The BEST Honey Butter

oz unsalted butter (room temperature)

honey

sugar

tsp sea salt

Place softened butter in a medium bowl or the bowl of your stand mixer. Using a hand mixer or stand mixer, beat the butter until smooth.

Add the remaining ingredients to the bowl and continue beating at medium speed, scraping down the sides of the bowl as needed, until the ingredients are fully incorporated and the butter is smooth.

Take a moment to taste the honey butter. Add more honey or salt if needed.

Serve immediately with additional honey and/or a sprinkle of sea salt OR transfer butter to a storage jar or airtight container and refrigerate for up to 2 weeks.

Cheddar Cornbread Chicken Fingers with Jalapeño Honey Butter.

Preheat oven to 400 degrees F. Grease an 8x8 inch pyrex pan.

Combine whole wheat pastry flour, cornmeal, salt and baking powder together and mix with a spoon. Add the honey, melted butter, buttermilk and egg, stirring until smooth. Fold in the corn and cheddar cheese.

Bake for 25-30 minutes, or until top is golden and bread is cooked throughout. Allow the bread to cool completely before slicing.

Cheddar Cornbread

Preheat the oven to 400 degrees F. Line a baking sheet with foil and spray or brush it with the olive oil.

Crumble the corn bread into fine crumbs over the baking sheet. Drizzle the melted butter over the crumbs. Toast in the oven for about 10-15 minutes, stirring once or twice until golden and crisp. Remove from the oven and increase the temperature to 475 degrees F.

In a bowl combine the buttermilk and the chicken, toss well.

Add half the toasted cornbread crumbs to a shallow bowl and stir in the cheddar cheese cracker crumbs. Remove each piece of chicken from the buttermilk, and dredge through the cornbread crumbs, pressing gently to adhere. Place on the prepared baking sheet. Repeat until all the chicken has been used. Make sure not to crowd your pan, if necessary use two baking sheets. Lightly spray the fingers with cooking spray or a mist of olive oil.

Bake for 10-12 minutes, then gently flip using kitchen tongs and spray the other side. Bake for 10-12 minutes more, then remove from oven and serve with the Jalapeño Honey Butter (recipe below).

Chicken Fingers

In a small sauce pan, bring the honey, butter and Jalapeño's to a low boil, cook for 1 minute and then remove from the heat. Allow the honey to cool slightly and serve as a dipping sauce for the chicken fingers. Leftovers can be used on biscuits or your favorite sandwiches!

Cherry Cobbler with Honey Butter Vanilla Bean Biscuits

cherries (pitted)

coconut sugar

lemon juice

vanilla + vanilla bean (seeds removed, optional)

sea salt (about 1/4)

bourbon (optional)

sugar (for dusting)

all-purpose flour

salted butted (cubed, or unsalted with a pinch of salt)

vanilla bean (seeds removed)

Preheat the oven to 375 degrees F.

Lightly rub 8-9 inch pie plate with a little softened butter or cooking spray. In the pie plate, combine the cherries, coconut sugar (use 1/2 cup if you prefer things a bit sweeter), lemon juice, vanilla, vanilla bean (if using), a pinch of sea salt and bourbon (if using). Toss well to combine.

In a large bowl, combine flour and baking powder. Whisk until combined. Using a fork, pastry blender or your hands, add butter pieces to the flour and mix until coarse little crumbles remain. Whisk together the buttermilk and honey and pour into the flour. Stir with a spoon until just combined, trying not to over mix. Use your hands if needed to bring the dough together.

Use a 1/4 cup measure to drop batter onto the cherries or press dough on a sheet of parchment paper or cutting board, and then use a biscuit cutter to shape the dough into rounds. Place the rounds on top of the cobbler.

Bake the cobbler for 40-45 minutes or until the cherries are bubbling and the biscuits lightly golden. If the biscuits begin to get too golden, cover the cobbler with foil until the cherries are fully cooked. Serve warm. Dust with powdered sugar and serve with scoop of ice cream if desired.

Strawberry Rhubarb Cobbler with Honey Butter Biscuits.

strawberries (halved or quartered)

rhubarb (about 2 stalks)

coconut sugar (may sub brown sugar

lemon

vanilla

butter

whipped cream (for serving)

sugar (for sprinkling (optional))

Preheat the oven to 375 degrees F. Lightly rub a 10-12 inch cast iron skillet (or large pie plate) with a little softened butter or cooking spray.

