Step by step directions to making Instant Pot Yogurt.&nbsp;

Homemade Yogurt

Boil

Pour milk into inner pot of Instant Pot. Push yogurt button until the screen reads &quot;boil.&quot; (Usually you will need to hit the yogurt button two times) This will take about an hour. 

Test Temperatuee

Once the Instant Pot beebs that the boil cycle is complete, carefully remove the lid and test the temperature. It should be around 180 degrees Fahrenheit. Let inner pot sit in instant pot for 5 minutes and then remove inner pot. 

Cool

Allow the milk to cool to 105-115 degrees. This will take an hour on the counter top or about 15 minutes if you place your inner pot into an ice bath. 

Skim

Gently skim off the &quot;skin&quot; on the yogurt and discard.  

Whisk

Incubate

Place inner pot (be sure to dry off well if you had in ice bath),put lid on and press yogurt button again and then adjust until screen reads 8:00. (The pressure should also read normal--if it reads less, hit adjust again until normal is lit up.)

Once yogurt beeps that it is complete, remove the inner pot from the inner pot and cover with plastic wrap. Refrigerate for 8 hours before transfering to individual containers.

Freeze

This is a great time to freeze some yogurt for future yogurt making.&nbsp;

Instant Pot Yogurt 2 Ways: EVERYTHING YOU NEED TO KNOW!

Foolproof Instant Pot Yogurt Recipe #12: Step-by-Step Guide on how to make smooth, thick &amp; creamy homemade yogurt in Instant Pot based on 12 experiments.

Instant Pot Yogurt #12

litres (½ gallon) Whole Milk

Optional Equipment Sterilization: Place 2 cups of cold water and trivet in Instant Pot. Place silicone spatula, Pyrex glass measuring cup, and measuring spoon in Instant Pot. Close the lid and move the Venting Knob to Sealing Position. Sterilize (Pressure Cook or Manual button) everything at High Pressure for 3 minutes + Natural Release. Or Sterilize on Stovetop: sterilize the equipment (including food thermometer) on stovetop by boiling them for 10 minutes.After sterilization, air dries the equipment on a clean rack.

Heat Milk to 180°F - 200°F to Denature the Protein: Pour 2L (½ gallon) of whole milk in inner pot. Close lid. Use the Yogurt More function to boil the milk to at least 180°F (it will say “BOIL” on the screen). This takes roughly 35 – 40 minutes. The Instant Pot screen will change to “YOGT” when the boiling is done.

Check Milk Temperature: Open the lid. Check the milk temperature immediately in a few spots to make sure the milk is over 180°F. Stir with a silicone spatula and check the temperature again to ensure the milk is over 180°F. *Pro Tip: If the milk is not over 180°F, close the lid and heat the milk with the &quot;Slow Cook Less&quot; function for another 15 minutes.

Prepare Yogurt Starter: After the milk is heated over 180°F, place 32g (a little more than 2 tbsp) Plain Greek Yogurt with Active Bacterial Cultures into the Pyrex glass measuring cup. Do not add the yogurt starter to the hot milk, as it will kill the bacterial cultures. *Pro Tip: If you sterilized the measuring cup, make sure it has cooled to the touch.

Cool Milk to 111°F: Leave the pot on counter-top and wait until the milk cools to 111°F. Or alternative method to quickly cool down the milk temperature: Fill a larger pot or kitchen sink with cold tap water. Partially submerge the inner pot with heated milk into the cold tap water. Stir the milk in a circular motion with a silicone spatula and frequently measure the temperature. It will take 2 – 4 minutes to cool the milk to 111°F. Remove the pot from cold water immediately. *Pro Tip: Try not to touch the bottom of the pot with the spatula as it may have some milk solid stuck to the bottom of the pot.

Add Yogurt Starter: Add ½ cup of 111°F milk to the Pyrex glass filled with yogurt starter. Gently mix it with the measuring spoon. Pour the yogurt milk mixture in the inner pot and give it a few gentle stirs with a silicone spatula.

Yogurt Incubation: Place inner pot back in the Instant Pot. Close lid. Use the Yogurt Normal Function to incubate the yogurt. Adjust the time to 8:00 – 12:00 depending on how tangy you like your yogurt (longer time = tangier). *Pro Tip: Don’t disrupt the fermentation process by moving the Instant Pot or opening the lid. You can open the lid for a taste test once the yogurt is set (after roughly 6 hours).

Stop Incubating Process: Once the yogurt has reached your desired tangy level, remove the inner pot of yogurt and place it in the fridge for a few hours to stop the incubating process. The yogurt will also thicken a little.

Serve: Plain yogurt is done. Serve by adding sweeteners such as honey or maple syrup. Add fruits, granola or your favorite toppings. The sky is limit! Enjoy~*Pro Tip: If the yogurt is too runny, you can strain the yogurt with a yogurt strainer.

Foolproof Instant Pot Yogurt #12 | Thick Creamy Smooth [Tested by Amy + Jacky]

It's easy and fun to make delicious homemade yogurt in Instant Pot!

