Butter chicken is a great, ever-evolving, cross-continental dish found in Delhi, London, New York, Perth and most points in between. In its purest form, it is yogurt-and-spice-marinated chicken dressed in a velvety red bath comprising butter, onions, ginger and tomatoes scented with garam masala, cumin and turmeric, with a cinnamon tang. This version was adapted from Amandeep, a young kitchen hand at the restaurant Attica, in Melbourne, Australia, who used to make it for staff meal. It is wildly luxurious. Serve with basmati rice and mango chutney, with papadums or naan if you can find them, with extra rice if you cannot.

Butter Chicken

full-fat Greek yogurt

lemon juice

turmeric

cumin

chicken thighs,

unsalted butter

neutral oil, like vegetable or canola oil

onions,

garlic,

ginger,

cumin seeds

cinnamon

tomatoes,

red chiles,

salt

chicken stock, low-sodium

cream

tomato paste

almonds, almonds

cilantro leaves, stems removed.

Whisk together the yogurt, lemon juice, turmeric, garam masala and cumin in a large bowl. Put the chicken in, and coat with the marinade. Cover, and 
refrigerate (for up to a day).

In a large pan over medium heat, melt the butter in the oil until it starts to 
foam. Add the onions, and cook, stirring frequently, until translucent. Add the garlic, ginger and cumin seeds, and cook until the onions start to brown.

Add the cinnamon stick, tomatoes, chiles and salt, and cook until the chiles 
are soft, about 10 minutes.

Add the chicken and marinade to the pan, and cook for 5 minutes, then add the chicken stock. Bring the mixture to a boil, then lower the heat and simmer, uncovered, for approximately 30 minutes.

Stir in the cream and tomato paste, and simmer until the chicken is cooked 
through, approximately 10 to 15 minutes.

Add the almonds, cook for an additional 5 minutes and remove from the 
heat. Garnish with the cilantro leaves.

In many ways, the electric pressure cooker’s moist environment was <a href="https://www.nytimes.com/2018/10/05/dining/instant-pot-indian.html">meant for Indian food</a>: It cooks dried beans quickly, sometimes without even a soak, and is conducive to saucier dishes like this dal. Adapted from “Madhur Jaffrey’s Instantly Indian Cookbook” (Knopf, 2019), this recipe is a relatively fast way to a rich, satisfying dish. You can make your own garam masala (see Tip), or simply use store-bought. Don’t skip the tarka: Thinly sliced onions are cooked in ghee until deep in color and then tossed with paprika and chile powder, adding a bright flavor that cuts through the rich dal. Serve it with Indian flatbreads, like naan, roti or parathas, though Ms. Jaffrey also recommends whole-wheat pita.

Madhur Jaffrey’s Pressure Cooker Dal (Dal Makkhani)

urad

red kidney beans (rajma)

(2-inch) piece fresh ginger, peeled and grated (about 4 teaspoons)

garlic clove, crushed

chile powder,

Kosher salt

heavy cream

garam masala (see Tip)

unsalted butter,

peanut oil

Prepare the beans: Wash urad and beans, and soak them overnight at room temperature, in water that covers them generously. Drain them.

Put the beans into an electric pressure cooker. Add tomatoes, ginger, garlic, chile powder, 1 teaspoon salt and 4 cups water. Close and seal the lid, then set to cook on high pressure for 30 minutes, before letting the pressure release naturally. (If pressure still hasn’t released naturally after 15 minutes, quick-release the pressure.)

As pressure releases, prepare the tarka: Put the oil or ghee in a small frying pan over medium heat. When hot, arrange the onions in a single layer. Stir and fry them, turning now and then, until they turn reddish gold and crisp, 5 to 7 minutes. Sprinkle with paprika and chile powder, and remove from heat.

Once the pressure has released, hit cancel to reset the pressure cooker. Open the lid carefully, venting the steam away from you. Stir the dal. Using a potato masher, crush the dal as much as you can. Taste, adding salt as needed.

Select the sauté setting, and set to normal. Add the cream, garam masala and 1 tablespoon butter, and stir until dal reaches desired consistency. Transfer dal to a serving dish and add another dollop of butter on top. Top with tarka.

Put all ingredients into a clean coffee grinder and grind until it's a coarse-fine powder.

Shake it about as its being ground so all the seeds and bits get under the blades.

When you're finished, unplug the grinder, and turn it upside down.

You want all the spice to collect into the lid so you can easily scoop it out without cutting yourself

While this curry from Meera Sodha’s cookbook “Made in India” is rooted in tradition and complexly flavored, it’s also approachable enough for a weeknight. She transforms cauliflower from a humble vegetable to a rich centerpiece with the addition of cashews, coconut, fresh ginger and a flurry of spices you’re likely to have in your pantry. Serve with rice for an exceptionally good vegan supper.

