These grilled chicken kabobs are made with marinated chicken and colorful vegetables, all threaded onto skewers and cooked to perfection. An easy dinner that can also be baked in the oven!

Grilled Chicken Kabobs

chicken breasts (cut into 1 inch pieces)

olive oil

soy sauce

honey

garlic

salt and pepper

red bell pepper

yellow bell pepper

zucchini

red onion

parsley

Place the olive oil, soy sauce, honey, garlic and salt and pepper in a large bowl.&nbsp;

Whisk to combine.

Add the chicken, bell peppers, zucchini and red onion to the bowl. Toss to coat in the marinade.

Cover and refrigerate for at least 1 hour, or up to 8 hours.

Soak wooden skewers in cold water for at least 30 minutes. Preheat grill or grill pan to medium high heat.

Thread the chicken and vegetables onto the skewers.

Cook for 5-7 minutes on each side or until chicken is cooked through.

Sprinkle with parsley and serve.

Chicken yakitori recipe is an easy Japanese grilled dish served on skewers. The chicken is basted with a savory sweet Asian sauce as it cooks on the hot barbecue.

Chicken Yakitori

water

mirin rice wine

rice vinegar

brown sugar

bamboo skewers (or metal skewers)

kosher salt (as needed for seasoing)

black pepper (as needed for seasoning)

In a medium-size pot whisk together soy sauce, water, mirin, rice vinegar, sugar, ginger, garlic, and cornstarch.

Bring mixture to a boil, constantly whisk until sauce is slightly thickened, about 1 minute.

Transfer 1 cup of the sauce to a bowl to use for basting the chicken.

Thread cut pieces of chicken on wooden skewers that have been soaked in water for 30 minutes. Season with salt and pepper on both sides.

Drizzle both sides of skewers with a small amount of oil to prevent sticking when cooking.

Preheat grill over medium-high heat. Use a paper towel dipped in oil to clean and grease the grill grates.

Once the grill is hot add the skewers and cook for 4 minutes. Flip over and baste the cooked side with the sauce. Cook 4 minutes.

Flip skewer over, baste with sauce, cook 2 minutes covered.

Flip skewer over again, baste, cook 2 minutes covered.

Repeat flipping, basting and covered cooking 2 additional times, 16 minutes total cooking time.

Sprinkle chicken yakitori skewers with sesame seeds. Serve immediately with additional sauce.

Grilled Garlic Chicken Skewers

Chicken Breasts

In a medium bowl, combine all marinade ingredients. Mix well.

Mix the chicken breast into marinade. Refrigerate 1 hour or more.

Fill a casserole dish with water and soak your wooden skewers in water until ready to use. This will prevent them from burning on the grill.

Preheat the grill to medium heat when chicken is done marinating.

Load your skewers with chicken and veggies.

Grill chicken skewers over medium heat for about 15 minutes or until chicken is cooked through. Turn chicken 3 times to ensure even cooking of all 4 sides of skewer.

Grilled Chicken Kabobs Recipe

Dissolve ¼ cup of salt in 4 cups of lukewarm water. That is enough for 4 chicken breasts. Brine for at least 15 minutes (but you can do 2 hours if you have time), then rinse the chicken with fresh water and pat dry with paper towels.

To brine the chicken:

In a small bowl whisk the olive oil with garlic powder, paprika, salt, and pepper.

Make the marinade:

Toss the vegetables in half of the marinade, and add the rest of the marinade to the chicken. Mix and make sure that everything is well coated.

Heat up the grill

Heat up the grill on medium-high heat or 375°F (190°C).

Grill

Place the skewers on your preheated grill, the grilling will take around 10-15 minutes turning halfway through. Make sure that the chicken is cooked through and is golden brown, but avoid overcooking the chicken as it can dry out and become tough. So keep a close eye on the chicken.

Season and cook:

Preheat the oven to 450°F (230°C), and cook for 20-25 minutes turning halfway through.

Flavorful grilled teriyaki chicken skewers that are gluten-free and naturally sweetened! Perfect for serving with noodle salads or rice and veggies. Just 9 ingredients required!

Grilled Teriyaki Chicken Skewers (Quick Marinating!)

coconut sugar ((or sub brown sugar))

½ tsp rice vinegar

tsp toasted sesame oil

If using bamboo skewers, soak in water for at least 30 minutes before using to prevent them from burning on the grill. We prefer metal skewers.

In a wide, shallow glass container, whisk together soy sauce or tamari, coconut sugar, garlic powder, rice vinegar, and sesame oil. Remove about 1/3 of the marinade (~2 ½ Tbsp if making the default number of servings) and reserve for making glaze.

Slice chicken thighs into ~1” chunks. Add to the container with the marinade, stir to coat well, cover, and let sit at room temperature for 30 minutes to marinate. If preparing in advance, you can marinate in the refrigerator for up to 12 hours and let sit out at room temperature for 30 minutes before grilling (this takes the chill off and prevents the chicken from burning on the outside before cooking fully).

While the chicken is marinating, whisk together the arrowroot powder and a splash of water in a small saucepan, then add the reserved marinade. Bring to a simmer, whisking frequently until thickened to a glossy glaze — about 2-3 minutes. If it thickens too much, add a little water to thin. If it’s too thin, whisk more arrowroot with water, then add to the saucepan and cook to thicken.

Once the chicken has finished marinating, lightly oil a grill pan or grill grate and preheat to medium-high. Thread cubed chicken and red onion onto skewers, alternating with 1 piece of red onion every 1-2 pieces of chicken, and ending with a piece of red onion.

