French Onion Grilled Cheese Sandwich

olive oil

In a large heavy bottom skillet, or cast iron pan, heat oil over medium heat. Add onion and saute for 5 minutes, stirring to coat. Turn heat down to medium low. Stir occasionally and continue sauteing for 20-30 minutes. Onions will sweat out their moisture, and eventually caramelize into a beautiful deep golden brown. Add a generous pinch of salt, a splash of port, sherry, or stock (optional) and let the liquid cook off. Remove from pan and wipe it out with a paper towel, to use again.  Preheat oven to 350 F

Spread the bread with whole grain mustard (optional). On two slices, divide and layer shredded Gruyere, top with caramelized onions, sprinkle with fresh thyme leaves, then add the rest of the cheese. “Put the lid on” the sandwiches with the other slices of bread and gently press together

Heat 2 tablesoons butter (or a combination of butter and oil) in the same skillet over medium heat. Place sandwiches in the pan and toast, carefully flipping when perfectly golden brown and cheese begins to melt. Place in a warm oven to fully melt the cheese -which will preventing the bread from getting too dark. Cut in half and enjoy.

Turkey Grilled Cheese Sandwich with Cranberry Mustard

Stir the cranberry sauce and mustard  together.

Spread some cranberry mustard generously on all 4 slices of bread. Layer 2 slices of bread with turkey and brie, then top with the other slice.

Heat butter on medium low heat and pan-sear the sandwiches,  until crispy and golden on both sides. Place on a sheet pan and finish in the oven until the cheese is melty.

Do you preserve this just like you do jam?

Very good result! Only change I would make is to grill the sandwich until the cheese melts in a covered pan on the range. Works for me because I make only one or two sandwiches at a time.

This sandwich is a winner, and I certainly won't wait for Thanksgiving leftovers to make it again. Teen son loved it to. We both agreed I could have upped the mustard a little (did not follow proportions of recipe, just winged it). thanks

Spread butter one side of each slice of bread. Sprinkle butter side with garlic salt and parmesan cheese. I like to gently press and spread with a knife just to help ensure the paremesan sticks and stays in place. If it seems too dry you can always add and spread another thin layer of butter.

Build sandwich with buttered sides of bread on the outside and cheese slices in the middle.

In a nonstick pan grill over medium heat until golden brown. The parmesan will make the sandwich stick to the pan until it has formed a nice golden brown crust then it will be easy to flip!

Grill the other side.

Remove from heat.

Slice in half.

Serve immediately!

STEP BY STEP:
Using a large chef’s knife, cut lengthwise around the avocado.
Twist the two halves to separate them.
Place a towel in your hand and put the avocado on top. With a gentle but quick motion, tap the knife into the avocado pit.
Do not attempt to remove the avocado pit with your hand! Instead, pull the cutting board close to your body, then place the pit against the far edge of the cutting board and pull back to release it from the knife. (Watch the video for this part!)

How to Cut an Avocado

Learn how to make the best Grilled Cheese sandwich with a crisp, buttery exterior and gooey cheese center.

Texas toast (or thick sliced sandwich bread)

Gouda cheese

Havarti cheese

Spread 1/2 Tbsp of butter on one side of each slice of bread.

Set a skillet over medium/low heat and place 2 slices of bread in the skillet with the butter-side-down.

Stack cheeses on one piece of toast: cheddar, havarti, then gouda. Once the breads are golden brown, closed the sandwich with the crisp sides on the outside.

Continue cooking until the bread is a rich golden brown, flipping once and press down lightly to help the bread stick to the cheese. Total cooking time should one 5-6 minutes. Keep the heat on medium low for the breads to toast slowly, giving your cheese a chance to fully melt and adhere to the bread.

Once you see the cheese has melted and breads are browned, remove to a plate and cut in half diagonally to serve. Repeat with the next sandwich.

Fried Egg Grilled Cheese Sandwich

Salt & Pepper

Butter one side of each piece of bread, set aside.

In a frying pan, melt a little butter over low heat.

Fry eggs so the yolks are cooked how you like them.

Add salt and pepper to taste.

Once done, remove from flame.

In a separate frying pan, add a slice of bread, buttered side down.

Add a slice of Colby jack cheese.

Top with two fried eggs.

Add a slice of pepper jack cheese on top of the eggs.

Top with another piece of bread, buttered side up.

Cover pan with a lid and cook until cheese is melted and bread is golden brown on both sides.

Grate or cut thin slices of cheese and prep any add-ins so they’re ready to go before you start cooking.

Set your frying pan over medium-low heat (you can crank it up later if needed) and let it warm up.

Spread a thin layer of butter or mayonnaise on one side of the bottom slice of bread. Place this piece face-down in the pan so that the butter or mayonnaise-covered side is in contact with the pan.

Arrange your cheese on the top side of the bread in the pan, then carefully top it with any add-ins. Take care not to add too much non-cheese stuff to the sandwich, as this will slow the melting process.

Spread a thin layer of butter or mayonnaise on the second slice of bread, then place it face up on top of the bread, cheese, and optional add-ins in the pan.

Let the sandwich cook until the bottom slice is browned to your liking and the cheese has begun to melt.

Carefully flip the sandwich using a spatula or turner. Repeat Step 6 with the other side.

Heat a griddle or skillet on medium-high heat. Butter two slices of bread on one side; place buttered side down onto the skillet.

Top bread with pear slices and cheese—put a little cheese on the bread first, then the pears, then the remaining cheese. Butter remaining bread slices and place them on top of the sandwiches, butter side up.

Cook until bottom of sandwich is browned, 3-5 minutes. Flip over and cook 3-5 minutes more.

This veggie grilled cheese sandwich adds mushrooms, onions, tomato, avocado, hot sauce, and basil to the comfort food staple that we all know and love.

store-bought Sriracha sauce

Sauté

In a large skillet over medium-high heat, heat the olive oil. Add the mushrooms and onion and sauté, stirring frequently, for about 4 minutes. 

Stir

Reduce the heat to low, add the garlic, and sauté, stirring continuously, for about 2 minutes. Add the scallion and a pinch each salt and pepper and stir for 1 minute. The sautéed ingredients should be tender but a little crunchy with a tinge of a light brown color. Transfer to a bowl.

Layer

Return the skillet to medium-high heat. Butter 1 side of each slice sourdough bread and place the bread in the skillet, buttered side down. Divvy the cheese between both slices bread. Working in a zigzag motion, squeeze the Sriracha sauce over the cheese.

Cook

Add the sautéed vegetables, tomato, and fresh basil, if using, and avocado to a slice of cheese-topped bread. Top with the other slice bread, buttered side up. Cook, flipping once, until crisp and golden brown, about 3 minutes per side, during which time you may want to reduce the heat to medium so the cheese melts before the bread browns too much. 

Serve

Serve the veggie grilled cheese sandwich immediately.