Cauliflower, Cashew, Pea and Coconut Curry

garlic cloves, chopped

green chile, roughly chopped (seeded if you prefer less heat)

canola oil

cauliflower (about 1 1/4 pounds), broken into bite-size florets

coconut milk

unsalted cashews (about 3/4 cup)

peas

cilantro, leaves chopped,

basmati rice,

Place the ginger, garlic and green chile in a mortar and pestle with a pinch of salt. Mash until a paste forms and set aside. Alternately, finely chop the ginger, garlic and green chile together, sprinkle with a pinch of salt, then mash into a coarse paste using the flat portion of your chef’s knife.

In a large skillet with a lid, heat 3 tablespoons oil over medium. Cook the onions until golden, about 10 minutes. Add the ginger paste and cook, stirring, until fragrant, 3 to 4 minutes.

Stir in the tomato paste, coriander, cumin, chile powder and 1 1/4 teaspoons salt. Stir in the cauliflower and coconut milk and bring to a simmer. Reduce the heat to low, cover and cook until the cauliflower is tender, 10 to 12 minutes.

Meanwhile, heat the remaining 1 tablespoon oil in a small skillet over medium. Fry the cashews, stirring occasionally, 2 minutes. Transfer to a plate to cool.

Add the peas and garam masala to the cauliflower mixture and cook, stirring, 5 minutes. Season to taste with salt.

Top the curry with the cashews, cilantro and a squeeze of lemon just before serving. Serve with a big steaming bowl of basmati rice.

Katsu curry is super-delicious and is one of Japan’s most popular dishes. Its heart is Indian spices, which were brought through the spice trade to Britain, where we manufactured our first curry powder; then, back again through trade, they went to Japan, along with the French technique of thickening sauces with a roux (fat and flour) – and the katsu curry was born. Katsu was traditionally made with pork, but I have to say, chicken is my favourite.

Chungdi Malai (Coconut Shrimp Curry)

“Chungdi malai is one of the most coveted dishes of Puri (a city in eastern India),” chef Maneet Chauhan writes in her new cookbook Chaat. “It showcases the elegant flavors that are the trademark of the regional Oriya cuisine. Coconut milk and shrimp are natural dancing partners, rounded out with the earthy note of ghee laced with a tapestry of spices. The shrimp should be marinated for about 1 hour to infuse them with flavor, but otherwise this dish comes together quickly, making it an ideal family meal on a weekday that calls for something special.
It was in Puri where I tried my first shrimp, which my father had bought from one of the train vendors. They were covered in a fiery red chile sauce that I didn’t realize also contained large chunks of pineapple, which when covered in sauce closely resembled the shape and size of the shrimp. I took a bite of what I thought was shrimp but was actually pineapple and exclaimed to my dad, ‘Shrimp tastes just like pineapple!’ The incident still makes him laugh, and whenever he visits one of my restaurants in Nashville, I inevitably hear him tell this story at least once to a tableful of customers. Pineapple is not a traditional ingredient in chungdi malai, but sometimes I add it, especially when preparing it for my father, because it always gets a laugh out of him. If you’d like to include pineapple, add 1 cup coarsely chopped fresh or canned pineapple when you add the coconut milk.”

Toss shrimp, bay leaves, cinnamon, cloves, turmeric, garam masala, and cardamom in a large bowl until shrimp are well coated; season with salt. Cover bowl with a damp cloth and chill 1 hour. Remove and discard bay leaves, cinnamon, and cloves.

Heat oil in a large high-sided skillet over medium-high. Add onion, ginger, cumin, red pepper powder, and sugar and cook, stirring, until onion is translucent, about 5 minutes. Add coconut milk and yogurt and whisk until smooth, then add shrimp and ghee and simmer, turning shrimp halfway through, until shrimp are cooked through, 7–8 minutes. Taste and season with salt.

Top with cilantro and serve with rice and lime wedges.

*Most mustard oils are not FDA-approved as edible in the United States due to their high erucic acid content. If you are concerned, look for Yandilla, an FDA-approved brand, online, or use olive oil instead.

My kinda butter chicken

2–3 fresh mixed-colour chillies

350 g ripe mixed-colour cherry tomatoes

natural yoghurt

x 150 g free-range skinless chicken breasts

cashew butter

This basic spice mixture can be used to flavor a variety of curries, braises, and other Indian dishes.

Garam Masala Recipe

green cardamom pods, green husks removed and discarded

(20 grams) whole coriander seed

(10 grams) whole cumin seed

(12 grams) whole black peppercorns

(4 grams) whole cloves

(4 grams) fennel seed

(3-inch) stick of cinnamon (6 grams)

star anise pod (1 grams)

(2 grams) ground nutmeg or mace

Place cardamom, coriander, cumin, peppercorns, cloves, fennel, cinnamon, and anise in a medium skillet set over medium heat. Cook, tossing frequently, until aromatic and toasted-smelling, about 2 minutes. Transfer to a spice grinder or mortar and pestle. Add ground nutmeg. Grind into a fine powder. Garam masala can be stored in an airtight, light-free container for up to 6 months.

