 28-30 minutes or until cheese is melted and bubbly.
