A mushroom rice recipe is perfect as a side dish or as a main meal! Keep it vegetarian or add ground pork or beef!

Spicy Mushroom Rice Recipe

white rice

butter

shallot, sliced

jalapeno, diced

marsala wine

soy sauce

salt

1/4teaspoon fresh ground black pepper

Start by melting the butter in a large skillet over medium-high heat.

Add in the sliced mushrooms and let brown, stirring, for 10 minutes.

Next add the shallot, jalapeño, salt and pepper and let cook for another minute or two.

Deglaze the skillet with the marsala wine and let reduce for 2 minutes.

Add the soy sauce and stir, then add the cooked rice.

Stir together and then season with more salt and pepper to taste if needed.

Simple and tasted amazing! Decided to cook for the wife for a change and she couldn't stop complimenting me. Thank you! =)

Don't wash mushrooms. They absorb water which makes them harder to brown. Put them in a dish towel or bag and gently shake the dirt off. Great recipe. Looks delicious.

I've mad this recipe a ciuple of times. The first one exactly like the recipe states. The second I added an item to add a slight crunch to give it some more texture. They were both excellant! I just wish I could remember the crunchy ingredient. LOL!

I love this recipe, especially the mushrooms. My husband loves sautéed mushrooms on his steak so this will be my go to recipes from now on. My only criticism would be that I found it to be a little salty, but that’s a very personal preference.  Reheats nicely.

Being from Louisiana, this is basically rice with soy sauce. Not impChelebaileyley1ileyressed.  Without the seasoning I added, it has to bland. But hey, to each her own....we like food with kick. This ain't it.

Just made this side dish for dinner tonight, and it is delicious! I had to leave the kitchen to stop from tasting and nibbling. It’s not too spicy, but leaves a little kick behind with every bite. Thank you for sharing; this one is a keeper!

I stumbled on this recipe looking for a side dish.  I followed the recipe  but used chicken broth as I didn’t have marsala wine.  It was sooooo very good!   It tasted phenomenal the next day.
I just recently  made it again and added bacon and let me tell you, the flavors of everything just popped.  
This is the most simplest side dish recipe I’ve made that can be tweaked but tastes wonderful any which way you add to it.
I always double it!

Excellent recipe! I didn't have time for slow cooker so I used oven. Added a little butter on top. Cooked at 350 for 1.5 hours. Opened foil and added cheese on top. Left foil open and put back in oven for 5 minutes to melt cheese. Thank you for sharing 😊

followed the recipe as is; however, I used The Little Potato Company Dynamic Duo Creamer Potatoes, 1.5 lbs and then ended up with only one layer. now, I did mix in the salt, pepper and some oil with my hands rather than layering onto the potatoes, then added cheese and the other toppings.

I kept in the slow cooker for around 4.5 hrs on high and then turned down to warm until I was ready to eat and the potatoes were fully cooked through.

Was very nice. I cooked it for 5 hours on low but will shorten the cooking time in future. It was a little overdone.

Great recipe but for my crock the cook time was way off. Cooked on high for 5 hours and everything ended up burned.

Yummy recipe!! I followed recipe as is and cooked on high for 2 hours and on low for 30 minutes and potatoes were fully cooked.

For the potatoes it says "halved AND quartered". First, do i half the quarters or should i quarter the halves? Second, do you think if i keep asking questions like this, i can get my wife to snap and make it for me?

If I were ever to do this recipe again I would bake in oven at 350. Or not line slow cooker with foil.

I made it for a shower and planned it to be done about a half hour before I needed it. It was done in less than 2 hours. I had to set it on warm for the rest of the time. The cheese was burnt to the sides. It was overcooked and didn't look the best, but the flavor was good. With cheese and bacon how can you go wrong. I would try it on low for 4 hours next time.

I make this a lot! I also put about 2 cups of ham at bottom of crock pot. Or a couple cups of bacon stores into the potatoes is really good. I use which ever potatoes I have on hand. Lots of cheese right before i serve it.  It's a never fail dish!  And a great one to freeze leftovers and have it in a meal pinch!

Hosted Father's Day dinner and was nervous to try a new recipe for such an important family first. These were ah-mazing! Dill Pickle Pasta Salad

oz rotini pasta

celery (chopped)

onion

dill pickles (chopped, 6-8 spears)

mayonnaise (4.6 oz)

sour cream (2 oz)

dill pickle juice

apple cider vinegar

mustard

coriander

dill (minced, + more for garnish)

Cook Pasta:  Add a large pot of water to a stovetop and heat on high to bring to a boil. Cook pasta for 9 minutes, or whatever the time listed for that particular pasta is. For fresh pasta, it is only 2 minutes.

Make Dressing: Add mayo, sour cream, dill, mustard, coriander, salt, vinegar, and dill pickle juice to a small bowl and mix well.

Assemble Salad: Once the pasta is done, add it to a large bowl with chopped celery, onion, and dill pickles. Add dressing and then mix well.   Finish with more fresh dill if desired, and enjoy!

Greek Zucchini Salad

zucchini

red onion (sliced thinly)

oz cherry tomatoes (cut in half)

oz feta cheese (crumbed)

kalamata olives

parsley

kosher salt (to sweat zucchini)

oregano

lemon juice

Sweat Zucchini: Ribbon zucchini with either a mandoline set to 1/16 of an inch or with a Y-peeler. LIne in a colander and sprinkle with a little salt (1/2 tsp), and gently mix. Let sweat over the sink or over a bowl to release excess moisture for at least 30 minutes. Once done, pat dry with paper towels and add to a bowl.

Prep Vinaigrette: Meanwhile, add all of the vinaigrette ingredients to a Pyrek with a pour spout and whisk until well combined and emulsified.

Assemble Salad: Add all salad ingredients to a large bowl and mix well. Dress with vinaigrette and then mix again.  Finish with fresh parsley.

Serve and Enjoy!

A vibrant summer salad perfect for sharing at your backyard BBQ.  The dressing adds a zesty and slightly sweet flavor that compliments the fresh ingredients beautifully.

Cowboy Caviar

bell peppers (assorted colors)

jalapeno peppers

avocado

red onion (1 small or 1/2 large)

oz container crumbled feta

oz bag of frozen elote

black beans

lime juice

honey

pack taco seasoning (or ¼ cup)

Chips (optional)

Wash produce

Remove seeds from peppers

Dice peppers and onion

Cut avocado into chunks

Wash and rinse black beans

Into a bowl, combine diced veggies, avocado, black beans, frozen corn (it will defrost quickly), and feta
