Chicken Tikka Recipe

120 g (1/2 cup) Greek yogurt (-

Place the chicken breast pieces into a bowl or freezer bag with the yogurt, garlic, ginger, lemon juice, coriander, turmeric, cumin, paprika, chilli powder, cinnamon, salt and pepper.

Mix together so that everything is combined, then cover and place in the fridge to marinate for 2-3 hours.

If you’re using wooden skewers, place them in water to soak while the chicken is marinating. This will help to prevent them burning during grilling.

Remove the marinated chicken from the fridge and thread onto skewers.

Brush the chicken with the oil, then place on a griddle plate and cook, turning a couple of times, for 8-10 minutes until cooked through. Alternatively, you can grill (broil) under a grill, or you can barbecue for the same amount of time.

Make sure the chicken is cooked by slicing into a larger piece and ensuring it&#039;s no longer pink in the middle.

Serve with a sprinkling of freshly chopped coriander.

How to get the PERFECT Chicken Tikka

Thick pancakes that are fluffy, not dense, with a tender, pillowy soft crumb. Much like Japanese pancakes, these cook up extra thick and light.

Thick and Fluffy Pancakes From Homemade Pancake Mix Recipe

For the Pancake Mix:

all-purpose flour,

sugar (about 1 tablespoon; 15 grams)

malted milk powder,

(6.8 grams) baking powder

(1.6 grams) baking soda

refined coconut oil,

For the Pancakes:

egg,

vanilla extract

For the Pancake Mix: In the bowl of a food processor, combine flour, sugar, malted milk powder, baking powder, salt, and baking soda. Process about 30 seconds to ensure the leavening agents are fully homogenized into flour.

Add the solid coconut oil and pulse only until it disappears into a dry and powdery mix, just a few seconds. It's important that the coconut oil is fully combined into the flour, while also remaining powdery and dry, so use caution and avoid over-processing, especially with larger batches (a 14-cup food processor can handle a maximum batch size of 4x; plan accordingly for smaller machines). Transfer the mix to an airtight container and store up to one year at or below 74°F, or until the date stamped on the package of coconut oil.

For the Pancakes: Preheat an electric griddle to 350°F, or heat a large, nonstick skillet to a similar temperature on the stovetop. In a large mixing bowl, whisk the milk, egg, and vanilla extract until well-combined. Add the prepared pancake mix, and whisk until relatively smooth, although a few flecks of coconut oil may dot the batter.

With a large scoop, measuring cup, or piping bag, divide batter in 1/3-cup portions (or as desired), and griddle until golden brown on either side, and cooked through the middle, about 90 seconds per side. Serve immediately, with butter, maple syrup, fresh fruit, whipped cream, or whatever other toppings sound fun.

Troubleshooting: The timing and yield of this recipe will vary substantially depending on how the pancake batter is portioned as well as the exact temperature of the griddle itself. When pancakes are excessively browned but raw in the middle, the griddle is likely too hot; when the pancakes are cooked through but too soft and pale, the griddle may be too cool.

Homemade waffles are super easy to make and this recipe has minimal ingredients. A delicious way to treat your sweetie to a special breakfast. Turning the waffles red makes these fluffy waffles fun. The fresh strawberry sauce is tasty and a pretty topping. It would be yummy on ice cream or shortcake.

Adapted from the kitchn’s recipe for lofty buttermilk pancakes. The recipe below differs only by method not by ingredients. Check out the kitchn’s post if you want to try their egg-separating method — don’t worry, you don’t have to beat any whites! 
When cooking these pancakes on the Baking Steel griddle, I suggest heating your griddle before you begin making your batter. I have a flat-top cooking surface, and I have the best results warming the griddle up slowly over low to medium heat for about 15 to 20 minutes. If you have a gas range, you will be able to control the temperature better.
Finally, the best trick I’ve learned for cooking pancakes is to go small — I use my 2-tablespoon measuring cup to portion out batter. The pancakes cook quickly and evenly when I use this small scoop.
If you want to use sourdough discard in this recipe, simply cut back some of the flour and water, preferably by weight. So, for example, if you want to use 100 grams of  sourdough discard (at 100% hydration) in this recipe, cut back 50 grams of the flour and 50 grams of the buttermilk. That would call for using 270 grams of flour and 418 grams of buttermilk. 

The BEST One-Bowl Buttermilk Pancakes

(320 g) flour

If using a Baking Steel griddle, begin warming it up over low heat.

Whisk the flour, sugar, salt, baking powder, and baking soda together in a large bowl. Add the eggs and beat with a fork till the eggs are whisked and incorporated into the surrounding flour, as if you were making pasta. Add the buttermilk and milk, and stir with spatula to combine. Add the melted, cooled butter and stir until combined.

Heat a large skillet over medium-high heat. When hot, film with a thin layer of oil. After about 30 seconds, when the oil shimmers but is not smoking, lower the heat to medium-low and use a soup spoon (I have a one-eighth cup (2 T) measuring cup, which I love for pancakes) to drop in heaping spoonfuls of pancake batter. Note: If you are using a BS griddle, adjust heat so griddle radiates heat and feels hot but not smoking — this takes just a teensy bit of practice.

