This slow cooker french dip is perfect for a crowd.

French Dip

chuck roast (or rump roast)

salt and pepper

beef broth (low sodium)

onion soup (low sodium)

onion (sliced)

beer

garlic (minced)

rosemary (optional)

Worcestershire sauce

french rolls (or 2 baguettes cut into 6" rolls)

butter

Season roast with salt &amp; pepper. Brown in a large pan over medium high heat.

Place remaining ingredients (except rolls and butter) in a slow cooker. Cook on low 8 hours or on high 4 hours or until beef is tender.

Once roast is tender, remove from the juices and let rest 15 minutes. Shred or slice beef.

Butter rolls and heat under a broiler until lightly toasted. Top rolls with beef and serve with jus from the slow cooker for dipping.

Everyone loves a lusciously tender, deliciously messy French Dip Sandwich!

Chuck roast is slow-cooked in beef broth and onions until perfectly melt in your mouth tender. It’s set on a crusty roll and dipped in the juices for the perfect sandwich!

Slow Cooker French Dip Grilled Cheese Sandwiches

low-sodium beef broth

soy sauce

onion

garlic powder

1.5 teaspoon salt, plus more as needed

black pepper,

oregano

thyme

bay leaf

red pepper flakes

beef

butter,

bread

provolone, cheddar, or pepper Jack cheese

In a small bowl, whisk together the broth, soy sauce, minced onion, garlic powder, salt, black pepper, oregano, thyme, bay leaf, and red pepper flakes. (Freezing instructions begin here.)

Place the roast in the cooker and season lightly with salt and black pepper on all sides. Pour the sauce over the top.

Cover and cook on Low for 8 to 10 hours or on High for 5 to 6 hours, until the meat easily shreds. Transfer the roast to a cutting board and shred with two forks. Return the meat to the cooker and stir it into the sauce.

Spread a thin layer of butter over one side of each slice of bread. Place a slice of cheese on the unbuttered side of half the slices of bread. Using a slotted spoon, add a layer of the shredded meat (be sure to drain the liquid first). Top with another slice of cheese and a second slice of bread, buttered-side up.

Heat a large skillet or griddle over medium heat. Cook the sandwiches for a few minutes on each side, until the bread is golden brown and the cheese has melted.

Serve the sandwiches warm, with the warmed juices from the cooker in small bowls alongside for dipping.

Delicious!  I’ve made them quite a few times now and I prefer to bake the rolls in a cupcake pan with cooking spray. In the larger pan some of inside rolls were doughy. The spirals stay compact, you can eat them with your hands. I’ve also used pillsbury pizza dough rolled out thinly instead of the crescent dough.

I made this with grùyeur cheese instead of provolone and they were excellent.   Huge hit.

I made this today for friends and they loved it!  The 2 cans of crescents definitely fill up the 9 x 13 pan.  We’re thinking of trying some good hot horseradish in the au jus instead of garlic next time.  Thanks for a keeper!

French Dip sandwiches made with tender (slow cooked) roast beef topped with melted provolone cheese on a toasted hoagie and served with au jus sauce. 

French Dip Sandwiches

chuck roast

salt and black pepper

oregano leaves

olive oil

Onion Soup Mix ((dry), or homemade)

garlic (, minced)

beef broth

Coke ((not diet))

Tablespoons low-sodium soy sauce

cheese

rolls

Season all sides of the chuck roast with salt and pepper, oregano, and thyme.

Add olive oil to a large non-stick skillet over medium high heat. Add meat to the pan and sear on high heat for 30 seconds or so on all sides, just until lightly browned.

Place meat in the slow cooker and sprinkle with French onion soup mix and garlic. Pour broth, coke, soy sauce and Worcestershire sauce on top.

Cook on LOW for 4 hours and then remove meat to a cutting board. Thinly slice the meat and then return it to the slow cooker and continue to cook on LOW for one more hour.

When ready to serve, preheat oven to High broil. Slice rolls in half and lightly butter the top side. Add a few slices of meat to the bottom halves and top with two slices of cheese.