Not every version of butter chicken uses butter. Coconut milk gives this slow-cooker chicken its creamy richness. This is a fast recipe for the cook: Just prep it earlier in the day, even during your morning routine, getting your onion and spices going on the stove while simultaneously making lunches for grumpy children, folding dish towels, feeding the dogs and wondering once again why no one else has done any of the above. If you're preparing pork or beef in the slow cooker, you'll want to brown the meat first, but that's not necessary with boneless cuts of chicken. The meat will be cooked within 4 1/2 or 5 hours, but if you need to let it sit a little longer — up to 7 hours total, on low heat — it will still be delicious, though the chicken may be very soft and shred a tad.

Slow-Cooker Butter Chicken

Naan,

In medium skillet, heat oil over medium-high heat. Add onions to skillet, and cook until softened, about 3 minutes. Reduce heat to medium, add garlic and ginger, and cook another 2 minutes. Add garam masala, tomato paste and salt; cook and stir 2 minutes.

Place chicken pieces in a slow cooker, then add tomato paste mixture, lime zest and juice, coconut milk and chicken stock. Stir everything together, cover and cook on low heat setting for 4 1/2 to 5 hours, until the chicken is cooked through. (You may let it cook up to 7 hours if necessary, but the chicken may be very soft and shred.) Garnish with cilantro and serve with basmati or jasmine rice, and naan if you have some.

Do you have 30 minutes? That means you have time to make this speedy chicken tikka masala. The creamy dish is better than take-out and it's dairy free.

Speedy Chicken Tikka Masala (Dairy Free)

coconut oil margarine

onion (about 1/2 large)

yellow bell pepper, chopped

cayenne pepper

grape tomatoes

chicken

sea salt

coconut sugar

In a large skillet over medium heat, melt oil or margarine, and tilt the pan to coat the bottom evenly. Add ginger, onion, garlic and bell pepper. Cook until vegetables are softened, about 5-7 minutes, stirring occasionally.

Meanwhile, in a small bowl, stir together cayenne, cumin, garam masala, coriander, and turmeric.

Once the onions have begun to caramelize and turn golden, add the spice mixture, letting it hit the pan directly and toast. Stir to coat the onion in the spices. Cook for 1-2 minutes, until fragrant. Add the tomatoes and toss to coat. Cook for 3-4 minutes, until the tomatoes begin to break down.

Add the coconut milk, cooked chicken, salt, and sugar. Stir to combine. Continue cooking for about 5 more minutes, to let the flavors meld and the liquids reduce down slightly. Adjust seasoning to taste. Serve immediately.

So tasty! I developed lactose-intolerance later in life and love to find yummy recipes like these!

Made this last night and it was SO GOOD! Putting this in our regular rotation. We omitted the cayenne bc I can’t do heat, but it was still amazing without! We served it over basmati rice. 👌🏼

Spicy Cauliflower Sabzi with Cashews

This would make an excellent and filling vegetarian main course (add a dollop of yogurt and some cooked rice, if you like). It would also be great alongside pan-roasted pork chops, hanger steak, or a firm-fleshed fish such as cod. If you're spice-averse, just leave the chiles out!

Preheat oven to 350°. Toast cashews on a rimmed baking sheet, tossing once, until golden brown and fragrant, 7–10 minutes; let cool and coarsely chop.

Meanwhile, finely chop fennel bulb and thinly slice stalks. Heat oil in a large pot over medium-high. Add mustard seeds and cook until seeds begin to pop, about 1 minute. Add fennel bulb and stalks, scallions, and sweet potatoes and cook, stirring occasionally, until fennel begins to soften, 3–4 minutes. Add cauliflower, chiles, and turmeric; toss to coat. Reduce heat to medium, add 3 Tbsp. water, and cook, covered, until cauliflower is just tender, 6–8 minutes. Uncover and stir in garam masala, ½ cup cashews, ¼ cup cilantro, and ¼ cup fennel fronds; cook until fragrant, about 2 minutes.

Divide fennel mixture among bowls. Top with remaining ½ cup cashews, ¼ cup cilantro, and ¼ cup fennel fronds.

Collect the spices. You can either collect ground spices and just mix them, or as I did, collect whole spices and toast them then grind them.

To toast the spices, put them in a dry hot skillet and toast for 4-5 minutes. I use a wooden spoon and mix so they don't get burnt. They will be really fragrant once toasted.

Alternatively, put the spices on a cookie sheet and bake at 180°C (360°F) for 5 minutes.

Once the spices are toasted, grind them using a pestle and mortar or an electric grinder.

Store in a sealed container for up to 1 year.

A play on the classic Indian chicken makhani, in this recipe yogurt and lime juice-marinated shrimp are cooked in a buttery, gently spiced tomato mixture. The key here is to cook the sauce under pressure, but to use the sauté function to quickly cook the shrimp so they don’t turn rubbery. Serve this over rice to catch every drop of the fragrant, creamy sauce. If you’re a fan of Indian pickles—lime, lemon, mango, and the like—a spoonful of one or all three on the side would not be out of place.