The batter will spread into a pancake about 3 inches wide. Cook for about 2 1/2 minutes. (If the pancake scorches or the oil smokes, lower the heat.) When the bubbles that form on the edges of the pancakes look dry and airy, use a thin spatula to gently lift one side and peek underneath. If the pancake is golden brown, flip and cook on the other side for 2 to 2 1/2 minutes, or until the bottom of the pancake is golden brown.

Transfer to a cooling rack briefly before serving. Scrape any stray crumbs or scraps out of the skillet, add a little more oil, and continue to cook the remaining batter.

I added blueberries to this recipe and substituted kefir for buttermilk, half and half for whole milk and butter for canola oil. WOW! I feel like this was the first time I really executed pancakes at a restaurant level (I'm 35). Fluffy, moist, crispy on the edges, mild yogurt-y flavor, just amazing.

To do the blueberries, just sprinkle in blueberries over the top when you first spoon the batter onto the pan/griddle. I used defrosted frozen blueberries and they worked beautifully, but I'm sure fresh would be even better. I found that (probably because of the extra water content of the berries) I needed more like 4 min each side.

Normally I have Bisquick,  This lot got rave reviews - comments like it is so light, and tastes better than usual.  I must say they are closer to the bannochs I get at home than anything I have have had in this country.  I was my first attempt at buttermilk and I am pleased to say it will not be my last.  Joan and I both wish to thank you for your help with helping me through the tangles of kitchen chemistry and making the results taste good too.

Remove some of the broth liquid from the birria meat with a spoon or put the meat in a colander with a bowl under it and press so the broth goes in the bowl (this works best if the meat is warm).

Put the ingredients on a tray and head to your outdoor cooking space. Preheat the Blackstone to medium heat.Note: I had uncooked flour tortillas so I cooked those on the griddle for a minute per side first. If your tortillas are cooked just skip this step.

Dip a few tortillas, both sides, in the birria broth, add some oil to the griddle and place the tortillas on the griddle, flip after 30 seconds and fill one side of each tortilla with some cheese, some of the birria meat, cilantro and more cheese. Use hibachi spatulas to fold the empty side over the filled side and press slightly so it stays closed.

Cook 1 to 2 minutes per side depending on how crispy you want them. Repeat with remaining tacos.

Serve the tacos with more of the birria broth on the side for dipping and optional toppings such as lime, hot sauce, sweet pickled red onions.

Boil the ramen noodles according to package directions (do not add flavor packet). Drain and rinse the noodles very well with cold water so they don&#39;t get mushy.

Put the mayo, sweet chili sauce. and sriracha in a bowl. Stir until combined.

Preheat the griddle to medium heat for a few minutes. Add some cooking oil of choice and the onion. Cook 1 to 2 minutes and then add the garlic, kosher salt, pepper, and cooked noodles.

Cook the noodles on the griddle for 2 to 3 minutes, stirring and flipping with hibachi spatulas.

Add half of the bang bang sauce and cook 3 to 4 more minutes. Add the green onions and lemon juice, cook 1 to 2 more minutes.

Toss with the remaining bang bang sauce right before serving.

Hibachi Steak and Veggies is cooked on a hibachi griddle and tastes just like at the Japanese steakhouse, it&#039;s even served with yum yum sauce

Tbsps soy sauce

Cut the steak into bite size pieces and place in a container or plastic bag. Add 1 Tbsp of the soy sauce, 1 Tbsp of the garlic, and 1 Tbsp of the ginger. Stir until evenly combined and marinate for an hour.

Preheat a hibachi griddle or large skillet to medium high. Add 1 Tbsp of the sesame oil and the mushrooms, zucchini, and onions. Cook 3 to 4 minutes, stirring a few times.

Add the remaining 1 Tbsp soy sauce, 1 Tbsp garlic, 1 Tbsp ginger, butter and sesame seeds to the veggies.

Move the veggies to one side of the griddle or skillet and add the remaining 1 Tbsp sesame oil and the steak on the other side. Continue cooking the veggies and steak for 3 to 4 more minutes, stirring and flipping throughout.

Serve the steak and veggies with yum yum sauce for dipping.

Whisk together the flour, baking powder, salt, and sugar in a large bowl. In a separate bowl combine the eggs, milk, and vanilla extract. Whisk to completely break up the egg into the milk. Add the liquid ingredients to the dry and stir until just combined. There should still be some lumps, do not mix until smooth as this will create a tough pancake. The batter should be thick, but just pourable. Fold in the melted butter and let rest for 10 minutes.

Preheat a cast iron pan or a griddle over medium heat for 3-4 minutes until thoroughly hot. You should be able to feel the heat radiating off the surface when you hold your hand an inch or two away. Place a Tablespoon of butter in the hot pan and heat until melted and the foam subsides. Drop about ⅓ of a cup into the center of the pan and push into a circle. Cook on the first side until golden brown, a crispy ring has developed around the edge, and bubbles are bursting all over the top, about 3-4 minutes. The pancake should be cooked ¾ of the way through on the first side. Flip over and cook for another 2-3 minutes until golden brown and cooked through. You may need to adjust your heat if the pancakes are getting too brown too quickly.
