1.2l beef or lamb stock

Using a sharp pointed knife, make at least 30 small incisions all over the leg of lamb.

Take 4 cloves from 1 bulb of garlic, peel and thinly slice them, then prod a slice into each incision. Next, take 1 bunch of rosemary, pull off small sprigs and push into the incisions, too.

If done in advance, cover the leg of lamb well and refrigerate. Remove from the fridge 1 hr before roasting.

Heat oven to 190C/170C fan/gas 5. Heat a large frying pan, add 1 tbsp vegetable oil and brown the leg of lamb all over.

Scatter 2 carrots, cut into large chunks, 1 quartered onion, the remaining garlic and rosemary in a large roasting tin, pour in 1 glass of red wine and 1.2l beef or lamb stock, then place the browned lamb in the tin.

Roast for about 1 hr 45 mins. Turn the leg of lamb halfway through so by the time it’s cooked, each side has been in the stock.

This thick, easy and flavourful lamb gravy, enriched with red wine and the juices from the roasting tray – is the only gravy to serve with your roast lamb on Easter Sunday (or any Sunday for that matter). When the joint is cooked, remove it from the oven tray and set aside. Cover the meat with foil and leave to rest while making the gravy.

Spoon off any excess fat, then place the roasting tin on the hob and heat gently. Add a couple of heaped teaspoons of plain flour (2 teaspoons is enough to thicken about 300ml liquid) and stir into the meat juices, scraping up all the sticky, caramelised meat sediment as you go.

Cook for a minute or so until the flour turns golden and thickens, then gradually add red wine, stock or the cooking water from your vegetables (or a mixture of them all), stirring well and bringing up to the boil before splashing in a little more liquid, until you have the pouring consistency you like.

You can also stir in a tablespoon of redcurrant jelly at the end for extra richness – the sharpness of the redcurrants helps cut through any greasiness.

Taste and season well. Strain the gravy through a sieve into a clean pan, then return to the boil and serve.

In a large bowl, soak the potatoes in cold water for about 30 minutes or up to 24 hours in the refrigerator.

Preheat the oil in the deep fryer to 170 °C (325 °F). Place a wire rack on a baking sheet.

Drain and pat the potatoes dry with a clean cloth and place them in the deep fryer basket. Place the basket into the hot oil and cook for about 2 minutes

Drain and scatter the fries on the wire rack. Let cool. Increase the deep fryer oil temperature to 180 °C (350 °F).

Place the potatoes into the fryer and fry for 2 to 4 minutes or until the fries are golden brown. Remove the fries from the fryer and drain on the rack or paper towels. Sprinkle with salt and keep in a warm oven, if necessary.

Divide the fries onto four plates, top with the cheese and sauce.

/ 480 milliliters Good Quality Chicken Stock, (preferably low-salt)

/ 480 milliliters Good Quality Beef Stock, (preferably low-salt)

small-medium White Onion, (finely diced)

Garlic, (finely diced)

Worcestershire Sauce

tsp Chicken Bouillon ((or half crumbled OXO cube))

tsp Beef Bouillon ((or half crumbled OXO cube))

tsp EACH: Dried Thyme, Dried Rosemary

Salt & Finely Ground Black Pepper, (to taste)

Veg: Melt 3 tbsp butter into a large pot over medium-high heat and add in celery, carrot, onion and garlic. Fry until the veg starts to soften/brown then turn heat down to low-medium.

Roux

Roux: Stir in 3 tbsp flour until a paste forms then slowly start pouring in your stock, whisking as you go to ensure no lumps form.

Season

Season: Add in chicken/beef powder, Worcestershire sauce, rosemary/thyme and salt &amp; pepper to taste. Depending on the saltiness of your stock &amp; chicken/beef powder you may not need salt.

Thicken

Thicken: Simmer for 5-10mins until the gravy thickens, then use a hand blender to blitz until smooth. If you over thicken the gravy just add in a splash more stock. If you want it thicker (it will thicken as it rests/cools), just keep the gravy on a simmer, stirring somewhat frequently until your desired consistency.

Gravy without Drippings

Add this simple onion gravy recipe to your repertoire. It's the perfect accompaniment to sausages and roasts with the deep flavours of beef stock, red wine and herbs

Easy onion gravy

Melt the butter with the olive oil in a large frying pan over a medium heat, add the bay leaf and thyme and cook for a min to infuse the flavours of the herbs. Add the onions and coat well in the butter and oil, sprinkle over the sugar and a big pinch of salt and slowly cook the onions down for 45-50 mins, stirring occasionally until sticky and caramelised.

Add the flour and stir well, coating all of the onions. Cook for a min then add the wine and vinegar, turn up the heat and reduce by half, so about 2 mins, whisking a little to ensure the flour doesn’t lump at all. Pour in the stock, bring to the boil and cook for 6-8 mins, until the gravy is thick enough to coat the back of spoon. If you cook it a bit too much and it gets too thick, add a splash of water. Season well and serve.

Espagnole Sauce (Demi Glace Recipe)

Set a large 6 to 8 quart sauce pot over medium heat. Add the butter, chopped carrots, onions, celery, and garlic to the pot. Stir and sauté for 10 minutes to soften the vegetables. Then sprinkle the flour into the pot. Continue to stir and sauté the vegetables, creating a roux, until the roux is golden and smells toasty, about five more minutes. At this point the vegetables should be very soft.

Pour in the beef stock, followed by the bay leaves, whole black peppercorns, tomato purée, and salt. Stir well, scraping the bottom of the pot.

Bring to a simmer, then lower the heat if needed and continue to simmer for 30 to 45 minutes, until the mixture has reduced to 1/3 of its original size. (You can leave the Espagnole sauce thinner, or cook it down to a gravy consistency. This is just a matter of personal preference or planned usage.)

Set a mesh strainer over a large bowl. Ladle the sauce base into the strainer to remove all vegetable chunks and spices. The sauce should be smooth and fine. Taste, then salt as needed.

To Make Demi Glace: Set a clean pot over medium heat. Add 2 cups of Espagnole Sauce to the pot, followed by one cup of beef broth, one cup of wine or dry sherry, and a teaspoon of fresh thyme leaves.

Bring to a simmer, then reduce the heat a little and continue to simmer for 15 to 20 minutes, until the mixture has reduced by half. Taste, then salt and pepper as needed.

Set a fine mesh strainer over a bowl and pour the demi-glace through the strainer to remove any debris, so that the demi-glace is very smooth.