Instant Pot Yogurt

(1.89L) whole milk

whole milk Greek yogurt (for the yogurt starter)

Add milk to the Instant Pot insert, place the lid on, and set the valve to the sealing position.

Press the yogurt button until 'boil' appears on the screen.

Once done, perform a quick pressure release, stir the milk, and use an instant-read thermometer to check that the temperature is at least 180F. If it hasn't, place the lid on and run the boil cycle again.

When the temperature is 180F or higher, take the Instant Pot insert out and place it in an ice bath (use a large bowl or pot partially filled with ice and water) to cool it down to between 110F / 43C and 115F / 46C. Check the temperature every 5 minutes or so.

Add the yogurt starter to a medium-sized mixing bowl.

Once the milk has reached 115F / 46C, remove about a cup of the milk, and whisk it into the yogurt starter.

Add this starter mixture back into Instant Pot insert, whisking until fully incorporated.

Put on the lid and lock. Press the 'yogurt' button and set to 'normal' for at least 8 hours, up to 12 hours, depending on how thick you want the yogurt to be (more time will make a thicker yogurt).

When complete, open the lid and transfer the yogurt to Mason jars, then chill the yogurt in the fridge until completely set, approximately 4 hours.

To Make Instant Pot Yogurt

Pour milk into the Instant Pot insert and put the lid on.

Turn on the sauté function.

Heat the milk until it reaches 180F/ 82C, stirring frequently so the milk does not scorch on the bottom (you want to avoid that dreaded burn notice!). Make sure to use an instant-ready thermometer to check the temperature every 5 minutes or so.

As soon as the milk reaches 180F / 82C, switch off the Instant Pot, remove the insert and allow the milk to cool down until it reaches 108F /42C.

Then add in your yogurt starter and whisk until well combined.

Put the insert back in the Instant Pot, and place on the lid.

Wrap your Instant Pot in a large towel (or two kitchen towels) and let the yogurt incubate for at least 8 hours, up to 10 hours.

Open the lid and transfer the yogurt into Mason jars, then chill the yogurt in the fridge until completely set, approximately 4 hours.

To Make Instant Pot Yogurt Without A Yogurt Button

Prepare the yogurt using one of the two methods above.

Line a large strainer with cheesecloth and place it on top of a large bowl.

When the incubation period is complete, add the yogurt to the strainer, place in the fridge, and let the yogurt drain overnight (note: you may need to do this in batches depending on the size of the stainer).

Then transfer the thickened Greek yogurt into Mason jars or storage containers.

To Make Instant Pot Greek Yogurt

This homemade, Instant Pot Yogurt is lusciously creamy, thick, and delicious. You&#039;ll never buy store bought again, because this recipe is made in just one pot, with only 2 ingredients!

½ cups whole milk (2 litres, 1/2 gallon)

tbsp plain Greek yogurt (must contain active bacterial cultures)

Add Milk:

Add Milk: Add milk to the Instant Pot. Secure the lid but ensure the valve is on SEAL.

Boil Milk:

Boil Milk: Push the yogurt button until the screen reads BOIL. Let the cycle complete- this could take up to an hour. Quick release the pressure and remove the lid. Use a thermometer to test the temperature. It should read 180°F-200°F. Repeat the boil cycle if the milk is lower than 180°F.

Read Temperature:

Read Temperature: Fill your sink or a large bowl with cold water. Remove the insert, with the milk, from your Instant Pot and place it in the cold water. Stir, while taking the temperature, until it reaches 110°F-115°F.

Add Yogurt Starter:

Add Yogurt Starter: Ladle about ½ a cup of the milk into a bowl, add the yogurt, and mix well to combine. Add the mixture back into the pot with the rest of the milk and stir.

Make Yogurt:

Make Yogurt: Add the insert back into the Instant Pot. Secure the lid and click the yogurt button, then set the time for 8-12 hours. 8 hours for a more mild tasting yogurt and up to 12 hours for a tangier flavor.

Bottle Yogurt:

Bottle Yogurt: After this process, remove the lid. There will be no pressure to release. Transfer the yogurt to a large container or smaller individual containers and refrigerate for 4-5 hours to set.

Sous Vide Yogurt RecipeHere is how to make the creamiest, thick Greek-style yogurt in the Instant Pot directly in the steel pot by using  Sous Vide function. Instant Pot DUO Crisp Sous Vide Greek-Style Homemade Yogurt Recipe

½ gallon (2 liters) whole milk

Step 1: Warm Milk:  Plug in the Instant Pot and remove the lid. Pour in the ultra pasteurized milk in your inner pot. Press the &quot;Saute&quot; function and put an external timer for just 30 seconds which is enough to make the milk lukewarm. Cancel the &quot;Saute&quot; function and check your teperature to make sure it is around 110-115 °F (43- 46 °C).  Your milk should not be above 115 °F/ 46 °C or you will kill the bacteria.

Step 2: Temper milk with the starter yogurt: When the milk is warm (110-115 °F/ 43- 46 °C),  temper the milk. Transfer 1 cup of milk from the pot to a bowl and add 3 tablespoons of starter yogurt to it and incorporate well. Now pour this Starter/Milk mix back into the steel pot with the rest of the milk.

