Chicken masala skewers

In a large bowl mix the yogurt, paste, half the chopped coriander, half the lime juice and all the the zest. Tip in the chicken, stir to coat and leave in the fridge to marinate for 30 mins if you have time.

Thread the chicken onto 8 skewers and cook in batches on a hot griddle pan, frying pan or barbecue for about 10-12 mins, turning until cooked though.

Meanwhile, mix the salad ingredients with the remaining lime juice and coriander in a bowl and season. Sprinkle with extra coriander and serve alongside the skewers with warmed wholemeal chapatis.

Shredded BBQ Crockpot Chicken

Sweet Baby Ray's BBQ Sauce

Tbsp Apple Cider Vinegar

tsp black pepper

tsp crushed red pepper

garlic powder

onion powder

tsp smoked paprika

Spray bottom of crock pot with quick release pan spray.

Layer chicken breasts evenly in crockpot.

In a small mixing bowl, combine BBQ sauce, apple cider vinegar, black pepper, red pepper, garlic powder, onion powder and paprika. Mix until combined.

Pour BBQ sauce mixture over the chicken.

Place crockpot on low heat, and cook until chicken is done (about 4 hours).

Remove chicken from crockpot, let sit for 10 minutes to cool.

Using 2 forks, shred chicken while still warm.

Serve hot. Enjoy!

Easy to throw together grilled chicken bowls, made with cauliflower rice, bell peppers, black beans, and corn, topped with a sweet and zesty dijon bbq sauce. Delicious and super high in protein.

Honey Dijon BBQ Chicken Bowls

oz chicken breast (grilled, sliced)

riced cauliflower (cooked (mine was steamed in the microwave))

red pepper (diced)

baby spinach

black beans

tsp Flavor God Fiesta Sweet and Tangy Seasoning (optional)

tbsps honey dijon bbq sauce (see below)

dijon mustard

honey

apple cider vinegar

tbsps worcestershire sauce

cayenne pepper powder

liquid smoke

Add all of the ingredients into a saucepan and bring to a simmer over medium heat.

Turn down the heat and whisk until it reduces by almost half. This should take about 20 minutes. Whisk every 3-5 minutes.&nbsp;

Store in a glass mason jar in the fridge. Keeps for 2-3 weeks.

For the honey dijon BBQ Sauce (make this first)

This is so easy. Simply arrange all of the ingredients into a bowl and top with 2 tbsps of the bbq sauce.Enjoy.

One of my most popular healthy chicken recipes. This easy and low fat Healthy Chicken Salad is a must-have recipe for quick lunches, dinner or picnics. Even though it is low on calories, it is big on taste.

65 Healthy Chicken Recipes: Chicken Salad

3 large celery stalks, diced

red onion (finely chopped)

parsley or dill (finely chopped (optional))

almonds

plain yogurt (2+% fat)

Dijon mustard

tsp any vinegar (except balsamic)

tsp salt

black pepper (to taste)

In a small skillet, toast pecans on low-medium heat until darker brown and fragrant. Make sure to stir often.  Then, transfer to a cutting board, cool and chop coarsely.

In a medium bowl, add toasted pecans, chicken, celery, onion, parsley, yogurt, mayo, mustard, vinegar, salt and pepper. Stir gently to mix. Adjust the amount of salt to taste.

Chicken salad tastes best cold, so refrigerate for at least 2 hours.

Serve with quinoa, brown rice or greens or make a chicken salad sandwich with whole wheat bread.
