Chile Verde With Pork Recipe

pork shoulder,

Kosher salt

poblano peppers

cubanelle peppers

tomatillos (about 15 medium), husks removed

garlic

jalapeño peppers, stems removed, split

vegetable oil

cilantro leaves

large onion, finely diced (about 1 1/2 cups)

cumin

chicken stock

In large bowl, toss pork with 2 tablespoons salt until thoroughly coated. Set aside at room temperature for 1 hour.

Meanwhile, roast poblano and cubanelle peppers by placing them directly over the flame of a gas stove until deeply charred on all surfaces, about 10 minutes total. If you don't have a gas burner, you can achieve similar results under the broiler, or on an outdoor grill. Place peppers in a bowl and cover with a large plate. Let steam for 5 minutes, then peel under cool running water. Dry chilies, discard seeds and stems, and roughly chop. Transfer to bowl of food processor.

Preheat broiler to high. Toss tomatillos, garlic, and jalapeños with 1 tablespoon vegetable oil and 1 teaspoon kosher salt. Transfer to rimmed baking sheet lined with foil. Broil until charred, blistered, and just softened, turning once halfway through cooking, about 10 minutes total. Transfer to the food processor along with any exuded liquid.

Add 1/2 of cilantro to the food processor and pulse mixture until it is roughly pureed but not smooth, about 8 to 10 one-second pulses. Season to taste with salt and pepper.

Adjust oven rack to middle position and preheat oven to 225°F. Heat remaining oil in large Dutch oven over high heat until smoking. Add half of pork and cook without moving until well browned, about 3 minutes. Stir pot and continue cooking, stirring occasionally, until well browned on all sides. Add remaining pork and onions and cook, stirring frequently and scraping up any browned bits from bottom of pan, until onions are softened, about 4 minutes. Add cumin and cook, stirring constantly until fragrant, about 1 minute.

Add chicken stock and pureed chilies to pot and stir to combine. Bring to a boil, cover, and transfer to oven, leaving lid slightly ajar. Cook until pork shreds easily with a fork, about 3 hours. Remove from oven and return to stovetop.

Skim off and discard any excess fat. Adjust to desired consistency by adding water or boiling and reducing. Stir remaining cilantro into pot and season to taste with more salt. Serve immediately with warm tortillas, diced onions, sour cream, cheese, cilantro, and lime wedges. Chili can be chilled and stored in airtight container in refrigerator for up to 5 days. Flavor will improve with time.

Super Easy Slow Cooker Chile Verde

hatch chiles (about 4)

lb pork shoulder/butt

lb tomatillo

cilantro

onion

tbsp cumin

chicken stock (no sodium/unsalted preferred)

tbsp oregano (Mexican oregano preferred, optional)

Trim your pork butt and cube it. Season well with salt and pepper and set aside.

Set your oven to broil. Wash and dry your tomatillos and hatch chiles. Rub them with oil (any oil is fine) and place in oven. Flip them when they are toasted to your liking and do the other side. This took 18 minutes in our oven at 550ºF.

While you are waiting for your peppers to roast, brown your pork shoulder cubes in your dutch oven on high heat or your slow cooker on high/saute. Work in batches to avoid crowding. Once all the pork is browned, move it to a plate and set aside. Be sure to use a timer so you don’t forget about the chiles roasting in the oven, or check back after every batch of pork.

Once the peppers are done, put them in a ziploc bag to steam for 10 minutes. Transfer the tomatillos along with cilantro, garlic, and a little salt to a blender and set aside.

Once you are done browning the pork, reduce heat to low and cook your onions. When the onions are translucent, add the cumin seeds and continue cooking for another 2 minutes to toast them. Then add the pork, all accumulated juices on the plate, and the chicken stock.

Remove the chiles from the bag and peel them. It’s not necessary but highly suggested that you also seed them with a small spoon. Once the chiles have been peeled and seeded, put them in the blender and puree. Once the salsa verde is pureed to your liking, combine it with the rest of the ingredients, mix well, and simmer for 2-4 hours.

In the last 1/2 hour of cooking, taste the chili and adjust seasoning, and if you are using oregano, add it in now.

Serve with cilantro, tortillas, and rice, or just enjoy by itself.

Instant Pot Hatch Green Chile Chicken

boneless (skinless chicken breasts, thawed)

garlic (minced)

Tbsp extra virgin olive oil

tsp cumin

In your clean Instant Pot, add the oil, chicken, garlic and cumin and saute until lightly brown, about 4-5 minutes.

Turn off the saute feature and add your green chile sauce, making sure to mix it in well with the chicken. Pour in your chicken stock, and place the lid on the Instant Pot.

Push the manual (pressure cook) function and cook on high pressure for 15 minutes. Do a quick release and carefully shred the chicken within - it should shred easily.

At this time, determine, add more green chile, if desired, as well as salt and pepper (to taste). Serve over a bed of rice.

Your slow cooker does all the hard work for you in this pork green chili recipe. Hatch green chiles are the star of this soup, but jalapeños can be used too!

Slow Cooker Pork Green Chili

tomatillos (husked and rinsed)

garlic (peeled and smashed)

roasted hatch chiles (or one fresh jalapeño, stemmed)

salt

pork sirloin roast

olive oil

butter

kosher salt and black pepper

Preheat the oven to 450 degrees F.

Spray a baking sheet with cooking spray and place the tomatillos, quartered onion and garlic cloves on the baking tray. If using a jalapeño, add it to the baking tray with the other vegetables.

Roast the vegetables for 20 minutes flipping the vegetables at the 10 minute mark. The tomatillos should be lightly charred and the onion beginning to brown.