In the skillet, combine the strawberries, rhubarb, coconut sugar, lemon zest, vanilla and a pinch of sea salt. Toss well to combine.

Use a 1/4 cup measure to drop batter onto the cobbler or press dough out on a sheet of parchment paper or cutting board, and then use a biscuit cutter to shape the dough into rounds. Place the rounds on top of the cobbler. Sprinkle the biscuits with coarse sugar.

Bake the cobbler for 35-40 minutes or until the strawberries are bubbling and the biscuits lightly golden.

In a bowl, stir together the honey with the melted butter.

Serve the cobbler warm with whipped cream and a drizzle of the honey butter. EAT!

Bob's Red Mill all-purpose flour

buttermilk +

blueberries

brie (rind on + cubed)

Line a baking sheet with parchment paper.

In a large bowl, combine the flour, cornmeal, baking powder, baking soda and salt. Whisk until combined. Using a fork, pastry blender or your hands, add butter pieces to the flour and mix until coarse little crumbles remain. Pour in the buttermilk and stir with a spoon until just combined, being careful not to overmix. Use your hands if needed to bring the dough together. Fold in the blueberries and Brie. Use a 1/4 cup measure to drop batter onto a nonstick baking sheet, or press dough on a sheet of parchment paper or cutting board, then use a biscuit cutter to shape the dough into rounds. Try and push any cubes of Brie into the center of the dough. Brush with buttermilk. Place in the prepared baking sheet and place in the fridge for 20 minutes to chill.

Preheat oven to 425 degrees F.

Bake for 20-25 minutes or until light golden brown. Serve warm with honey butter (see below).

Can Pillsbury Grands Flaky Layers Biscuits (pulled apart in layers)

Unsalted Butter (softened)

Tablespoons Whole Milk

For the Glaze

In a small bowl, whisk together the powdered sugar and milk.

Set aside.

For the Donuts

Using a donut hole punch or a very small glass, cut out the center of each donut.

Fill a dutch oven or large sauce pan 1/3 the way full with oil.

Heat to medium heat.

Add the donuts 2 at a time depending on space. Cook until lightly golden on one side, carefully use a skewer to flip them over and cook on the other side.

Remove from the oil with a skewer to a paper towel lined plate.

Let the oil drip off for a moment and then drop into the glaze.

Use the skewer to pick up the donut and while keeping the donut on the skewer, place each end on the edge of the bowl to allow the glaze to drip.

In a small bowl stir together the butter and honey.

Tear apart the chicken and pile on top of the donut, and top with honey butter.

Cinnamon Honey Butter Dinner Rolls

all purpose flour (plus 1/4 cup for shaping)

tsp Fleischmann’s® RapidRise® Instant Yeast (1 packet)

milk

unsalted butter

tsp cinnamon

In a large mixing bowl, mix 4 cups of flour, sugar, salt and yeast together with a wooden spoon. Make a well in the center of dry ingredients.

Heat milk in saucepan over medium heat until very warm (110-120F), but not scalding.

Add milk to the well along with melted butter, eggs and honey. Stir together until evenly mixed. The dough will look like thick muffin batter. Start adding the remaining cup of flour in 1/4 cup increments, watching closely as a tacky dough forms.  Use your hands to continue to combine the dough for about 5-8 additional minutes until a stiffer and tacky dough forms (you can also knead for additional time here if you want a softer product in the end). You want to make sure the flour is incorporated and the dough is soft to the touch and only slightly sticky.

Cover lightly with plastic wrap and a wet towel and place in a warm spot to proof, until doubled in size, about 40 minutes.

Heat oven to 350F degrees and place the rack in center position.

Grease 13x9 inch pan with 1 tablespoon softened butter.

Lightly flour work surface. Remove dough from bowl and cut into three large, even pieces. Cut thirds into six pieces each.

Place the ball of dough on the work surface, cupping your hands gently over the dough, press slightly and work in a circular motion to shape into a tight round.

Place rolls in the prepared pan. Cover lightly with plastic wrap and wet towel and return to a warm place until rolls are doubled in size, about 35 minutes.

Remove the plastic wrap and place in a preheated oven. Bake until golden brown, or until a thermometer registers 190-200F, about 35 minutes.

Cool in a pan on a wire rack for 10 minutes.
