Step 1
Boil the ramen noodles according to package directions (do not add flavor packet). Drain and rinse the noodles very well with cold water so they don't get mushy.
Step 2
Put the mayo, sweet chili sauce. and sriracha in a bowl. Stir until combined.
Step 3
Preheat the griddle to medium heat for a few minutes. Add some cooking oil of choice and the onion. Cook 1 to 2 minutes and then add the garlic, kosher salt, pepper, and cooked noodles.
Step 4
Cook the noodles on the griddle for 2 to 3 minutes, stirring and flipping with hibachi spatulas.
Step 5
Add half of the bang bang sauce and cook 3 to 4 more minutes. Add the green onions and lemon juice, cook 1 to 2 more minutes.
Step 6
Toss with the remaining bang bang sauce right before serving.