Broil for a few minutes, just until the cheese its melted and bread is golden.  Ladle the au jus sauce from the slow cooker into small bowls for dipping. Enjoy.

Take out the meat, slice or shred it (it will be falling apart). Strain the au jus so there are no clumps of meat or fat (I just use a mesh strainer). Serve french dip on french bread with cheddar cheese and side of au jus. Enjoy!

Add broth, roast, onion soup mix, and au jus seasoning to your Instant Pot. Cook on manual HIGH pressure for 100 minutes. Allow for a 30 minute NPR. Remove from the pot and shred. I like to return the meat to the juice, but that is just a personal preference.&nbsp;

To make the sandwiches, you will first want spread butter and sprinkle garlic onto the rolls. Place sliced cheese on the top roll and broil until golden brown.&nbsp;

Once the rolls are toasted, add the shredded meat to the roll to create your sandwich. Use a ladle to put some of the juice from the Instant Pot into small individual ramekins.&nbsp;

Dunk the sandwich and soak up some juice before taking each bite. Repeat and enjoy!

(4 lb) beef bottom round roast

Cattleman's Grill California Tri-tip Seasoning

Dijon Classique Mustard

Preheat your Yoder Smokers YS640s Pellet Grill to 400ºF set up for indirect grilling. Place a Lodge Cast Iron Fish Pan on the grill to preheat.

Place the Cattleman’s Grill California Tri-tip Seasoning, Kozlik’s Dijon Classique Mustard and garlic cloves in a small food processor and blitz until the garlic is broken up. Add a tablespoon of Saica Extra Virgin Olive Oil, as needed, to help break down the mixture.

Score the surface of the roast about 1/4” deep in a crosshatch pattern on the top and bottom of the roast. Rub the seasoning paste into the roast, filling the scores with the seasoning. Let rest in the refrigerator while you prepare the remaining ingredients.

When you have all ingredients assembled, take everything out to the grill. Pour a few tablespoons of Saica Extra Virgin Olive Oil in the pan. Sear the roast on all sides until browned, then remove from the pan.

Add the onion, carrot, celery, thyme and bay leaves to the pan and stir to mix, scraping up the fond from the bottom of the pan with a wooden spoon. Place the beef roast on top of the bed of veggies. Add the beef stock and John Henry’s Cuz’n Buddy’s Marinade.

Turn the heat down to 250ºF and smoke until the internal temperature reaches 125ºF, about 2 hours 45 minutes.

Remove the roast from the pan. Cover with foil and rest at least 20 minutes. Slice the beef very thin.

Strain the liquid from the pan. Discard the solids. Transfer the jus to a pan to keep warm.

Slice your French rolls horizontally. Dip each half, cut side down, in the warm jus. Dip a portion of the beef in the warm jus and place on the bottom bun. Place the provolone on the beef. Spread your Kozlik’s Dijon Classique Mustard on the top bun and place over the cheese.

Delicious, Tender Beef Cooked in Your Pressure Cooker and Turned Into the BEST French Dip Sandwiches!

Instant Pot French Dip

chuck beef roast

tsp salt

tsp pepper

1.25 oz pkg dry au jus mix

large rolls

Tbsp parsley (optional)

Let roast rest at room temperature for at least 15 minutes before searing.

Turn Instant Pot to Saute. When it reads HOT, add olive oil to pressure cooker.

Season roast with salt, pepper and onion powder. Sear roast on all sides in pressure cooker. Remove from Instant Pot and set aside.

Pour beer into pot and deglaze, essentially scrap all the stuck on food off the bottom of the pot. Place roast back in pot and sprinkle the Au jus packet over the roast.