Transfer the roasted vegetables and roasted Hatch chiles (or jalapeño) and any remaining juice on the baking sheet to a food processor or blender. Blend until almost smooth. Add the cilantro leaves and kosher salt and pulse a few more times until mixed. Set aside or place in the refrigerator until .

Cut the pork roast into 1/2-inch by 1-inch pieces of pork. Season well with kosher salt and freshly ground black pepper.

Place a large skillet over medium high heat and add 1 tablespoon olive oil and the butter. Transfer half of the pork to the skillet and cook for about 4 minutes on each side, turning once or twice until the pork is browned on all sides. Transfer to a slow cooker and repeat with remaining pork.

Add all of the cooked pork and any bits and juice to the slow cooker. Pour all of the salsa verde on the pork and cover with lid. Set slow cooker to high and cook for 4-5 hours or low for 8-10 hours.

Serve warm with tortillas or use as sauce for enchiladas.

Cheesy Hatch Green Chile Dip

Hatch chilies

hot Hatch chiles

mayonnaise

sour cream

Monterey Jack Cheese

mozzarella cheese

Parmesan cheese

Worcestershire sauce

tsp fresh cracked black pepper

Tortilla chips

set oven to 350F

Put all the ingredients --- except the tortilla chips --- into a large mixing bowl.  Mix well.  Make sure all the elements are well combined.

Spread the mixture into a casserole dish.  Spread out so it is an even depth.  If you like you can sprinkle a few more of the chopped chilies across the surface.

Bake for about 25-30 minutes, or until bubbling all around and starting to brown on the surface.  If it&#039;s not bubbling and starting to brown, cook it a little longer.  Finish off for a few minutes on the top rack under the broiler to get more browning, if you like.

Serve right away with tortilla chips or bread for dipping.

This dish is also known as a Sonoran Quesadilla or even a Mexican pizza.   It’s an open faced quesadilla made with a crispy tortilla that is topped with green chile, beef and oozing  melted cheddar cheese.

Arizona Green Chile Cheese Crisp with Beef

white onion, diced ((6 oz) About

tbsp garlic, minced (About 2 cloves)

oz roasted hatch green chile

tbsp garlic salt

tbsp black pepper

ea flour tortilla, burrito sized

oil (2 tbsp to make the chili and the rest to fry the tortillas)

cheddar cheese, grated (To your liking. About

cilantro, leaves (For garnish. To your liking)

Prep: mince garlic, dice onions, cube the beef, puree or grate the tomatoes, grate cheddar cheese

Heat 2 tbsp oil in a small pot.  Cook garlic and fry until aromatic.  Add onions and cook until they start sweating.

Add the beef, garlic powder and black pepper.  Stir and cook until brown.

Add the blended or grated tomato and green chiles.  Stir and bring to a simmer. If using typical canned green chiles, you can add some chili powder to adjust the heat level to your liking.

Cover the pot and cook covered for about 30 minutes.  Remove the cover and then cook uncovered for about additional 15 minutes.  The sauce should be reduced and thickened to a chili like consistency.  Add salt to taste. Remove from heat.

Crispy tortillas. Add about ½ inch of oil to a pan and heat to 375 degrees, or until it bubbles vigorously when dipping the edge of a tortilla.

Fry the tortillas on both sides until crispy and brown.  Pockets of bubbles should emerge in the tortilla.  About 25-30 seconds on each side.  Set aside.

Assemble the crisp:  spread the chili and top with grated cheddar cheese like a pizza.

Bake in a preheated oven at 375 degrees for 2-3 minutes just to melt the cheese.  You can also use the broiler for about a minute.  Just be careful not to burn the cheese.

This&nbsp;recipe for the roasted hatch green chile salsa I have added serrano peppers for additional spice, roasted garlic cloves, fresh cilantro, and tomatillos. Seasoned with a dash of cumin, Mexican oregano, and chicken bouillon. You can use this sauce for garnishing&nbsp;and as a base for stews and enchiladas.&nbsp;

Roasted Hatch Green Chile Salsa

serrano peppers

tomatillos

Mexican oregano

chicken bouillon (or 1/2 tablespoon of sea salt)

Clean and roast the peppers, the serranos, the tomatillos, and the garlic cloves.&nbsp;

Add 1/4 cup of water and place all ingredients inside the blender, including the seasonings and the cilantro.&nbsp;

Blend until getting a sauce. Preserve via pressure canning or keep refrigerated inside a plastic container with a lid. This salsa is freezer-friendly.

Cheesy Hatch Chile Pull Apart Bread

bread loaf

(8 tablespoons butter)

roasted hatch chiles

shredded medium cheddar

mozzarella

shredded pepper jack cheese

Preheat oven to 400 degrees.

Slice the bread vertically and horizontally being careful to not cut all the way through the bread, stop about 1/4 inch from the bottom of the loaf. Place on a sheet of aluminum foil.

Melt butter in a skillet over medium heat. Add in chiles, onion and garlic. Cook just until garlic becomes fragrant and onions start to soften, about 1 minute. Remove from heat.

Drizzle the hatch chile butter into each cut of the bread. Gently part the bread to allow the butter mixture to work its way into the tiny spaces. Gently push chiles into the cuts with your finger or a spoon.

Combine cheddar, mozzarella and pepper jack cheese together in a bowl. Gently stuff the cheese into each cut of the bread.

Wrap the bread in the aluminum foil and bake for 15 minutes. Uncover and bake for an additional 10 minutes or until the cheese is bubbly. Remove from the oven and serve immediately.

Hatch chiles diced.

oz Cream cheese.

Heavy cream.

oz Butter.

tbsp Cajun seasoning.

Sauté corn and chiles in butter, on med heat for 5-6 minutes.

Add cream and cream cheese, mix thoroughly to combine.

Shake seasoning over corn mix to taste.

Serve in a bowl and enjoy.
