Nashville Hot Chicken is also known as the “Bird that Bites Back”. The hot sauce slathered on this fried chicken can really ‘put the hurt on ya’! Traditionally hot chicken is served on slices of white bread to absorb the juice, and then topped with cool dill pickle slices. If you need more help with the heat, here is a cool lemon-dill dressing that you can use as a dip or pour it right on top.

Nashville Hot Chicken

all-purpose flour

paprika

onion powder

Lemon dill buttermilk dressing

Cut the chicken breasts into 2 pieces so that you have a total of 8 pieces of chicken.

Set up a two-stage dredging station. Whisk the eggs and buttermilk together in a bowl. Combine the flour, paprika, garlic powder, onion powder, salt and black pepper in a zipper-sealable plastic bag. Dip the chicken pieces into the egg-buttermilk mixture, then toss them in the seasoned flour, coating all sides. Repeat this procedure (egg mixture and then flour mixture) one more time. This can be a little messy, but make sure all sides of the chicken are completely covered. Spray the chicken with vegetable oil and set aside.

Pre-heat the air fryer to 370ºF. Spray or brush the bottom of the air-fryer basket with a little vegetable oil.

Air-fry the chicken in two batches at 370ºF for 20 minutes, flipping the pieces over halfway through the cooking process. Transfer the chicken to a plate, but do not cover. Repeat with the second batch of chicken.

Lower the temperature on the air fryer to 340°F. Flip the chicken back over and place the first batch of chicken on top of the second batch already in the basket. Air-fry for another 7 minutes.

While the chicken is air-frying, combine the cayenne pepper and salt in a bowl. Heat the vegetable oil in a small saucepan and when it is very hot, add it to the spice mix, whisking until smooth. It will sizzle briefly when you add it to the spices. Place the fried chicken on top of the white bread slices and brush the hot sauce all over chicken. Top with the pickle slices and serve warm with lemon-dill buttermilk dressing to cool the heat. Enjoy the heat and the flavor!

Couscous Salad

couscous

cucumber (sliced)

bell pepper (chopped)

red onion (thinly sliced)

feta cheese (crumbled)

flat leaf parsley (chopped)

red wine vinegar

lemon juice

honey

garlic (minced)

salt & pepper

Bring water, butter and a pinch of salt to a boil. Add couscous, stir and cover. Remove from heat and let sit 5 minutes.

Meanwhile, place all dressing ingredients in a jar and shake well to combine.

Place couscous in a large bowl and fluff with a fork. Allow to cool completely.

Add remaining salad ingredients and dressing. Toss to combine and serve.

Shaved Brussels Sprouts Salad with spinach, blueberries, almonds, avocado, red onion, feta cheese, and a fresh lemon poppy seed dressing.

Blueberry Brussels Sprouts Salad

extra virgin olive oil

Dijon mustard

poppy seeds

Kosher salt

black pepper (to taste)

brussels sprouts (ends trimmed)

spinach leaves

blueberries

almonds

avocados

feta cheese

To make the dressing: In a a small bowl or jar, combine olive oil, lemon juice, honey, mustard, garlic, poppy seeds, salt, and pepper. Whisk or shake until well combined.

To make the salad: First, shave the brussels sprouts. Use a food processor with the slicing attachment and pulse until the brussels sprouts are thinly sliced. You can also use a mandoline or sharp knife if you don't have a food processor.

Place the brussels sprouts and spinach in a large bowl and toss. Add the blueberries, almonds, red onion, avocado, and feta cheese. Drizzle with the lemon poppy seed dressing and toss until the salad is well coated. Season with salt and pepper, to taste. Serve.

10 Healthy Salad Dressings - Grilled Chicken Salad with Poppy Seed Dressing

plain yogurt (I used 2%)

maple syrup

tsp white (apple cider or rice vinegar)

tsp salt

large boneless & skinless chicken breast (cut in half lengthwise)

olive oil (extra virgin)

lemon (zest and juice of)

garlic (grated)

oregano

tsp black pepper

grape tomatoes (cut in halves)

feta or goat cheese (crumbled)

mixed nuts (unsalted)

To make poppy seed dressing: In a small bowl add yogurt, maple syrup, vinegar, mustard, poppy seeds, onion powder, salt and pepper. Stir well with a fork to combine. Set aside.

To make grilled chicken: In a large bowl add chicken, olive oil, lemon zest and juice, garlic, oregano, salt and pepper. ; Stir with tongs and let marinate for 30 minutes.

Grill on medium high heat (450 degrees F) for 10 minutes, flipping once. Rest under foil for 5 minutes.

To make grilled chicken salad: In a large salad bowl, add greens, sliced grilled chicken breast, raspberries, tomatoes, feta, nuts and red onion.

Drizzle with healthy poppyseed dressing and toss gently to combine. Serve immediately.