Close lid and make sure pressure release valve is set to sealing.&nbsp;Turn pressure cooker to Meat/Stew function and set time to 100 (1 hr 40 minutes) minutes.&nbsp;

After the 100 minute cooking time is complete let pressure cooker naturally release for 25 minutes, then turn valve to venting to release any excess pressure.&nbsp;

Remove lid and transfer meat to serving plate, shred meat.&nbsp;

Prepare Roast

Set oven to broil and place sandwich rolls on a baking sheet.&nbsp;

In a small bowl combine butter and garlic powder. Brush over rolls and broil under low heat for 3-4 minutes, just until golden brown.&nbsp;

Pile meat onto rolls and top with cheese. Return to broiler and heat just until cheese has started to melt.

Top sandwiches with freshly chopped parsley.

Strain liquid left in pressure cooker with a fine mesh strainer. Serve strained Au jus with sandwiches for dipping.&nbsp;

Prepare Buns

These french dip sandwiches are made with a chuck roast that is so unbelievably juicy and tender.  It&#039;s covered in melted provolone and served on a buttered and toasted french bread. The juices from the pot are served in a bowl for dipping. These french dip sandwiches are spectacular!

Season Roast

Season Roast: Start by seasoning the chuck roast with the salt, pepper and garlic powder. Make sure to rub in the spices and evenly coat the roast.

Sear Roast

Sear Roast: Turn on &#039;Sauté&#039; and adjust the heat level to &#039;More&#039;. Allow the pot to heat up until the display reads &#039;Hot&#039; and then add the vegetable oil and allow it to heat up. Next, place the chuck roast in the pot and sear undisturbed on one side for at least 5 minutes or until it&#039;s nicely browned.  Then, turn the roast over and brown on the other side. Once the roast has browned nicely on all sides, remove it from the Instant Pot and set aside. Leave the browned bits in the bottom of the pot.

Sauté Onion

Sauté Onion: Add the sliced onion to the Instant Pot and sauté, deglazing the bottom of the pot and tossing the onion in the browned bits as they cook. Continue to sauté the onions until they are a golden brown and starting to caramelize. About 10 to 12 minutes.

Add Red Wine

Add Red Wine: Add the red wine to the onions and cook, continuing to deglaze the bottom of the pot, until the wine is reduced by half. About 2 to 3 minutes.

Add Soy Sauce, Stock &amp; Roast

Add Soy Sauce, Stock &amp; Roast: Add the soy sauce and beef stock to the pot, place the chuck roast back into the pot and then add the bay leaf. Turn off the Sauté function.

100-Minute Cook Time

100-Minute Cook Time: Close the Instant Pot, set the pressure release valve to &#039;Sealing&#039; and set the pot to cook on &#039;Manual&#039; or &#039;Pressure Cook&#039;, &#039;High Pressure&#039; for 100 minutes.

25-Minute NPR

25-Minute NPR: Once the 100-minute cook time has completed, allow for a 25-minute Natural Pressure Release. When the 25-minute NPR has finished, release the remaining pressure and then open the pot.

Serve Roast

Serve Roast: The chuck roast is ready to serve. It will fall apart as you try to remove it from the pot. I usually serve it straight from the pot, pulling pieces of meat off the roast using my metal tongs. I&#039;ll then scoop out some of the juice (au jus) with a ladle and serve it in a small ramekin for dipping.

Toast Bread: Cut each loaf of french bread into 2 to 4 sections (depending on length), butter each side and toast on a skillet.

I am a beginner cook, this recipe is easy and delicious. New favorite dinner!

This recipe is wonderful!  When we are in the mood for a French dip but don't have any leftover roast beef, I buy hoagie rolls, Boar's Head London broil (sliced medium), Boar's Head Provolone and Johnny's French dip Au Jus sauce from Publix.  Yummy!!!

I used the seasonings on thinly sliced bottom rounds and it was amazing. I used pre-made au ju mix (kids limit my cooking time) but it was amazing just the same! Husband loved it as well!

First french Dip I have ever made, and the best french dip I have ever had.. Only thing is we had a lot of leftover ribeye but I am not complaining because it was delicious

I used banquettes (spellings?) as I hate soggy sandwiches and I find Hoagies tend to get to sloppy.  I also toast the bum centers for above same reason.  Dipping these sandwiches was a joy, then I ran out of Jou....how do you get enough?