Grill, turning every 3-4 minutes, until browned, beginning to char in spots, and fully cooked through (internal temperature reaches 165 F or 75 C) — about 10-15 minutes.

Transfer to a serving plate, brush the reserved glaze over the chicken, and sprinkle with sesame seeds and sliced green onion (both optional). These skewers are delicious served with rice and steamed broccoli or alongside our Creamy Sesame Noodle Salad.

Leftover grilled chicken keeps stored in the refrigerator for 2-3 days.

Cut the chicken into 1 inch cubed pieces and add to a bowl.

Add all the herbs, zest, olive oil and a good pinch of salt and pepper. Stir until thoroughly combined. You can use the chicken immediately or place in the fridge to marinate until you&#x27;re ready.

Heat the broiler (grill) to high. Thread the chicken onto the wooden skewers evenly and place on a baking tray.

Place the chicken on a high shelf under the broiler and cook for 5 minutes, turn the skewers and cook for another 5 minutes until browned and cooked through.

Serve the chicken skewers on plate with a squeeze of lemon juice and some grilled veggies.

Grilled Balsamic Chicken Kabobs are a delicious flavorful summer grill staple marinated in a balsamic sauce, skewered with vegetables, and grilled or baked.

Balsamic Chicken Kabobs

Cut the chicken breasts into 1.5-inch thick cubes and evenly season with salt and pepper. Set aside in a large bowl or Ziploc bag.

Combine balsamic vinegar, honey, olive oil, Italian seasoning, and garlic powder in a medium mixing bowl. Mix well until smooth.

Reserve 3 tablespoons of the sauce mixture and add the rest to the bowl of chicken. Toss well to coat all the chicken. Cover the bowl with plastic cling wrap and refrigerate for at least 1 hour (or overnight for the best results).

Marinate the chicken:

Thread 4 cubed chicken breasts onto each skewer, alternating with a piece of red bell pepper, red onion, and zucchini. Season all over with a little bit of salt and pepper, to taste.

Preheat grill over medium high to 450F, about 6-8 minutes

Place the skewers spaced evenly apart on the grill and grill for 5 minutes on each side or until the internal temperature for the chicken reaches 165 F as read on a meat thermometer. Do not overlap the skewers at any time to ensure even cooking for all the skewers.

Brush the reserved sauce over the skewers on both sides and grill for another 1-2 minutes until nicely charred, flipping once during grilling.

Remove the skewers off the grill and let rest for 5 minutes.

Serve warm on its own or with a side of rice or pita bread, if desired.

Grill the chicken:

Juicy grilled chicken skewers marinated in olive oil, lemon, garlic, oregano and rosemary is a delicious, healthy dinner recipe.

Greek grilled chicken skewers

kg (2lbs) chicken breasts (boneless, skinless)

garlic (finely chopped/crushed)

½ tsp sweet paprika

tsp rosemary (finely chopped)

½ tsp pepper

Slice the chicken into bite-sized chunks, approximately 5cm/2in in size.

Mix all the marinade ingredients together and pour over the chicken.

Toss to coat the chicken in the marinade then cover and marinade for at least 30 minutes but up to 24 hours in the fridge.

Soak bamboo skewers in hot water for 30 minutes or alternatively use metal skewers.

Thread marinated chicken and red onion onto skewers then brush with the remaining marinade.

Cook on a hot grill or in a griddle pan on the stove for 2-3 minutes per side until the chicken is golden brown and cooked through, approximately 10 minutes in total.

Remove from the heat and allow to rest for 5 minutes before serving.

If zucchini ribbons aren&#039;t your thing, feel free to substitute chunks (see note 1). The zucchini can be cut into ribbons a day ahead; just store in a covered container in the refrigerator. Prepare the marinade up to 2 days in advance. Or, build the skewers and refrigerate up to 2 hours in advance. Bring to room temperature before grilling.

Add bamboo skewers to a bowl and cover completely with cold water. Soak bamboo skewers at least 30 minutes (or start them the day before and let them soak overnight).

In a small bowl or measuring cup, add olive oil, garlic, basil, rosemary, and thyme and stir to combine.

Organize the skewers, zucchini ribbons, and chicken in a line for assembly. Building one skewer at a time, stack two zucchini ribbons and roll them tightly together, pushing all the way down the skewer. Add a cube of chicken.

Repeat with additional zucchini ribbons (two rolled together) and cubes of chicken until the skewer is full, then repeat with additional skewers until all zucchini and chicken have been skewered.

Arrange skewers on a rimmed baking sheet or in a baking dish. Brush or drizzle marinade over the skewers, then season generously with salt and pepper (I use at least 1 teaspoon kosher salt and ½ teaspoon black pepper) and red chili flakes, if using.

To assemble the kabobs:

Preheat grill over medium-high heat for 10 minutes and clean and oil grates. Grill the skewers directly over high heat for 5 minutes. Turn the skewers over, transfer to indirect heat, and continue cooking until an internal thermometer inserted into the thickest part of the largest piece of chicken reaches 165 degrees, about 3 to 5 minutes longer.

While the skewers are grilling, brush the cut-side of each lemon half with olive oil. Add to the grill, cut-side down, and grill until golden brown, about 2 to 4 minutes.

To serve, arrange skewers on a platter and garnish with fresh parsley. Nestle grilled lemon halves, cut-sides up, among the skewers.
