hatch chile

Can you make great chile verde without Hatch chilies? Yep.

Chile Verde With Pork Recipe

pork shoulder,

Kosher salt

poblano peppers

cubanelle peppers

tomatillos (about 15 medium), husks removed

garlic

jalapeño peppers, stems removed, split

vegetable oil

cilantro leaves

large onion, finely diced (about 1 1/2 cups)

cumin

chicken stock

In large bowl, toss pork with 2 tablespoons salt until thoroughly coated. Set aside at room temperature for 1 hour.

Meanwhile, roast poblano and cubanelle peppers by placing them directly over the flame of a gas stove until deeply charred on all surfaces, about 10 minutes total. If you don't have a gas burner, you can achieve similar results under the broiler, or on an outdoor grill. Place peppers in a bowl and cover with a large plate. Let steam for 5 minutes, then peel under cool running water. Dry chilies, discard seeds and stems, and roughly chop. Transfer to bowl of food processor.

Preheat broiler to high. Toss tomatillos, garlic, and jalapeños with 1 tablespoon vegetable oil and 1 teaspoon kosher salt. Transfer to rimmed baking sheet lined with foil. Broil until charred, blistered, and just softened, turning once halfway through cooking, about 10 minutes total. Transfer to the food processor along with any exuded liquid.

Add 1/2 of cilantro to the food processor and pulse mixture until it is roughly pureed but not smooth, about 8 to 10 one-second pulses. Season to taste with salt and pepper.

Adjust oven rack to middle position and preheat oven to 225°F. Heat remaining oil in large Dutch oven over high heat until smoking. Add half of pork and cook without moving until well browned, about 3 minutes. Stir pot and continue cooking, stirring occasionally, until well browned on all sides. Add remaining pork and onions and cook, stirring frequently and scraping up any browned bits from bottom of pan, until onions are softened, about 4 minutes. Add cumin and cook, stirring constantly until fragrant, about 1 minute.

Add chicken stock and pureed chilies to pot and stir to combine. Bring to a boil, cover, and transfer to oven, leaving lid slightly ajar. Cook until pork shreds easily with a fork, about 3 hours. Remove from oven and return to stovetop.

Skim off and discard any excess fat. Adjust to desired consistency by adding water or boiling and reducing. Stir remaining cilantro into pot and season to taste with more salt. Serve immediately with warm tortillas, diced onions, sour cream, cheese, cilantro, and lime wedges. Chili can be chilled and stored in airtight container in refrigerator for up to 5 days. Flavor will improve with time.

This Easy Slow Cooker New Mexico & Colorado Hatch Chile Verde Recipe may be the best pork stew you’ve ever tasted

Super Easy Slow Cooker Chile Verde

hatch chiles (about 4)

lb pork shoulder/butt

lb tomatillo

cilantro

onion

tbsp cumin

chicken stock (no sodium/unsalted preferred)

tbsp oregano (Mexican oregano preferred, optional)

Trim your pork butt and cube it. Season well with salt and pepper and set aside.

Set your oven to broil. Wash and dry your tomatillos and hatch chiles. Rub them with oil (any oil is fine) and place in oven. Flip them when they are toasted to your liking and do the other side. This took 18 minutes in our oven at 550ºF.

While you are waiting for your peppers to roast, brown your pork shoulder cubes in your dutch oven on high heat or your slow cooker on high/saute. Work in batches to avoid crowding. Once all the pork is browned, move it to a plate and set aside. Be sure to use a timer so you don’t forget about the chiles roasting in the oven, or check back after every batch of pork.

Once the peppers are done, put them in a ziploc bag to steam for 10 minutes. Transfer the tomatillos along with cilantro, garlic, and a little salt to a blender and set aside.

Once you are done browning the pork, reduce heat to low and cook your onions. When the onions are translucent, add the cumin seeds and continue cooking for another 2 minutes to toast them. Then add the pork, all accumulated juices on the plate, and the chicken stock.

Remove the chiles from the bag and peel them. It’s not necessary but highly suggested that you also seed them with a small spoon. Once the chiles have been peeled and seeded, put them in the blender and puree. Once the salsa verde is pureed to your liking, combine it with the rest of the ingredients, mix well, and simmer for 2-4 hours.

In the last 1/2 hour of cooking, taste the chili and adjust seasoning, and if you are using oregano, add it in now.

Serve with cilantro, tortillas, and rice, or just enjoy by itself.

Spread the mixture into a casserole dish. Spread out so it is an even depth. If you like you can sprinkle a few more of the chopped chilies across the surface.

Bake for about 25-30 minutes, or until bubbling all around and starting to brown on the surface. If it's not bubbling and starting to brown, cook it a little longer. Finish off for a few minutes on the top rack under the broiler to get more browning, if you like.

Serve right away with tortilla chips or bread for dipping.

This dish is also known as a Sonoran Quesadilla or even a Mexican pizza. It’s an open faced quesadilla made with a crispy tortilla that is topped with green chile, beef and oozing melted cheddar cheese.

Crispy tortillas. Add about ½ inch of oil to a pan and heat to 375 degrees, or until it bubbles vigorously when dipping the edge of a tortilla.

Fry the tortillas on both sides until crispy and brown. Pockets of bubbles should emerge in the tortilla. About 25-30 seconds on each side. Set aside.

