This healthier blueberry crisp is easy to make! It's made with oats and walnuts for crunch and sweetened with maple syrup!

Maple Blueberry Walnut Crisp

blueberries

lemon zest or cinnamon

tbsp tapioca flour/starch

Preheat the oven to 350°F.&nbsp;Prep 4 ramekins with cooking spray or butter. Place on a baking sheet lined with foil because things will get bubbly!&nbsp;Prep 4 ramekins with cooking spray or butter. Place on a baking sheet lined with foil.

To make the filling: Using a spoon,&nbsp;toss the blueberries, tapioca flour, maple syrup, and vanilla in a medium bowl. Set aside.

To make the crumble topping: Combine oats, walnuts, brown sugar, salt,&nbsp;&nbsp;and cinnamon. Using a pastry cutter, fork or your hands, cut the butter into the oat mixture until it takes on a crumb-like appearance.

Heap 1 cup of blueberries into each of the ramekins. Top each with two tablespoons of the crumble topping.

Bake until juices bubble and the crumble topping becomes golden brown, about 30-35 minutes.&nbsp;Let cool slightly. Serve warm.Optional: Enjoy with a dollop of vanilla yogurt or whipped cream.

In a large bowl, mix together blueberries, maple syrup, lemon juice, and vanilla. Then add arrowroot starch and toss blueberries.

Spoon berries into an 8&#215;8 inch pan, leaving juice in bowl behind.

In another bowl, mix together oats, walnuts, almond flour, and salt. 

Stir in maple syrup, coconut oil, and vanilla until well combined.

Spread cobbler topping on top of blueberries until most of the blueberries are covered.

Bake in oven for 40-45 minutes or until topping is golden brown. 

Let cool for 15 minutes before eating. Store leftovers in refrigerator.

I've made this recipe twice in a few week span - it's so tasty and easy! The first time I used fresh berries and the second I used frozen - they were equally delicious. Highly recommend, especially during the summer when berries are in season!

SO. DANG. GOOD. I’m usually not a fan of desserts with baked fruit, but I made this for my family and ended up absolutely loving it! I didn’t have everything the recipe called for so I replaced walnuts with pecans and replaced arrowroot starch with tapioca flour. I also didn’t have enough blueberries so used an entire 2.5-cup bag of frozen wild blueberries from Trader Joe’s (kept all the other measurements consistent with your recipe) and also had to use a 9” pie dish. Still turned out perfect!

Easy Healthy Sugar-Free Blueberry Crisp

Preheat oven to 350 degrees.

Grease an 8×8 baking dish. I use cooking spray.

Add the blueberries, cinnamon, vanilla, sweetener, and lemon juice to a mixing bowl. Stir.

Mix the cornstarch and water in a small bowl. Add to the mixing bowl and stir.

Transfer the blueberry mixture to the bottom of the baking dish.

Combine the oats, brown sweetener, cinnamon and melted butter in a separate bowl.

Spread the topping throughout the pan.

Bake for 25-30 minutes until the top of the crisp is crunchy and golden brown.

Cool before serving.

This gluten-free and vegan, healthy blueberry crisp is easy to make, oil-free, and perfect for Summer!

Blueberry Crisp

blueberries (760 g)

cornstarch (5 g)

lemon juice (5 ml)

rolled oats (90 g)

oat flour (50 g)

TB maple syrup (30 ml)

applesauce (65 g)

cinnamon (2. 5 g)

tsp vanilla (5 ml)

Preheat oven to 350. Spray a 9” square baking dish or 9” pie plate with cooking spray.

Toss blueberries with cornstarch and lemon juice and add to the baking dish.

Combine all topping ingredients in a medium mixing bowl and combine well.

Sprinkle topping mixture evenly over blueberries. It likes to clump up in the bowl so make sure to break it up as you add it to the dish.

Bake for 35-40 minutes, until the topping is browned and the berries begin to bubble around the edges.

Let rest/cool for 15-20 minutes before serving, to allow time for thickening.

I used frozen blueberries with a little extra cornstarch and it was great thanks!

Tasty recipe! But cringing over the use of imperial system. I can't wait til the three countries who use imperial finally switch over, I literally promise you that your lives will be so much easier when you don't have to measure in pints of all things. "It's not that big of a deal" yeah it kinda is when you're one of three countries that still use a useless measurement system that makes ZERO sense mathematically.
