Lemongrass chicken satay has all the complex flavors of Thailand, sweet, sour salty and spicy. Grilled over hot coals or stove-top grill pan and served with a spicy peanut sauce. This recipe can be a meal in itself with a side of rice and a small salad or served in smaller portions as an appetizer.

Chicken Tikka

lbs Chicken, Boneless Breast Meat

tbsp Fenugreek, Dry Leaves of Methi

tbsp Garlic

tbsp Ginger, grated

tbsp Lemon, Juice

Yogurt,

tsp Garam Masala

tsp Coriander Powder

tsp Turmeric

tsp Red Pepper Powder

tsp Black Pepper

tsp Salt, To Taste

Wash chicken and pat it dry with a paper towel. Cut it in 3" to 4" pieces.  For best results, make sure that chicken is fully dry (no water dripping). Take all of the above mentioned ingredients (except chicken) in a bowl and mix well. 

Add chicken pieces and make sure to coat marinade to all sides. Transfer all contents to zip lock bag, close the bag and refrigerate for 3-4 hour (preferably overnight). So that chicken absorbs flavor from marinade.

Skew chicken pieces and grill on a charcoal grill untill done. You can also use conventional Oven (400 degree F) for about 20-25 minutes or untill fully cooked.

Enjoy Chicken Tikaa with your choice of chutney.

In a large mixing bowl, combine peanut butter, coconut milk, fish sauce, lime juice, lime zest, garlic, minced ginger, cumin, curry, and crushed red pepper; whisk to combine.

Remove half of the marinade and reserve.

Add the chicken tenders to the large bowl (or in a ziploc bag together with the marinade) and toss to coat.

Set in the fridge for 30 minutes, or up to 3 ours to marinate.

Preheat grill to medium-high heat.

Thread the chicken tenders onto the skewers.

Brush grill grates with oil and place chicken skewers on the grill.

Cook for 5 minutes on each side, or until chicken is charred and cooked through.

Remove from grill and garnish with sliced green onions and peanuts.

To make the dressing, put all of the ingredients into a jar with a tight-fitting lid; shake vigorously until well blended and emulsified. Taste and adjust seasonings, if necessary.

Cook tortellini according to package directions; drain and rinse in cold water. In a plastic ziploc bag, combine the tortellini and salad dressing; seal bag and refrigerate for 3 hours (or overnight.)

Drain tortellini and discard the marinade.

On each toothpick, thread pasta, salami (folded in half, and then in half again), and 1-2 slices of cheese, followed by an olive.

These oven steak kabobs are easy to make and economical compared to going out to eat. This recipe works just as well for chicken, too.

Using kitchen shears, cut the beef into bite-size cubes. Place the beef in a gallon-size ziplock bag and add 1 cup of the marinade. Let the beef marinate in the refrigerator for at least one hour or up to eight hours.

Thirty minutes before you plan to cook the kabobs, preheat the oven to 350 and place 8 to 12 wooden skewers in a bowl and cover them with water to soak.

Remove the skewers from the bowl and thread the beef and vegetables onto them, placing a vegetable between each piece of beef.

Place the beef kabobs on an ungreased, rimmed baking sheet and bake the kabobs, turning them every 10 minutes, until the beef is lightly browned on the outside and just lightly pink in the very center, about 30 minutes.