Step 3: Whisk the milk: Whisk the milk well to incorporate well, the more you whisk the better results you will get. Whisking your milk well with a whisk before fermentation cycle  gives you really thick set yogurt with almost no whey content. The more you whisk, the thicker your yogurt will be.

Step 4: Set the &quot;Sous Vide&quot; function for incubation: Place the lid with the pressure valve in any position (venting or sealing does not matter as it is not under pressure) or place a clean glass lid. Press the &quot;Sous Vide&quot; button and use the +/- buttons to set temperature to 115 °F/ 46 °C. Also use the +/- buttons to adjust the timer to 8 hours. FYI, don&#039;t go beyond 115 °F / 46 °C or you will kill the bacteria.115 °F / 46 °C is the key!! No less no more.

Step 5: Check if set: Check after 6 hours, the yogurt should be set already, if not keep it for the set 8 hours. Make sure to remove the lid gently to prevent the condensation liquid to drop on set yogurt. The yogurt might look slightly jiggly but don&#039;t worry you are on the right track.

Step 6: Refrigerate: After it sets, take it out, cover it with a lid and refrigerate it immediately for 2 hours. This prevents the yogurt from becoming too tart. It also helps the yogurt to become thick and dense.

Step 7: Serve: You should have a beautifully set thick greek style yogurt for sure. Serve this deliciously creamy yogurt plain or add some honey and some fresh fruits or go ahead and experiment with different things. Enjoy.

How to make creamy and delicious yogurt in the Instant Pot.

ultra pasteurized milk (like Fairlife brand)

sweetened condensed milk (optional)

In a 6qt Instant Pot, combine all ingredients. &nbsp;Whisk until well combined. Cover with glass lid.

Using the yogurt setting, incubate for 8 hours.

Without stirring, transfer inner pot with lid to a refrigerator and chill for 8 hours.

Serve your cold start yogurt plain or with desired toppings. &nbsp;Will keep in refrigerator for 7 days.

Press the Yogurt button and ensure that it is on the NORMAL setting, NOT LESS or MORE. Use the plus and minus buttons to select a time. 7-10 hours is ideal. I do 8 hours for Fairlife milk and 10.5 hours for Costco 2%. The longer you "incubate," or let it sit, the more tart it will be. Some people incubate up to 24 hours. The Instant Pot will start counting UP, not down like when pressure cooking.

After the 8-10 hours are up, take the liner out of the Instant Pot, cover with a lid/plastic wrap/foil, and refrigerate 8 hours, or overnight. Do not stir or disturb. The consistency after incubation will be almost exactly the consistency after refrigeration, so if it is not set enough for you, continue incubation for another couple hours.

How to Make Soy Yogurt in the Instant Pot

Divide the soy milk between two wide mouth pint jars. Add a tablespoon of yogurt into each jar, stirring well.

Carefully place the jars into the bottom of your Instant Pot (not on the rack – for some reason, it won’t make yogurt if you do that). Lock the lid, make sure the vent is sealed, and press the Yogurt button. Set it for 14 hours.

In the morning, you’ll have yogurt! Stir before serving, since it does tend to separate. Your soy yogurt will keep for about 5 days in the fridge.

Instant Pot Cold Start Yogurt (No Boil Method)

(32 grams) yogurt with active bacterial cultures

Optional Preparation – Sterilize Equipment: Place 2 cups cold water + trivet in Instant Pot. Place all yogurt making equipment - silicone spatula or whisk (no plastic/wooden handles), Pyrex glass measuring cup, and measuring spoon in Instant Pot. Close the lid and move the Venting Knob to Sealing Position. Sterilize at High Pressure (press Manual/Pressure Cook button) for 3 minutes + Natural Release. After sterilizing the equipment, air dry them on a clean rack.

Prepare Yogurt Starter: Add 2 tbsp (32g) Yogurt (with active bacterial cultures) and 1 cup (250ml) ultrafiltered milk in Instant Pot inner pot. Use the whisk to mix well.

Make Instant Pot Ultrafiltered Yogurt: Pour 7 cups (1750ml) ultrafiltered milk in the inner pot. Use the whisk to mix well. Close lid (Venting Knob position doesn’t matter).Yogurt Incubation: Press the Yogurt Button &amp; use the Yogurt Normal Function to incubate the yogurt. Adjust incubation time to 8:30 hours – 12:30 hours depending on how tangy you like your yogurt. You can open the lid for a taste test once the yogurt is set (roughly 6.5 hours).*Pro Tips:i) Longer incubation time = tangier yogurtii) The timer will count up instead of count down when the incubating process beginsiii) Don’t disrupt the fermentation process by moving the Instant Pot or opening the lid. Wait until yogurt is set (roughly 6:30 hours) before opening the lid.

Stop the Incubation Process: Once the yogurt has reached your desired tangy level, remove the inner pot of yogurt and place it in the fridge for a few hours to stop the incubation process. The yogurt will also thicken a little. Now (or before serving) is a good time to mix in flavorings.