Assemble the crisp: spread the chili and top with grated cheddar cheese like a pizza.

It is hatch chile season, let's make roasted hatch green chile salsa. Hatch chile is also called New Mexico chile or New Mexican chile typically grown in Santa Fe, New Mexico in an area called Hatch Valley. These chiles are mild similar to poblano peppers, but some could be hotter on the level of spiciness of jalapeño peppers. HATCH CHILE CREAM CORN RECIPE! Pit Boss Ultimate Griddle Recipe!

This Hatch Chile Green Sauce is only the start of it for me when it comes to hatch valle season. Try the zesty zing of spice in a sauce made with seasonal New Mexico Fresh Green chili. It's the best green sauce on breakfast omelettes and only requires four basic ingredients you likely have.

Hatch Chile Sauce Recipe

whole hatch chiles (whole if large enough pot

Garlic

Onion

tso Sea salt

Important Notice: Always well ventilate your area before boiling chilis.

Prep fresh hatch peppers by washing and removing stems. Place in pot and add two cups of water. - I only use enough water, so they are about ¾ of the way in.

Turn stove on to medium heat, cover pot with lid, and let boil for 12 minutes (15 minutes if uncovered). - Set a timer as a reminder.

Once cooked, let sit for 5 minutes.

Using a utensil, place all peppers in a blender; do not transfer the boiled water.

Add fresh water, onion, garlic, and salt and blend for 30-45 seconds.

Transfer sauce from blender cup into sauce storage. The sauce will be smooth and easily come out of the cup.

Traditional Mexican gorditas made with corn tortilla dough (masa) pressed into a chubby round, browned on a hot cast-iron skillet, then fried and stuffed with delicious Hatch chile meat.

Easy Gorditas Recipe

garlic powder

onion powder

pepper

Hatch green chile sauce

Hatch red chile sauce

queso fresco

cotija cheese, crumbled

mashed potatoes (I use instant mashed potatoes to save time)

Make the filling first

Place ground beef in a skillet set over medium high heat. Stir in the cumin, garlic powder, onion powder, salt and pepper, while breaking up any large clumps of meat. Let the beef cook without stirring for approximately 3-5 minutes to form a deep brown crust on the bottom. Pour in 1/4 cup chicken broth, reserving the rest. Stir, scraping up the browned bits on the bottom, and continue to cook and stir often until no pink spots remain. Remove from heat and divide into two small mixing bowls. Stir green chile sauce into one bowl and red chile sauce into the other. Cover and keep warm.

For the Gorditas

Place the masa harina, cotija cheese, and mashed potatoes into a large mixing bowl. With clean hands, gently stir ingredients together with your fingers for a few seconds to loosely combine.

Add 1/2 cup chicken broth and work it into the dough by hand for about a few seconds. Repeat with another 1/2 cup broth. Finally, add an additional splash of broth and work the dough by hand until it forms a firm dough ball. You are aiming for the consistency of soft play-dough. (At this point if the dough is sticking to clean hands, knead in a spoonful or two more of masa harina; if it is cracking a lot around the edges when worked then knead in a splash more broth.) When the dough is smooth and does not stick to clean hands, knead and fold the dough ball for an additional 5 minutes longer.

Set a large cast iron skillet or a comal over medium-high heat. Lay out a piece of parchment paper next to the skillet. Remove a portion of dough approximately 3 ounces in weight, or about the size of a large lemon, and roll into a ball. Place a ball between two pieces of parchment paper and press with the bottom of a frying pan, plate, or large measuring cup to create a disk about 1/3 inch thick. (Alternatively, shape into a flattened disk by hand, slowing working and turning the dough with your fingers and pressing against the palm of your hand. Smooth out any cracks along the edges of your dough disks. Place on the parchment paper and repeat until no more dough remains.

Place gorditas onto the hot cast iron skillet and cook each side until spotty-golden brown and dry. In a separate medium-size skillet set over medium heat, add vegetable oil to a depth of approximately 1 and 1/2 inches.

When the oil reaches 350 degrees F, place spotty-browned gorditas gently down into hot oil and fry for approximately 20 seconds on each side, or until they puff slightly, float to the top and turn golden brown. Remove with a slotted spoon or spider strainer and set onto a plate lined with paper towels. Repeat with the remaining gorditas.

While the gorditas are still warm, insert a sharp knife into the edge and genty slice 2/3 of the way down towards the center, working the knife along the edge of the gordita and through the center until you can open the gordita by simply squeezing the sides. Do NOT cut all the way through dividing it into two pieces. The goal is to create a ‘pocket’ in the gordita to hold the filling.

Next fill the gorditas with the prepared meat filling and a spoonful of queso fresco cheese (reheating the meat if necessary), then stuff/top with your choice of additional toppings listed above and serve while warm. Gorditas should be eaten by hand.

Tried this for the first time ever! First two didn't turn out too well. I think I made them to 'chubby' I thinned the next ones they puffed up and were easy to cut and full. I'm pretty proud of myself! This was so easy!! Yum! You're never too old to learn a new recipe. :)

This roasted hatch chile salsa verde recipe needs to be doubled if you enjoy salsa as much as we do. This smoky, fiery salsa will go on just about everything.
